I would not call the noise ENERGETIC....I would call it noisy. Not much you can do about a high ceilinged place.
Food and service where outstanding... We were seated on the enclosed porch area next to a loud table it was difficult to communicate. I wouldn't recommend that area the rest of the restaurant was fairly quiet which I would have preferred.
Our brunch was quite mediocre. Both my friend and I ordered the garden omelette and the vegetable mix inside the omelette was almost tasteless, as if the vegetables had been boiled. In my opinion, the menu lacks more variety of vegetarian and vegan options. The espresso was very acidic too. I had brunch at the Boulderado many times before and my experience was significantly better. This time it felt that the food preparation, quality and attention to detail were missing.
Good food—trout & steak. Accommodating-asked to substitute mashed potatoes for fries-no problem. Noise on porch not too bad-could have conversation. Relaxing. Long wait to get our drinks. Friendly considerate waitperson.
I had heard amazing things about this place but I was disappointed. Took 10 minutes for anyone to come to our table and the food was mediocre at best. The hotel itself is beautiful though so I really enjoyed that but I would not return to this restaurant.
Beautiful classic environment in the Boulderado Hotel. Food was excellent as was the service. The stuffed monkfish and bison bolognaise were tasty and good size portions. The chocolate cake with strawberry buttercream icing was a delight
Delicious food, many good options. Attentive service. Quieter than many restaurants even on a busy night.
Good presentation and flavor but the pork chop was overcooked. Server never stopped by the table after food was delivered by a runner. Water was not refilled nor were drinks offered. Server appeared to have too many tables to provide personal assistance since. Not much ambiance for a restaurant of this price. Sone lower lighting levels would have been good for a more formal feel at dinner. Lots of potential here with extra effort.
Service and food were excellent! Ambiance pleasant but the noise from the music and overall clattering made quiet conversation difficult.
We had a nice brunch. The restaurant was nearly empty at 10 am on Sunday, so the noise wasn't an issue. Our service was a bit slow, we had to ask for additional water. The food however, was good. My house salad with salmon was very good, though next time I will get it with the dressing on the side as it came with a 'heavy' serving of dressing.
The Boulderado is a great old hotel, nicely located to the Pearl Street mall. We plan on coming back.
My family and I have been there a number of times. The options are broad. Food prep and plating are superb. The noise level to exceptionally manageable. It's one of the few places we can take my elderly parents out to get a good meal and in such a lovely environment.

The whole Hotel Boulderado experience is so much fun. Dining at Spruce Farm and Fish is great. Food is delicious. Staff is very friendly and prompt. I would recommend this place to everyone.
If someone appreciates good service, this is a place to go. Dishes are simple but very well done. Portions are generous! and they use good quality of the ingredients. Pleasant place to enjoy good food and service.

My daughter and I had a delicious dinner that was prepared in an elegant way. We especially liked the creme brûlée. The service was very good and we enjoyed our table on the porch as it was quiet and we could talk the action in the street. The menu had a lot of variety and there were other options I would have chosen. They had some nice gluten free options. I would recommend this restaurant.
A perfect place for a Sunday brunch. The restaurant is located in a historic hotel, the menu has many seafood options, quality ingredients.
Everything was perfect, the chocolate raspberry dessert could’ve been slightly better but overall great dining.
I had eggs Benedict. It was pretty mediocre. Hollandise was pasty, muffins
were dry. Probably would not order it again.
Outstanding service and food
The Spruce accommodated my request for a “special” table as it was my Husband’s birthday which happened to be in a corner. Our server never checked on us after our food was delivered which forced me to flag someone else.
I asked in my reservation for a Chef’s selection birthday desert and the server blew the surprise by asking if we wanted something else off the menu as well. The kitchen sent out a “test recipe” that we did not like (it was a coffee & oat ball with too much strawberry and ice cream), and you would think that it would be replaced with something else. NOPE! He dropped the check without as much as a thank you and disappeared again. 10 minutes later, he reappeared and took the payment.
We won’t be back.

5 dishes for our group. My salad was pretty good and the kids chicken was nicely seasoned. Nothing else was good in my opinion. Prices are fair. Just not a place to go to again.
Our party of four could not have been happier with our restaurant choice. All our meals were excellent.
We’ve been to the restaurant many times over the years for dinner, brunch and lunch but this was our first time for New Year Eve dinner. The atmosphere was relaxed and noise level relatively low. The holiday menu was quite diverse. Service was excellent as always.
We went on NYE so we expected it to be crowded. Unfortunately our waitress was not very attentive to us. She left empty plates at the table for extended periods of time and promised refills of drinks that never came. We understood that she was busy but it was frustrating to see her hanging out at the bar talking to the bartender, with drinks in her hand, further delaying their delivery. The service was subpar but the food was excellent. I would go back, but hope I got a different waiter.
The New Year's Eve vibes was fun and festive. There was a Carnivale atmosphere from a NY Eve party that was happening in the Boulderado Hotels upstairs above the restaurant. Brussel sprouts appetizer was flavorful. The prime rib was excellent, accompanied by a lovely horseradish sauce. The tuna tartare was excellence, a unique combination of flavors and tasty. The monkfish special was ok but not outstanding, accompanied by a mound of risotto that wasn't yummy or appealing. The spinach salad was disappointing, not a lot of flavor in the dressing, red onion cut in pieces which were too large, I would not get it again. We liked the key lime pie and creme brûlée desserts. The Manhattan drink, a house special was smooth, really enjoyed it. Service was attentive.
Just dined for New Years dinner. The hubby had the Wagyu beef special. I had the Tuna. Diner came out quickly and was delicious!
The food was excellent. The service was extremely slow. It took us thirty minutes to get a beer.
It took almost as long to get our food.
My husband and I had our first date at the Boulderado in 1987! Since then it holds a special place in our heart! We are now living in Loveland but return at least twice a year for lunch and memories. We always make the trek to view the beautiful Christmas tree and decorations.
We have seen many name changes and staff come and go but the regal essence of the hotel and restaurant lives on!

We went here for brunch on a Sunday. Our reservation was ready on time. I ordered the salmon hash. Everything was fresh and the flavors went together very well. Another in our party had the sweet potato sandwich. It was also excellent and unusual offering. The hotel that this sits within is a spectacular historical property. Decorated very beautifully for the holidays. We took many pictures.
Very nice place to have brunch. Food is creative and well prepared. The waitstaff are professional and well informed about the food.
We’ve eaten at Spruce many times and we like it but we’ve had our last brunch there. Once again, all the food was stone cold. This has happened before. Not sure why brunch food is always cold but that’s our typical experience. Cold Eggs Benedict and oatmeal aren’t worth the trouble.
I had not been to this Boulderado restaurant since it changed to Spruce Farm and Fish. The room is very comfortable and the brunch menu has a great selection. Loved it.
We had lunch for four. We all had different items from the menu. We only had a main course
because it was noon and we were not hungry. The Salmon on Caesar salad was prepared to our likening and the caesar dressing was good. my wife asked for more dressing and it was promptly provided.
My friends had crab cakes for one and moules for the other. Both declared them well prepared, tasty and, since one of them was from Maryland, claimed good knowledge of how crab cakes were to tste, declared them "good".
Service was friendly but professional.
The restaurant has improved enormously in the last few years. We were disappointed not get a table for Christmas lunch. We are local.
We dined here for Christmas and our server was excellent and accommodating, however, when we checked in I was with my children and my sons best friend from Hawaii where we live. The host, unknown to me until later asked my sons friend if he could help him and he said he was with us and pointed and the host asked him “are you sure”. I am hugely offended by this attitude. I wish my kids would have told me while we were still at the restaurant.
The wait staff was excellent and we all felt that the noise level was low considering the day. The food was good as was the selection but we expected something fancier & special for Christmas Day.
WOW - I was completely surprised that our Christmas day brunch here was one of the best dining experiences I have ever had (in Boulder or elsewhere)! The service was impeccable (from the hostesses to the food servers) and the food was absolutely delicious. We had the crab cakes and clam chowder to start and both were superb - served hot and perfectly seasoned. The entrees - Salmon Verlasso, Boulderado Bowl, and Smoked Salmon dishes - were just wonderful (and looked beautiful). We had just enough room for the delicious Key Lime Pie and Apple Fritters and both were amazing! I can't wait to go back!
