Originally part of the summer resort, Hotel Di Prima, which opened its doors in 1926, the Would Restaurant has a long history of warm hospitality. The Hotel Di Prima catered to Italian families from the New York City area. In the 1940s and 1950s, thousands of vacationing families came to relax and savor the rich summer flavors of “the country.”In 1994, Claire Winslow and Debra Dooley purchased the establishment and became partners in the Hudson Valley retreat.
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.

We offer a varied selection of Contemporary American Cuisine prepared from local ingredients.

    If your looking for a slightly out of the way restaurant then allow me to introduce you to The Would. Once there keep an open mind throughout the entire experience because when the evening is finished you’ll realize what a fantastic one it was. Drinks are made very well, and the food is cooked to perfection. Service is present when you need it. The only negative is that you’ll eventually need to leave. We invite you to try it out!

    Went there for Valentines Day. Off-hand staff, waited for a table for 15 minutes, then waited about an hour for main course. When it arrived it was not what I ordered. Bear in mind we'd waited for an hour for it. Cancelled the dish and shared the one that did come. The staff then ate the wrong meal that I sent back at the bar. We paid and left, without an acknowledgement or apology of any kind. Ruined evening.

    Our Valentine's Day Dinner was exceptional. Both entrees were excellent. The steak is a longtime favorite of ours and was again just right. We tried the Game Hen for the first time. I highly recommend the hen, it was meaty and juicy. The vegetables that came with the hen were perfectly cooked. Cocktails were great and were made so as not to overwhelm the liquor with the taste of the mixer. This is our "go to" place and we were a little worried that Valentine's Day might not be the best day to get good service. However, we were given flawless service with a smile. Thank you for a great dinner!

    I made the reservations one week in advance on open table . I requested a corner table and stated that it was my sisters birthday. When we arrived the hostess seem to be surprised that we were a party of five. I mentioned that I made reservations she looked and then she said oh yes. On the way to the table I also mentioned that it was my sisters birthday and the hostess stated ,”it’s a short notice “. I told her that I mentioned it when I made the reservation she said “oh”. I think she may have been a little flustered because it was going to be a busy evening, Valentine’s Day. All the other times that I have gone to The Would she’s been the perfect hostess. The restaurant was decorated beautifully. The fireplace and the warmth of the fire made our dinner experience a cozy and enjoyable time. Other than those two issues , the food was delicious . Our server ,Thomas was attentive and we enjoyed our evening at The Would. .

    My wife and I were able to enjoy a very nice birthday dinner. Tomas did an excellent job of seeing to it that we were well served. The salmon dish, calamari, and split pea soup were all superb.

    This restaurant has been great a couple of times that we were there. However, we have gone there for New Years Eve the last two times we visited and both times were very disappointing. For one thing, they have a special menu for New Year’s (both of the times we were there on the holiday), which omits a couple of really great dishes that are on their regular menu. They omitted a filet mignon dish that is outstanding and instead had a strip steak, which we both ordered. The strip steak was not very good. It was tough and dry - neither of us finished it. The big problem we had was with the service we received. It took quite a while for our server to come to our table, but so far not so bad. We ordered dessert which included ice cream. After we ordered it, our waiter seemed to disappear for a while. After waiting 10-15 minutes and not seeing our waiter, we asked another server if they knew where he was. Apparently, they found him and he came to our table (without the dessert). We asked where the dessert was and he left and came back with it 5 minutes later and, surprise!, the ice cream was completely melted. He took the dessert off of our check, but never explained the delay. We got the impression that the restaurant does not use their experienced wait staff for this holiday, since we had the same issues both times we came on New Years Eve. We had great service every other time we visited. Needless to say, we will not be celebrating New Years there again!

    The food was for a bird I left hungry and for two people 170.00 is absolutely ridiculous. I will never be going back

    We were at a holiday reunion. So, the tine together was precious! Our service was good. The young man was attentive. However, we needed the togetherness time to just talk without interruption. The food was outstanding! The Would always is top notch!

    Went there a week before Christmas. Decorations were beautiful. Wonderful atmosphere. We were a party of 5. Everyone ordered something different. We all loved our food. Everything was excellent so I won't more you with our choices. I will definitely go again and again!!
