Located in the Scottsdale Shopping Centre, Shinbay is a Japanese restaurant popular for its omakase tasting. The restaurant has an elegant ambiance to it due to its dim yellow and purple lighting. It offers family, couples and pub style seating in a formal manner. Dishes served at Shinbay are considered as edible work of art.
The food served at Shinbay is done in parts of three or four course meals. The patrons choose between a selection of their favoured nigiri sushi, warm dish and cold dish. There's also a chef's special course that offers more than five dishes for $100 for five people. Some of its popular dishes are fluke in grapeseed oil, marinated tuna and blue point oyster. Shinbay's dishes are served with an artistic flair, which is an important part of their sushi tradition.

One of the best meals we have ever had in Arizona, or anywhere. This is a fixed price, 3 or 4-course dinner. Magnificent food. First dish was a white fish carpaccio, which 'had us at hello.' Beautiful first bite. Other courses included a Japanese beef and about 7-8 types of sushi, all of which were completely different flavors. Amazing! Ended with an egg custard with fruit, which was beautiful. Our waitress, Megan, was absolutely delightful. This is not only one of the best Japanese restaurants we've eaten at, but one of our top 10 meals. Expensive, yes. Unforgettable? Absolutely.
It is nice to not have to decide what to eat, to know its going to be fresh and adventuresome. Food was excellent. Service attentive. I would have liked things a bit slower -- some pause between courses. And they could have a better wine list - I think its more of a sake place. Will certainly return.
This is what I had been missing in Phoenix and could only find in Asia, Los Angeles and NYC. This restaurant is elegantly designed with a knowledgeable staff and an excellent chef that truly works to creat art through his food presentation. If Kanda is rated 3 Michelin stars (my favorite Japanese restaurant of all time in Tokyo) then I would say this definitely deserves 1 Michelin star! I would recommend this to anyone wanting to enjoy the Japanese food art experience!
Went to ShinBay for dinner and had their "3 course" dinner at $60 per person. First, wine list is non-existent, maybe 6 bottles of wine to chose from and the only red wine was a Pinot. First course was three small various appetizer bites, second was basically 5 bites of meat with some veggies, and third was 5 small bites of sushi. I'm not saying that it wasn't good, it was, but the amount of food for the price was a joke. After a couple glasses of wine it came to well over $100 per person. We literally stopped at Sonic on the way home to get some food because we were so hungry. Also, we were there on a Saturday night and the place was mostly empty, no vibe at all. We will never go back or recommend.
Shinbay has become a favorite for when a normal Japanese restaurant in the US just isn't enough. Everything is of the highest quality and the finest preparation, as you would expect in a fine restaurant in Japan. I highly recommend the Chef's Tasting course. Make reservations in advance for this experience that you won't forget.
We are Philadelphians who make an annual pilgrimage to the Southwest in the winter to get away from the cold. While there, we never fail to visit our favorite sushi restaurant in the country. Chef Kurita's omakase is a treat of sight, smell and taste: an extravaganza of flavor that delights the senses. We are always welcomed and recognized from year to year, and so the service is as wonderful as the food. Wonderful food and service guarantees we will return anytime we are in the Phoenix area.
Dined on Superbowl Sunday. We were only guests. Understandable. Given there were no reservations, we could have enjoyed being sat at the sushi bar to watch chefs prepare dishes. Our server was kind, warm, professional and gracefully enthusiastic about service. Chef Shinji Kurita does an masterful job at sourcing ingredients and preparing dishes. Flavors were balanced, thought out and layered. We really enjoyed the culinary sensibility around presentation and dishes. I really enjoyed the 'Silver Shrimp', Tuna, Kumamoto oyster/Uni, and Mushroom/Clam "stew". The Miyazaki Beef course was a fun and graceful sensory experience. We will be returning for a full Omakase Chef's Tasting and are very much looking forward to it. Thank you Chef! Thank you Shinbay Team!
As a service member that has been stationed Japan and the pacific, this was the first time I was completely brought back their. I had some amazing food there but Shinbay took it to another level. Amazing service and food. It was my wife's birthday and it seemed like everyone said happy birthday and they even gave her a card. This is a foodie place, be ready to go on a journey . Thanks for a great night Shinbay and for giving me some food I haven't even tried!
Great experience. The host that greeted us was very nice and accommodating. The waitress was so sweet, professional and knowledgable with each dish that came out. The food is fantastic! The chefs really know what they're doing when creating flavor pairings with each course we had. The whole experience was awesome.
We saw this restaurant on the Open Table Best 100 list, and decided to try it on the last night of our recent trip to Arizona. Being from Boston, we consider ourselves "Fishianados" and were slightly wary of having sushi so far from the ocean. However, the 5 course chef's tasting menu, which at $100/person was a leap of faith, did not disappoint on any level. The opening course consisted of a fluke sashimi, delicately dressed in ginger and ponzu. It was spectacular. Next up was a "bites from the sea" plate with six different unusual offerings. The halibut in gelatin was not my favorite, but everything else was fresh and delicious. Next, clams smothered in a broth with five kinds of exotic mushrooms. Our server Josh (excellent by the way) brought spoons so that we could enjoy the light but extremely flavorful butter broth without having to lick the bowl. Next we cooked wagyu beef on individual hot pots, and ended with five wonderful pieces of sushi. This was an incredible meal, one of the best I have ever had, and I highly recommend it to anyone with a love for traditional Japanese flavors, and a bit of an adventurous spirit.
Each course was exquisitely prepared - fresh and full of flavor. The fish choices were outstanding. Pacing was great and gave us the time to savor each course - plating and tastes A very special experience.
The New Year's choices were indeed wonderful. The chef is superb - whether on New Years or other times we have been at this restaurant.
For parties of 5 or more, it is required that you order Omakase style. We would have done so anyway. The Omakase was truly a wonderful experience. Our server explained each dish which was very helpful. We especially enjoyed the Kobe hot stone. Overall, our dining experience was delightful. We would definitely come back to this restaurant if we are ever in Scottsdale again.
ShinBay was a good place to try, but at the price, it was not exceptional. The restaurant itself is nicely set up, but the ambience was a bit barren (perhaps because it was a Thursday night). The menu is only Omakase, and we chose the $100/person Chef's Tasting, for our anniversary celebration. Each course was varied, tasty and well-presented but not exciting. The best part of our tasting was the traditional Nigiri which was simple but exquisite. It feels like in trying to stand out, being voguish or edgy overshadows true cuisine. For our anniversary, we tried a new place that had good reviews, but do not feel inspired to return.
