Michelin-starred chef Jean-Georges Vongerichten has collaborated with One&Only Palmilla since 2008. The new restaurant SEARED under the direction of Executive Eric Scianimanico offers an array of steaks choices including Kobe Tomahawk, Grass Fed NY Strip and Porterhouse all displayed in a glass-walled meat cellar with a dry-edge curing room. The new menu also highlights the best of the fish and seafood from the Baja as well as some of the Chef’s favorite signature dishes.
The restaurant offers an understated elegance of warm natural colors and accented by original Mexican techniques designed by Jeffrey Beers. The design features an entranceway encased in amber glass, amber chandeliers, tawny marble with candlelit nooks and Aztec geometric marble f loors.

Beautiful restaurant at the one and only. We have been there several times because the food, drinks, wine list, service and ambiance are fabulous. One of our favorite restaurants in Cabo. On this occasion I ordered the salmon with a lemon and chili crust. It was the best salmon I have ever had. We ordered the corn as a side dish and that was very good as well. Can’t wait to return to this restaurant!

We asked for a table on the patio but we were told they were unavailable. For the next two hours we sat inside and watched many tables outside go unused.

The service was rushed and disorganized. They brought food before cocktails, cleared plates before we were finished and we had to ask for the evening’s specials. We generally felt ignored.

I’ve had several excellent meals at this restaurant but this one wasn’t one of them. At this level there should not be this many mistakes.

I am accustomed to expensive steak houses. But an 8 oz filet ala Carte costing $120 is way overboard. Plus 31% more for added taxes and mandatory tips? Las ventanas is half the price for a more elegant experience.

Probably one of the best dining experiences I have ever had. Everything and I mean EVERY DETAIL was attended to from the moment we stepped on property until the time we left. Impeccable service, Michelin quality cuisine and beautiful facility!!!

If you truly appreciate true hospitality, professional service and OUTSTANDING cuisine this is the place to go...

This is truly a GEM in Los Cabos!

We enjoy a good prime steak and while our shared ribeye (approx $140) was perfectly cooked, the marbling was not up to prime like we have enjoyed at Cut or Lawry's even for far less. Luckily, we ordered the cold seafood platter to share and the assortment of shellfish was well prepared and presented. Our son's chicken soup was a mound of finely chopped vegetables with lukewarm and very lightly flavored chicken broth poured over it: unusual to say the least and sadly, not very flavorable.

Service was beyond attentive, bordering on solicitous. We're happy to pay over $400 for a special occasion meal but I'm not sure Seared was worth it. I'd recommend Manta instead.

Great service! Great food! We where really enjoying our dinner! The food was fantastic! Sadly is the most over priced restaurant i have ever been to. We where 2 people and ordered 4 dishes and a cup of wine and we paid 400 bucks! i will not return

Impressive setting but sadly the food doesn't live up to expectations. Overpriced NY Strip was average. I have had better in Los Angeles. Staff very attentive and courteous. Wine list WAY over the top (3 to 5 times retail). Never again!

From the moment you step into Seared, you are greeted by a warm and genuine welcome. The ambiance is romantic with dim lighting and candles while you hardly notice the hustle in every team member's step as the serenity of the experience begins. The hostess offered us a pre-dinner cocktail at the bar, we realized she allowed us to dine at our leisure with no time limits impeding on our wishes. The bartender was charismatic and knowledgeable on the cocktail choices and stirred each to perfection. Once we finished our elixirs, we made our way to the dining room and welcomed by Luis, who had a pep in his step and attentive to our every need. We wanted for nothing while Luis and Alejandro were guiding us through our whimsical dining experience. Alejandro gave us the best gift of all while we chose our selections from the menu, with every choice he reassured us on our choice with impeccable descriptions of the crunchiness, sweetness or uniqueness of each dish. The evening felt like a beautiful dance while we watched the service team unite like a soccer team winning the world cup, the Chef organize and delicately edit each dish on expo to perfection, to the Manager checking in to ensure we had his attention if needed and to enjoy our time with Alejandro. I'd say I don't even need to rave about how exquisite the menu is as it was beyond perfection from the frisee and lardon salad, to the delectable seared foie, to the heavenly strip steak cooked to a perfect rare-to medium-rare. Overall the evening experienced at Seared has topped the charts from all my travels to some of the TOP restaurants in the world. My compliments to the Chef, the Service Team, The Bartenders, The Hostess Team to the Management who conducts with eloquent and talented orchestra at Seared.

Obviously the restaurant is very nice. There are other restaurants within this hotel that offer just as good food at a more reasonable price with very nice atmosphere. I guess they are charging the high prices for food and extraordinary high price. The restaurant manager seemed more interested in finding out how we were being served then our waiter. The door next to our table stayed open every time someone came in or out so we could hear what was going on in the kitchen.

This restaurant is way over priced for what you get. We had two glasses of house wine, 1 bottle of marginal wine, a salad, two entrees, and a side of mashed potatoes and the bill with gratuity was over $500.00.
