Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Stuffed Zucchini Blossoms with Small salad with Chocolate Vinaigrette is one of the best dishes ever had .Francisco and the staff are remarkable- balancing professional service with friendly welcoming. The unique, delicious food here is outstanding! My husband and I kept shutting our eyes to fully concentrate on the delicious flavors exploding in our mouths. The sopa de amor is truly incredible and not to be missed. We enjoyed trying all the beautiful mole selections to determine which one should accompany each entree. My halibut was grilled to perfection. The duck was tender. My husband had dulce sinfonia for dessert- very unique and layers of flavor. I had the pastry with fresh berries. Again, fabulous.
We wanted to try Sazon because I love chile en nogada. Everything was great except for the chile in nogada. It was too heavy on dried fruit and nuts, too limited on meat and chile and held together with something too sweet. The only good thing about the dish was the walnut sauce. Great disappointment! The service and ambiance were delightful.

Everything about Sazon was more than expected. The food, ambiance and service were superior. The chef came to our table as well as the manager, to make sure everything was exceptional, and it was. This is now our new favorite restaurant in Santa Fe. We will be back and recommend it to our friends when they travel. Amazing dining experience.
Amazing selection of moles- paired with meal; friendly service and beautiful decor/artwork. Very special dinner for my birthday complete with complimentary, decadent dessert. They bring a stool over to the table for your purse so you don’t lose money setting it in the floor- so I learned a new tradition!
Meal was good, not great. Everything was extremely expensive. Shrimp enchiladas were so so. Soup l’amour was great.
Experiencing unique flavors is a very important part of dining for me. And, I can think of few places that are as unique as Sazon. I've eaten there several times and I haven't experienced anything that wasn't new to me. High praise also for the amazingly knowledgeable and engaging wait staff. The get an A+ on my most important criteria: always there when needed....and never intrusive. An excellent selection of mezcals and tequillas and sotols! Fabulous dining space too. Street parking
But, very expensive. And, although unique, the execution varied between excellent and very good. So, overall, I don't think it a particularly great value. If you are lucky and your selections are excellent, then the value is very good. If Oaxacan cuisine is what you crave and you regularly spend over $100 per person when dining, then maybe the value is excellent.
Atmosphere and service were flawless. Only issues we had were with the food, and very small issues they were: my shrimp enchiladas were, tho’ delicious, not hot (temperature) when it arrived at the table; the stuffed poblano, had half walnuts (not chopped) which we found off putting. Our sense of the menu after eating at Sazon was that the menu has a preponderance of sweet elements where our expectation was for savory flavors. There’s sweet in the moles (which were outstanding), fruit in the stuffed poblano, 2 of 3 timbales were like dessert (odd for an appetizer). That said, we’d eat here again, recommend Sazon to everyone—a fabulous dining experience!

Unbelievable dining experience. Starting with the warm greeting from the wait staff to the personal table side visit from the Chef. The food was over the top fresh and delicious and very creative.
Sazon is a must for any foodie; you will be amazed at every aspect of this dining experience.

I have followed the chief Olea for years and he has outdone himself with this restaurant. My wife had the Sopa de Amor which was out of this world and then the tenderloin tacos. I had the lamb. All were EXCELLENT! Service was great and we enjoyed the evening. I have bee going to Santa Fe so long that I remember this building as an Italian restaurant. It has changed hands at least 3-4 times since then, but this is the best there has ever been.
Honestly, one of the best restaurants and experiences I have ever had, hands down.

We had an outstanding dinner at Sazon for our anniversary. The food is exceptional, as well as the service. It is a very special place. We hope to return and definitely give it our high recommendation.
Food and ambience good to excellent. Server attentive, but some miscommunication as wrong drinks and soup presented initially, and the final bill was wrong and twice had to be corrected. This restaurant too nice and too expensive for that many mistakes. That said, I might give it one more shot if in Santa Fe again.
Our waiter, Arturo--along with his assistants--, was superb--knowledgable, attentive(just right), friendly without being mechanical or phoney. Each food and drink item was delicious, well-prepared and beautifully presented.
First time to restaurant and the experience, food, service, background music, and art on the wall were fantastic. The whole place and experience made for one of the best dining pleasures since we started coming to the city many years ago. The highlight was shaking hands with the owner/chef when we walked in. And that is what I enjoy so much about this city and the restaurants. I don’t think that I can add more to what have said about the mole tasting at the start and having the enjoyment of picking a dinner to go with the mole you like the best. If you are foodie type of person, plan to dine here.

An excellent Latin restaurant that is way above the typical Mexican restaurant in creativity. Expect the best Latin food that you have ever tasted. I use the term Latin food because the appetizers, soup and entrees are unique. This is definitely a gourmet experience and its popularity on a Saturday evening attests to its superior food.
A very special restaurant in Santa Fe. You are able to choose proteins and moles to create a great dining experience. Fantastic Mexican pop art is the decor and the service was first class. Great list of Spanish wines. We really enjoyed it.
The moles served to us first were excellent!! Spicey and yummy. The soup was outstanding!! The pork was cooked perfectly and the mole served with it was perfect! But, the chef’s special dessert was so unusual, tasty, and perfection! I can still taste it today just thinking about it. What an awesome place to dine!! So impressed that the chef came to our table twice. Loved this place!
Had a wonderful experience tab sazon. We let our waiter guide our choices so we. Oils share a little if everything. Every bite was something special. Topped off by a visit from the chef. Best meal of the Santa Fe Trip, if not of the year, for us. Can’t recommend it highly enough.
Sazon continues to be my favorite restaurant anywhere. Chef Olea's food is unique and spectacular. The service was choreographed and superb. I took friends and told them they needed to try the soup of love and the special dessert. Ahhhhhh...

I travel quite a lot for work, and spend much time searching out unique, great places to eat. I am certainly a foodie. This was among the top 5 meals I have ever had. The Soupa de Amor was the best soup I have ever tasted.
I experienced none of the issues the negative reviews seemed to comment on. Service was spectacular, pairings were outstanding, and the food was out of this world. Worth every penny if you value fine dining.
Enough said, Sazon was spectacular.

Bravo Chef Fernando Olea! This was THE BEST MEAL we had in Santa Fe. An experience not to be missed! First, the attentive waitstaff brought a selection of moles for tasting, each one complex with layers of spices. I loved being guided through the tasting experience before ordering and allowing my palate to dictate that evening's choices. Not knowing better, my husband and I shared the Soup of Love. Never again! This soup was beyond amazing--each spoonful full of wonder and delight. I dream about this soup and my next trip to Santa Fe so I can have more. I had the stuffed zucchini blossoms appetizer--lightly battered with corn meal, a delicate crispiness hiding the scrumptious melted cheeses within. My husband paired the lamb with a dark red mole--it was the best lamb he's ever had! The richness of the lamb balanced so well with the deep flavor of the chiles. The sweet potato puree was superb! My tastes were on the sweeter side that evening and I couldn't choose, so I had my halibut with wonderful three moles. It was spectacular! Cooked to perfection! After the meal we had the espresso with horchatas. So good! WE LOVE SAZON! HIGHLY RECOMMENDED!

One of the best meals I’ve had. Chef Olea creates innovative meals like you’d find in the best gourmet Mexico City restaurants. His moles are made fresh everyday and you get a sample plate of them to try with tiny corn tortillas as soon as you sit at your table.

The chef’s signature soup is incredible. I’d go back just for that.

If Sazon was in New York, where I'm from, would have gone very frequently. It's an exceptional restaurant and it would hold its own even in New York amongst other exceptional places. The food was outstanding, a combination of the chef's special sauces and the freshest, top quality ingredients around. And it matches so well with the tequila/mezcal cocktails offered. Our server gave us some recommendations and they were all spot-on. All this just to say, we'd go back any day if given the chance. Thank you for the marvelous dining experience!

Chose this restaurant based on Trip Advisor reviews of places to dine. Nice atmosphere, service was very good, but almost too attentive. Chef/owner very nice and comes to check how you are doing. We really enjoyed the duck breast entree. Delicious and perfectly cooked. We split the entree with 2 different moles. Both delicious. We split 2 appetizers, one tiny tacos with beef and pork with tuna in the middle, excellent. The other was timbales. Had never had these before, so wasn't quite sure what to expect, but more cake-like than we were anticipating, so while good, not our favorite. Wine was good, but expensive by the glass. Would recommend.
