Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Best dinner in Santa Fe . Anyone who appreciates creative food that stimulates the diner, visually excites, delivers on the right blend of tastes and textures, and has a wonderfully vibrant setting, with efficient, and welcoming service, will have a great dining experience. Moles, savory, sweet, non-spicy and spicy as you choose with a selection of meat and perfect sides, a "Sopa de Amore" to remember, and the special stuffed Squash blossom wut greens...all outstanding.

Starting with the salsa/sauce tasting at the beginning our our evening, until the final bite of our dessert, the entire dining experience was outstanding. The "Sopa De Amor" (love soup) was incredible - one of the best soups I've ever had. I had the Mole duck enchiladas, which were also incredible. Our waitress was very attentive all night, and made sure we made great choices with our meals. In short, it was by far the best meal of our trip to Santa Fe. When we return to Santa Fe, we will definitely plan to spend at least one (maybe two) evenings at Sazon!

Particularly liked the idea of the mole samples to start the meal and the chef offering different main courses paired with the different moles. We had lamb with the “New Mexican mole”.

Outstanding restaurant, the food is wonderful, the highest quality and quite creative as well. The service is absolutely the best, with very knowledgeable wait staff explaining and discussing things. They were very attentive and proactive to our allergy issues. Very nice interior design, artwork and a relaxing feeling throughout. Unquestionably one of the very best restaurants in Santa Fe.

This restaurant is really something special, and if you have one night in Sante Fe and want cuisine reflective of the région with excellent, warm service, come here. The chef is incredibly talented and is a super nice guy...we met him briefly after our meal and raved about our experience to him. Each meal starts with a selection of moles which are incredible. My shrimp enchilada was excellent. The wine list is superb. Aviva was our server and she added so much fun to our experience...such a warm, congenial, attentive, and friendly person. When we return to SF, we will for sure come back here. Someone later told us that this is pretty much the only place in SF that offers upscale, New Mexican cuisine...the other great places (Tia Sophia, Cafe Pasquale) are casual and we loved them for lunch. Highly recommend!!!!

Sazon was an absolute delight. Chef actually came up to us on our way out and asked us how our meal was, and couldn’t have been sweeter. Coloradan mole was outstanding, as were the stuffed zucchini blossoms. Wine selection is fantastic and we were given fantastic recommendations. Desert and coffee were decadent and so satisfying! Would recommend to anyone looking for finer New Mexican faire!

Excellent service, presentation and creative, unique dishes. The perfect spot to celebrate an intimate relationship over dinner. Gerrardo and Staff are perfect and Chef Fernando Olea serves exquisite, rarely found dishes.

We ate at Sazòn on a Friday. I can say it was some of the best Mexican food I have ever had and that is including meals we've had in Mexico. The moles were inspired, rich, and textured, redolent of earthy flavors, without being too spicy. The chocolate mole served as a special on duck was worth the trip alone. We also had a red mole on pork. The pork loin was cooked to absolute perfection, following the chef's recommendation to go for medium rare. We had corn cakes and huitlacoche appetizers, both of which were delightful. A corn cake topped with amaretto mousse was a masterpiece of invention. The desserts topped the experience. The chocolate cake was one of the best I have ever had. The mango mousse was delightful, light and yet tasty and was served on a raspberry tartlet. In short, a wonderful experience, capped by the chef who took the time to talk to all the tables at the end of service. The service was attentive and well-coordinated. At $300 including wine and tips for 2 people it's not meant for everyday fare, but it was well worth the expense as we enjoyed our evening immensely.

We were told there was a new chef who reportedly enhanced the menus. I thought the menu was downgraded not only taste but quantity. We won’t be back.

All was excellent, we should have asked for main room seating, as stuck around the corner with views of walls not exciting. Server was a bit slow as a result, as we couldn’t get her eye. But overall, service, food, and what we could see of the restaurant was very good

We loved this restaurant. My husband and I went there for my 70th birthday and were very pleased. The food was delicious, the deserts were fabulous and we even tried the grasshopper appetizer. It was wonderful. Never thought I'd say that about grasshoppers. We would definitely recommend this restaurant to our friends!

I can still taste the mole with duck breast. The flavors were amazing and did not lack. The staff were amazing and the chef even took a photo with us to celebrate our 25th anniversary. This is a place not to be missed.

Food was delicious, unique and intriguing. Service was excellent and we loved the artwork and fires in the kivas but the one thing that ruined the experience for me was how cold it was by the window. The wall was freezing and made me feel cold so it was hard to enjoy the food.

We walked in with reservations about the emphasis on mole sauce. We were surprised when the waitress brought out a sampler of the mole. Wow! What an eye opener - it is true that not all mole sauces are the same. Ordered the shrimp enchiladas and hubby had the beef tenderloin. Both were delicious!!! Next time we are in town we will go back!

As residents, we've eaten in most of the better restaurants in Santa Fe, and think this is the best one. The food is consistently excellent, especially the starters and the sublime sopa de amor. Service is both formal and friendly. They just do everything right!

The Sopa de Amour. If you hav not tried it; you must. The ice cream dessert is incredible; let your waiter step you through the first bite! Reserve in advance as it is one of THE places in Santa Fe.

New Years Eve Dinner makes for a special dining experience. Of course not every venue lives up to the expectation. This was our second experience at Sazon and I deliberately use the term experience. Dining with Chef Olea is a culinary experience unlike any other. We first dined here while visiting Santa Fe a year ago and realized this was an unbelievable dining adventure. We convinced our dearest friends to spend New Years in Santa Fe and to dine at Sazon on New Years Eve. They were as wowed as we were. Any attempt to describe Chef Olea’s cuisine does it an injustice, you simply have to experience it. Our friends were amazed and despite having dined there before, so were we. To make the evening complete Chef Olea graciously allowed us to take a photo with him. Sazon is not only our favorite restaurant in Santa Fe, it ranks among the very best across the country. We eagerly look forward to our next visit.

Eating at Sazón was the highlight of our trip to Santa Fe. The food was exquisite. We really enjoyed getting to understand and taste various moles and what they are best paired with. Every dish we ordered had multiple complex succession of flavors. The chef Fernando is extremely talented at putting together the most interesting flavors into unforgettable dishes. And our server Candace provided the best descriptions of what we were about to eat along with impeccable service. This was a dining experience to be remembered.
