Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Fabulous restaurant. Food was incredible and the service was superb. The chef is a genius! Creates amazing sauces, pairs your choice with your main course. Our waitress was great--her recommendations were spot on!
Went with my wife and kids for 29th anniversary. Meal was outstanding; service was great. Sampling the different moles and learning about them was fun. The restaurant had a little Anniversary card out for us and gave us a free dessert - which was nice. Enjoyed meeting the chef. As regards the food, I had the pork tenderloin with the recommended mole (Coloradito) - just excellent. The kids had a duck dish and the lamb - both thought they were very good. Overall, it was an outstanding experience.
I have visited this restaurant many times. As always, the food, drink and service were outstanding. But this time two things diminished our enjoyment. The first was the presence of a very loud baby and toddler two tables away. If I am going to spend $370 for four with my friends at a restaurant, my evening should not be marred by screaming children. The second item was the air-conditioning which was blowing directly on us at the table. at which we were seated and was much too cold. The staff accommodated us by turning it down but it came on again. The vents need to be redesigned so that they do not blow directly on patrons.
Our server Candace was a true professional. She was the best. We will be back! The restaurant staff as a whole was extremely attentive!!

After very poor and unhelpful service from desk people, all was straightened out by a superb manager and impeccable service by wait people. The meal was superb from appetizer to dessert and the evening went from a disaster to one of the best overall dining experience we ever had in Santa Fe.
If I could give Sazon more than 5 stars, I would! We had the most incredible dinner and bottle of wine. The wine list is extensive and we were guided with lots of information about the different choices. The one we ultimately chose was amazing, a 2008 Noster Sants from Priorat, Spain. The food was absolutely spectacular. You get a beautiful sampler of six different moles to try with little mini-tortillas. Each of the moles makes an appearance on the menu so you have the opportunity to sample before you commit.
We started with squash blossoms. We loved them so much we came back the next day for a quick drink just so we could have them again. One of us had the black bean soup and timbales and the other had the pork with mole. So, so delicious.
We also got a visit from the chef who is so friendly! Photo op! This restaurant is affiliated with La Chaine des Rotisseurs and I am a member so that was a special treat for me.
I can't recommend Sazon enough!
On our first visit to Sazon, we were elated with all the great tastes and textures. Often, at a restaurant, there will be one or outstanding tastes that remain with you long after you're gone. Just about everything we tried passed that test in flying colors.
Such a wonderful Santa Fe restaurant! Love the chef, love the food, love the cocktails. A grown up place, dressy casual, suggest reservations. Second visit. Highly recommend!
Unfortunately the meals we got were overcooked! It looks like quality control is not top.
Halibut but was overcooked and dry: could not cut with fork.
The veal was supposed to be medium rear and was served well-done.
Huge disappointment for a frenchman used to " perfection" in houses ranked #2 in Santa Fe and priced that way: $70 for the halibut!
This is a very attractive restaurant with excellent ambiance and food. We enjoyed everything from the prickly pear margaritas, mole sample, appetizer plate of ceviche and tacos, our entrees (stuffed poblano pepper and duck breast in mole sauce) to our delicious desserts. We also enjoyed the chef visiting with us.
Fabulous food start to finish.
This dinner was outstanding. We travel extensively and this, by far, is one of the best dinners we have had in a very, very, long time. The food was over the top. The service reflected the extensive training all of the service members received. The chef circulating around to ALL the patrons was an extra enjoyable treat. If you find yourself in Santa Fe, don't pass up the opportunity to visit this outstanding restaurant.
Incredible food and great service. The food was innovative and unique, Mexican with a Santa Fe flavor, the staff courteous and knowledgeable, and both the chef and maitre’d came by our table to chat. A wonderful experience.

We enjoyed a glorious meal at Sazon last Saturday evening, August 4. It all started off, of course, with the six memorably fantastic moles and small tortillas--a golden beginning. For starters we enjoyed the wonderful small tortillas with huitlacoché (scrumptious) and the equally good vegetable timbales. Our mains consisted of a poblano chile stuffed with lamb, pork, beef and walnuts with a complimentary sauce and shrimp enchiladas--both extremely good. And, we ended on a high note, the chef's special dessert: avocado ice cream with a beet and jalapeño sauce which is a glorious experience all on its own. The service was very professional and friendly. This was one fine meal!
Extremely overpriced food. We have had a lot of mole in our travels and in the US—and this was average and WAY overpriced for $30 entrees. Especially as we live in the San Francisco Bay Area and regularly eat at really first class restaurants. The staff continually referred to us as “milady” which was pretentious and quite frankly annoying. Not a good value at all—take it from someone who regularly dines at Michelin star restaurants in California wine country.

We ate here while on vacation and enjoyed this restaurant in Santa Fe more than any other one where we ate during a 5 day stay. Food selection was excellent and presentation was unusual and visually attractive. Service was very polished.

The best authentic Mexican restaurants I have ever experienced. We live in Houston, Texas where there is a whole lot of competition and this place outperformed my expectations. We did a tasting menu on the spot and the waiter was so helpful to help us choose the various dishes to experiment. All choices were just spectacular and you must taste test the varieties of the Mole. Just spectacular.
I have been to Sazon several times and have never been disappointed. I love the variety of moles. Our waitress was wonderful, and very knowledgeable about the menu items. Although it is pricey, it is an excellent restaurant!
Amazing culinary experience! But what made this a must stop in Santa Fe was definitely the chef and his waitstaff. Their knowledge of the food and welcoming hospitality made it a night to remember. Enjoy!

Oh my- one of the best meals ever. Sadly, they were out of grasshoppers for their signature appetizer. But everything they did have was classy. Extraordinary tastes. Amazing attentive coordinated service for our party of 4. The chef was generous with his time, speaking with us tableside for 5 minutes. The zucchini blossom dish was one of my top 8 single items ever. The soup was amazing. The sweet symphony dessert was world class. Go. Enjoy. Five stars.
The food is spectacular. The special house soup, soda de amor, may be the best dish I’ve ever tasted. The moles are fabulous. This is a pricey place but worth it.

The first few times we went, I strongly thought it was the best restaurant in Santa Fe! The last couple times, I’ve been disappointed. My halibut was cold and dry and we waited too long for our drinks and for our order to be taken. Maybe they got too popular too quickly. I really hope the quality comes back up!
I came here on my last night in Santa Fe and loved it. Not only was the food delicious and different from anything else we experienced on our trip, the ambiance was delightful and I felt as if I was dining in an art gallery. The service was exceptional and the menu creative. The most exotic thing on the menu (from my perspective) were the baby grasshopper tacos, which were crunchy and delicious. I was feeling adventurous. Everything we ordered was great, from the salmon to the beef tenderloin. If you're visiting Santa Fe, be sure to check out this restaurant.
