Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The food was outstanding and very creative, the service was friendly and very professional,and the atmosphere was lovely. The chef himself came out a number of times to be sure we were happy and to explain some of the food. A wonderful experience.

Exquisite meal, excellent service, wonderful ambience. Expensive for sure but worth fir a special occasion. Wine list could be improved upon; very expensive and limited Chardonnay selection. Opted for cocktails w dinner instead of wine. Food is very rich so can be heavy on stomach!! Must have the chef’s signature sopa de amor....incredible!!!

Sazon is a spectacular restaurant with unforgettable food-- Mexican alta cocina with original ideas and incredible flavors. Chef Olea specializes in unique moles. Every evening, 6 different moles are on offer to pair with meat or fish. The sopa de amor is a must. So is the one of a kind dessert, the dulce simfonia. My only quibble is the final price tag-- it's a very expensive experience. But in many ways it is worth it. Just be prepared.

It is rare to experience service this exceptional. The food is as fine as the service but to be served with such grace and respect, without feeling that the staff must be ingratiating, is a true honor to experience. This is an exceptional restaurant and I've dined all over the world. Many blessings for Francisco, manager, and for the head chef and owner, who knows he must cook to live. Gracias.

From the moment we arrived, I anticipated a special dining experience. The decor was creative and Chef Fernando came over to welcome us. We were seated promptly and were enjoying the artwork when our friendly server Candice presented us with menus followed by a selection of six moles with small warm corn tortillas. The chef structures the entrees around his moles, for which he is famous. They recommend you choose your entree according to your taste in mole. For me it was an easy choice, as the red-beet mole seemed a perfect accompaniment for the duck. We also enjoyed some spectacular appetizers. Candice was extremely knowledgeable about the food and made great recommendations for wine, beer, and tequila. In addition, Chef Fernando came by several more times to ensure we were totally pleased with our dinner. Of all the fantastic places we dined in Santa Fe, this one really stood out. We will definitely return here on our next trip here.

This has become our favorite restaurant in Santa Fe. It is truly an experience from the first delectable bite/sip to the last! The Chef's Signature Soup was the best soup I've ever eaten. Each of the different spices were a burst of flavor on the tongue. The Shrimp Enchiladas were also superb. The bar is cozy and stocked with any beverage you could want or dream of. Our waiter, James Masterson, will take care of you like you are the only ones in the restaurant. It was the finest service we've ever experienced. Pure joy to dine here!!!

This place is pretty overrated. Although the hostess and waiter were charming, the food was disappointing and slow to arrive. Not many vegetarian options to go with the mole choices, and no chicken, only duck. The music was a bit too loud. All this and quite expensive. I doubt I'll go back.

Second time I've dined here. First time was exceptional; this time, not so. Excellent cocktails. Food was good but not exceptional. Service not as good as the prior time. Wait service was slow, not particularly attentive (first time may have set the bar too high), and menu explanations were brief and impersonal.

Really had a great experience. We arrived early for our reservation, we were taken to the bar while our table was prepared and enjoyed their special cocktails which were exceptional. Staff very personable and friendly. A few minutes prior to our reservation time we were seated at our table. We were provided with samples of moles to taste all. Of which were outstanding. We started with the Oaxaquenos and Sopa de Amor and had the Duck breast and Lamb chops for our main course both served with chefs recommended moles. Bottom line one of the best meals we have ever had, the ingredients and flavors were exceptional and provided a unique and very satisfying dining experience. Highly recommend and we definitely look forward to our next visit.

Fabulous flavors. The start with the mole portfolio of tastes was a great introduction to a a marvelous meal. The chef’s special soup was incredible. The dinner choices were interesting, complex and delicious. The staff was both friendly and very helpful in understanding the choices.
