Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Attitude instead of talent. Mediocre, snooty food and mediocre, snooty service.
Sazon was Say Amazing!!!
The location was convenient; very close to the central plaza. The atmosphere and service were top notch. Our main disappointment was that we chose this restaurant because their website said they were vegetarian friendly. However, they only had one vegetarian entree, an eggplant dish that was not very good. Afterwards, even the waiter said he would not recommend it. However, the meat dishes looked very good.
Excellent tenderloin, but I had requested “medium-well” and it was just medium, too red. At this price and restaurant reputation, the cooking should be spot-on.
Sazon offers truly delicious Central and Southern Mexican food. Having lived in Cuernavaca, Mexico, for five years, I can attest to the authenticity of the entrees, although all are offered with an upscale, gourmet touch. Instead of the ubiquitous "chips and salsa" to begin the evening, Sazon offers pieces of corn tortillas along with the various moles that the chef has crafted, each recommended for a different entree.
If you appreciate genuine Mexican food and want a change from Tex-Mex or even Southwestern cuisine, try Sazon.
Absolutely a wonderful meal and service
Unusual dishes. Perfect portions. Great service. Now in my top five. Loved it.
Another amazing experience at Sazon! Thank you Sazon for making my wife’s birthday perfect.
The food was outstanding and very creative, the service was friendly and very professional, and the atmosphere was lovely. The chef himself came out a number of times to be sure we were happy and to explain some of the food. A wonderful experience.
Amazing! Service was wonderful and the food was so delicious. Definitely driving to Santa Fe again just to eat there again.
Exquisite meal, excellent service, wonderful ambience. Expensive for sure but worth fir a special occasion. Wine list could be improved upon; very expensive and limited Chardonnay selection. Opted for cocktails w dinner instead of wine. Food is very rich so can be heavy on stomach!! Must have the chef’s signature sopa de amor....incredible!!!
Sazon is a spectacular restaurant with unforgettable food-- Mexican alta cocina with original ideas and incredible flavors. Chef Olea specializes in unique moles. Every evening, 6 different moles are on offer to pair with meat or fish. The sopa de amor is a must. So is the one of a kind dessert, the dulce simfonia. My only quibble is the final price tag-- it's a very expensive experience. But in many ways it is worth it. Just be prepared.
It was a lovely evening with great food. The staff was professional And polite. Would recommend to anyone that wants a nicer dinner experience.
It is rare to experience service this exceptional. The food is as fine as the service but to be served with such grace and respect, without feeling that the staff must be ingratiating, is a true honor to experience. This is an exceptional restaurant and I've dined all over the world. Many blessings for Francisco, manager, and for the head chef and owner, who knows he must cook to live. Gracias.
Wonderful anniversary dinner. Loved food, ambiance, and people
Incredible dining experience! Everything from start to finish was fantastic. The New Mexico mole was delicious with halibut and the poblano cream based soup with blue crab was sublime.
From the moment we arrived, I anticipated a special dining experience. The decor was creative and Chef Fernando came over to welcome us. We were seated promptly and were enjoying the artwork when our friendly server Candice presented us with menus followed by a selection of six moles with small warm corn tortillas. The chef structures the entrees around his moles, for which he is famous. They recommend you choose your entree according to your taste in mole. For me it was an easy choice, as the red-beet mole seemed a perfect accompaniment for the duck. We also enjoyed some spectacular appetizers. Candice was extremely knowledgeable about the food and made great recommendations for wine, beer, and tequila. In addition, Chef Fernando came by several more times to ensure we were totally pleased with our dinner. Of all the fantastic places we dined in Santa Fe, this one really stood out. We will definitely return here on our next trip here.
This has become our favorite restaurant in Santa Fe. It is truly an experience from the first delectable bite/sip to the last! The Chef's Signature Soup was the best soup I've ever eaten. Each of the different spices were a burst of flavor on the tongue. The Shrimp Enchiladas were also superb. The bar is cozy and stocked with any beverage you could want or dream of. Our waiter, James Masterson, will take care of you like you are the only ones in the restaurant. It was the finest service we've ever experienced. Pure joy to dine here!!!
Exquisite Cuisine and fabulous Chef
Fantastic service. Can’t wait to go back
The flavors were explosive, extremely delicious
We celebrated our anniversary and they made it special. Outstanding food and experience! Highly recommend.
Family girls weekend.
Innovative food, interesting chef, good service, great environment...loved the art
Candace was our server and she was amazing! The Chef came out and visited with us and he was lovely and gracious. The service was PERFECT. The food is incredible as well. The best overall food experience we have had since the last time we were here last fall! Thank you!
Exceptional dining experience in all respects—service, food and presentation (of course the various moles), wine list, ambiance, friendly welcome. Don’t miss it!
Delicious and creative food and drink. Great service, above and beyond.
I will be recommending to friends. When family is in town this will be a must!
One of the best dining experiences we have had. It was outstanding and memorable.
I would have liked more explanation about the dishes. The bone marrow was excellent though. I had never had that before and didn't know what to expect.
It was fabulous as always. No one should miss this restaurant.
This is a foodie delight. I will be coming back the first chance I get. It is a unique menu but everything he makes is delicious!
While yes, this restaurant is pricey, the food, service and ambiance are well worth it. Had the opportunity to meet Chef Olea, wonderful man with a passion for food and culture! I had an excellent time, thank you!!
Sazon is the best. Best food, best service, best atmosphere.
This place is pretty overrated. Although the hostess and waiter were charming, the food was disappointing and slow to arrive. Not many vegetarian options to go with the mole choices, and no chicken, only duck. The music was a bit too loud. All this and quite expensive. I doubt I'll go back.
Wonderful place to introduce my out of town guests to authentic Mexican food.
Chef Olea never disappoints. The food is unique and delicious. The service is wonderful. I can never eat mole anywhere else again.
Great food and service. You have to have mole...Chef makes them himself. Chef took the time to go table to table to greet guests.
This was an experience! Delicious, unexpected, inexplicable, and delectable.
