Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Our meal was exceptional, as we had ingredients not readily available in most cities, for example, the huitlacoche tacos. The house soup was also superb as well as the assortment of 6 housemade moles. And we especially enjoyed cooking thin slices of meats over a hot stone at the table. Unfortunately this dish is only available in the bar, where the tables are rather small.

One of our favorite bar programs in the US - seriously the best margaritas ever. Fabulous wine list, with some excellent bottles at stunningly accessible prices. Wonderful, warm service. The ambience is fun and eclectic and transports you from your daily routine. Oh and the food - mouth watering. The moles...I wanted all of them. (Luckily I bought a few in jars to take home.) The meat was cooked to perfection, the poblano Sopa De Amor will haunt my dreams and the dessert trio was perfect for someone who couldn't bear to choose. I would have gone back the following night if I could. Already awaiting my next visit!
Considered one of the best restaurants in Santa Fe. Sazon will never disappoint. The food is outstanding. The service is immediate and attentive throughout the dinner. My only concern is the price of wine. They must of had an increase in their wine costs as most reds started at $60 and then climbed from there.

We all enjoyed our meal at Sazon. It is not something in my budget for a monthly visit but it was a wonderful restaurant experience. It is a slow food place which I like some times. Don't be in a rush if you come to Sazon. It is probably Santa Fe's best restaurant right now. You will not leave with a doggie bag. Serving size is adequate but don't equate price with size. The moles were amazing. Each one unique and matched to its protein. Service is unlike any other in SF that I know. We were there for 3 hours and it was our evening's entertainment. Yes, the sopa de amor is amazing. But it is pricey too. So hard to write this review because I liked it so much and would love to come back over and over to try other menu items but I know that is not going to happen. I am a local so it is sad not be able to afford such a wonderful experience again and again. I think that we might go back and sit at the bar and try out some more mezcals and eat some apps and see how that goes. It was my birthday so we felt like splurging. We did. 4 people, 4 drinks, 4 dinners, a salad and a soup and 1 dessert, no doggie bags--over $300 with tip. I do recommend highly but know what you are going for...
Our server Candice was amazing; she gave great recommendations including the sopa de amor which was superb. The chef special was very good as well. We felt like we were given exceptional service for our anniversary. They left a card on our table to wish us a happy anniversary, and each of the staff that came by wished us a happy anniversary. Even the chef came by each table and took a moment to talk with us. Fantastic ambiance. Beautiful presentation. Perfect for a special occasion.

This was the second time that my wife and I have had the pleasure of dining at Sazon. To say that it is a wonderful restaurant would most certainly be an understatement. This is among the finest dining experiences in the US for those who appreciate culinary genius in a most warm and inviting atmosphere. The wait staff is attentive, respectful, helpful and striking. You will likely have a table-side welcome by its chef extraordinaire, Fernando Olea. Sazon offers a lovely wine list especially if you enjoy Spanish wines as we do and then, of course, there is the food! This outing we enjoyed the Sopa de Amor (most appropriately named), the exquisite Azteca (yellow fin crudite), the De la Casa ensalada, the Duck Breast with a very savory mole and the Sea Bass with a beautiful fruit mole. Every bite, from start to finish, was perfection. We cannot recommend this restaurant any higher.
Sazon is a must go destination when visiting Santa Fe. The service and food are some of the best I have ever experienced in my travels around the globe. Going to Sazon is not simply a meal, but a full experience of the senses. Since we discovered Sazon we never miss the chance to go when we are in Santa Fe. I highly recommend you set aside an evening and enjoy it with the amazing individuals who make Sazon one of a kind!
Exceptionally delicious food, beautifully presented. The service was perfect-our server was knowledgeable and friendly and right there at the moment we wanted her. Would highly recommend this restaurant.

Very meticulous and exempary service. The food was outstanding and very creative. The artwork in the restaurant was very impressive and sets such a wonderful ambiance and tone for dining. We had heard of the restaurant thru friends as well as the front desk at our hotel, Las Palomas. They gave it very high reviews and even inquired the next morning as to our experience at the restaurant and were quite pleased with our positive feedback. Other guests heard our conversation and inquired about Sazon and were interested in trying.

Wonderful. My favorite restaurant in Santa Fe.
Our food at Sazon was lovely as usual. Unfortunately, our waitress was not very informative or enthusiastic about the dishes. Our wait staff in past has been much more helpful. The table next to us was filled with 6 young women celebrating a birthday. They were not only obnoxious, but loud and SHRILL. I was surprised that management did not speak to them . Another table in the room was also bothered by the very loud group.
Our second trip to Sazon. As enjoyable as the first. Chef Olea is very creative in his dishes and his choice of spices. Beautiful presentation and scrumptious flavors. The ambience was quiet, relaxed, and the decor was appealing. All the staff were attentive but not intrusive. A pleasure to have Chef Olea at our table as toured the rooms. A most memorable dining experience. We will be back.

We had our company holiday dinner at Sazon and it could not have been better. We had a great table for 8 and the food and service were incredible.
If you try Sazon you absolutely must have the love soup and the shrimp enchiladas. Both my boyfriend and I ordered the pick your mole entree, I had the Tuna he had the pork loin.
Although solid. They couldn’t compare to the chefs signatore soup or enchilada.
This is a beautiful restaurant with killer margaritas.

Outstanding mole choices, outstanding margarita and outstanding service. This was the second time we dined at Sazon, and we were once again more than pleased. Santa Fe has many good restaurant choices, but this one is definitely high on the list. We will be back again.
The chef is very creative and food is beautifully plated. Taste was not all that great. I personally do not care for mole and since the menu is so influenced by them it may have just been a personal taste preference. Service was just OK.’
Have been visiting from Boston and we consider ourselves rather picky in creative restaurant menus, general ambience, and good service. We found Sazon absolutely exceptional in all regards. The chef and owner, Fernando Olea, originally from Mexico City, has created something unique.

This was our 4th dinner at Sazon and we eat out in Santa Fe about 10 times a year. Everything about Sazon makes it our #1 choice in town. The food is creative and delicious. The decor and ambiance are fantastic. The service is superb. Five stars are insufficient for rating this restaurant.

My husband and children are originally from Mexico and we travel there often. In our view, Mexico City has the most amazing food in the country (world?), so we were excited to try Mexico City native Chef Olea's restaurant. What can I say that hasn't already been said? Love the mole sampler; appreciated the top notch service and visits to our table by the Chef; unique cocktails; creative menu; addictive desserts. The Sopa de Amor is in a class by itself -- amazing, one-of-a-kind dish. Comida muy elaborada y exquisita. ¡Gracias Chef!
Exquisite.....all of the dining experience...modern art decor with southwest theme....food....all of it is a work of art....begin bing BBC with complimentary tasting of 8 moles.....you may choose with your entree if you wish...soup salad dessert

The first time I ate at Sazon it was new. I thought the food was good, but that the chef was trying too hard. I later read high praise about its 10-course menu and decided to give it another try after it had been open a while. I made an Open Table reservation well in advance, requesting the 10-course menu for four guests. When I reminded our server, she said we needed to order it in advance. When l told her I had done so, she went to the dining room manager who informed me it was only available at specific times. No one advised me when I made the reservation. He offered me his business card if I ever had problems in the future (I had by then determined there would not be a future).
The food was, like my first visit, good. The server was being shadowed, so I guess she was in training; some staff member moved our wine bucket behind one of us, who had to crane around behind her to access the bottle when no one returned to refill our wine glasses. This was disappointing at Sazon's prices.
There are too many exceptional restaurants in Santa Fe to give Sazon a third try.

We spent the Thanksgiving weekend in Santa Fe looking forward to experiencing the cuisine. Our experience at Sazon was superb. Our waitress patiently explained the uniquely prepared items, answered our questions, made pairing suggestions. It was a surprising delight to experience the multilevel flavors of the signature soup. I considered canceling my main and requesting a second soup to repeat the experience. My dessert was another melange of flavors...avocado ice cream, pine nuts, ginger and jalapeño. I was suspect at first but again I was delighted by this multilevel blend of flavors. A special treat was having the GM and Chef stop at our table to query about our experience. I have not experienced that personal touch and concern for quality since living in Paris. I highly recommend Sazon for a rewarding experience of unique cuisine.
