Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

This is our new favorite restaurant in Santa Fe! We loved tasting the different moles to start so we could educate ourselves about the options and when we paired a spicy one with the lamb and a sweeter one with the pork both combinations were absolutely delicious. Melted in our mouthes. We also enjoyed the tequila flights. Even the juices to cleanse your palate between tequilas were finally spiced and delicious. Our waiter was very professional, amiable and helpful. We we enjoyed had chatting with him about the origin of some of the food and his recommendations were spot on. This is a place where you go not just for the excellent food but for the entire experience. Worth every penny and we will be back. Often

Seriously one of the best meals we’ve ever had... service was impeccable, mole tasting was inspired, first/main courses were perfection. This place is now on our Santa Fe must-do list.
This is such a wonderful, unique restaurant. You start with a sampling of six moles and can pick your favorite to go with your entree. My rack of lamb ($37) was outstanding. My daughter tried the shrimp enchilada ($32) and relished every bite. The margaritas ($14) were made with fresh lime juice and so delicious. Yes the restaurant is pricy but the unique food, service, and atmosphere justify the price!

We had an amazing dinner at Sazon - the food is wonderful - the wait staff was incredible - and the experience was spectacular!!! We have dined at the usual places in Santa Fe (Compound, Gerinomo, etc) since 1994 - Sazon is a most magical place for dining!!!!
We were very excited about having dinner at Sazon, as we had heard a lot of great things about it. We were totally underwhelmed with our experience there. We started out with a $28 flight of tequila and mezcal. After tasting the shots, we found that we didn't like straight shots and asked if they could make two of the shots into margaritas. The margaritas were very good, but they charged us full price for both the tequila flight AND for each of our drinks, even though they used the tequila and mezcal that we had already purchased in the flight. That didn't seem like the right thing to do. The different moles are fabulous, but they rely on the mole alone to carry the entree. My pork loin was literally a piece of barely seasoned, grilled pork laying on some mole, and my husband's duck was the same way. Any artistry was in the mole, but nothing interesting in the way the protein was prepared at all. Also, my pork was raw in the middle, and when the chef came over to check on it, he proceeded to lecture me that trichanosis was no longer a problem in pork, and I shouldn't be worried about it. The inside was not rare, but raw. I know the difference. The service was horrendous. I can't remember the last time we just sat at a table between courses, waiting and waiting and waiting. Since it was our anniversary, our server brought us a complementary dessert which was nice, and asked us how we liked the jalapeno ice cream. When we replied that we didn't really care for it because it was very strong for a dessert, we were lectured on why it actually was good and how the flavors came together in our mouths one after the other. Obviously, I guess she wasn't actually interested in getting a truthful answer. I am sorry to leave a negative review because we were really looking forward to eating at Sazon, but we would very disappointed.
When we go to Santa Fe, we want truly authentic Southwestern cuisine. Chef Fernando Olea will not disappoint. Every dish was layered with flavor and the waitstaff was well trained, informative and delivered in consort. We were all thoroughly delighted with our dining experience.
The food was a glorious experience. The waitress and staff made us feel like we were the only people there. I would highly recommend Sazon for a tantalizing experience, the way a restaurant should be and a chef that is an artist of taste.
On our recent visit to Santa Fe we ate at four five-star rated restaurants. All were good, but Sazon was truly memorable. Sazon presents Mexican haute cuisine that is hard to find outside of Mexican culinary capitals such as Mexico City or Oaxaca. The menu offers many delightful-sounding entrees, but we came for Chef Olea’s famed moles, and we were not disappointed. Seated in one of several tasteful dining rooms under two stunning paintings of Frida Kahlo, we were treated to a six mole sampler, including one which Chef Olea created especially for Santa Fe’s 400th anniversary. We were then able to pair any three of the six sampled moles with our entree. I chose lamb and my wife chose pork. The lamb was very good, but the pork was exceptional. Before our entrees, we enjoyed a lovely appetizer plate consisting of four small tacos (pork belly and fried duck skin) surrounding a delicious tuna tartare crudite.
Chef Olea is not only masterful with mole but also in choosing his serving staff. Our delightful and knowledgable server Candace carefully explained the mole dishes and accompaniments. She also helped us choose an amazingly good Mexican wine from Sazon’s impressive wine list. Her enthusiasm for the food and wine was contagious.
In brief, one should not visit Santa Fe without eating at Sazon. We will return for sure.
This place is amazing! The food was creative and delicious. The mole sampler they bring you allows you to try all the different ones the chef makes and they can then design your meal choice around your favorite. Sweet or spicy, there’s a mole you’ll love. The pork tenderloin was amazing and the duck was as well. I even enjoyed the beet curls with honey and I hate beets! The Diego Rivera cocktail shouldn’t be missed. We will definitely return next time we visit Santa Fe.

Our review focuses on the service. Our waitress, Jessica, was as professional and attentive and friendly as a classy restaurant expects, which means, not too attentive, not too friendly, really just right. We loved her! The bus guy was uber attentive and we didn’t even notice, filling our glasses and picking up and refilling our napkins. The owner chef came to our table TWICE and showed genuine interest in our dining experience. The place is huge. There are lots and lots of employees working hard and quietly in their black attire. Yet they blended in well with the workings of this superb restaurant.
Terrific experience. The food was exceptional. The service was top notch. Never pressed for time. Fun and elegant at the same time. Best restaurant in Santa Fe!

Despite delicious food we will not return. From the moment we were seated, our server seemed to be in a race to see how fast she could turn the table. We did not order before or after dinner drinks, so certainly did not overly linger at the table. That said, service was disruptive and the very aggressive timing detracted from an otherwise delicious tasting dinner. When the bill was presented we did not immediately reach for our credit cards, wanting to finish our conversation. Within a few minutes our server actually came back and asked us if there was a problem. This kind of service ruined what should have been a lovely dining experience.

Without question, this is one of the finest restaurants in Santa Fe. Service is courteous, friendly, eager to ensure diner satisfaction, and superbly efficient. The manager of this restaurant watches and supervises all aspects of food service and does everything possible to ensure a wonderful dining experience. The chef is amazingly creative and appetizers, main courses, desserts, and beverages were all fantastic. Truly one of the best dinning experiences in all of Santa Fe.

The “Degustacíon” at Sazon is one of the best tasting menus we’ve ever experienced, compared against others from restaurants in San Francisco to Boston and even abroad. Chef Fernando Olea perfectly balances tradition and innovation in every dish, the waiter serving our table (Arturo) was both thoroughly knowledgeable about what we were eating and drinking and erudite on various other topics as well (we had an engaging conversation at the end about the Caste War of the Yucatan), while the restaurant décor was classically hip (yet neither fussy nor pretentious). We started with dessert (for good reason), which immediately made clear that Olea is truly clever at revealing flavors (you’ll see). Later, among my favorite dishes were the flautitas (again with a surprise inside), and the sopa de amor was indescribably good. By the end, I think we were overly full to rightly appreciate the lamb smothered in mole poblano but it was incredible too.
Spectacular food, service and ambiance. Fernando and team have the best restaurant in Santa Fe. Everyone I take there walks away stunned with the experience.

The food was amazing. Even better was the attention to detail and great customer service from everyone from the receptionist to the waitress to the manager to Chef Olea. Chef Olea checked to make sure everything was to our liking and thanked us personally for dining at his restaurant as we were leaving. A first-rate restaurant that we will return to many, many times.

This was our first opportunity to dine here. We loved it. The owner/chef was in the dining room greeting people and making sure the food was prepared to their liking. I am not a spicy food fan, and I found many tasty things to eat here. The service was amazing...Order a glass of wine form Mexico. Wonderful...
Wonderful meal. Wait staff cognizant that we are pescatarian and were careful to be sure no animal products were incorporated in our meal. We truly enjoyed the selections of tequila and mezcal along with our fish entrees. Service was attentive. We hope to return next time we travel to Santa Fe.

My wife declared our dinner at Sazon to be one of the best, if not the best, meals she has ever had. The setting was beautiful, and the food and service was superb.
The squash blossoms for the appetizer were nicely prepared, and the duck breasts, prepared with different moles (tomatillo and ancho chile) were perfectly prepared.
Jessica, our primary server, was appropriately attentive and extremely personable. Jerry, her support person, was also very attentive and helpful.

The appetizer was excellent, but both entrees we got were disappointing and very overpriced. My duck breast was cooked perfectly but two small duck pieces with a mole sauce and a small cake of tired, almost flavorless rice and a so-so slaw did not seem to justify a $37 price tag. My wife's halibut was also well cooked but the sides were the same. and at $55 it was especially pricy.
The presentation of the food and service are exceptional. I haven't had this kind of service since I lived in Europe.
My friend loved the crab soup and wanted to kiss the chef. Guess what? The chef came out and she was able to give him a hug.
I am vegan and there weren't many choices. I had a dish without the shrimp that they made vegan. It was delicious but I was charged the same price as with shrimp. I was a bit disappointed that I was given a credit for not having shrimp. I should have had the eggplant which was vegan. A note on the menu states that they accommodate food allergies and requests.
This restaurant serves high quality food. You will LOVE it if you are vegan/vegetarian.

Outstanding service - elegant, efficient, and yet friendly. Wonderful food - flavors of the Yucatan. The 6 moles served with small tortillas, presented at every table as soon as you sit down. are yummy and you can choose which one you would like with your fish or meat. The desserts are unusual and delicious. A great chef.
