Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009.

Awarded the prestigious AAA 4 Diamond Award and ranked fourth in the country for fine dining by Trip Advisor, Chef Olea is honored to have won the 2022 james Beard Award, Best Chef: Southwest.

It was a fine dining experience! Chef O’s menu is creative and unique. The mole sampler and dishes are beyond delicious. The ambience is amazing with beautiful art all around. It has a true Mexico vibe. Our server Xaith was exceptional…..friendly, helpful, and always checking on us without being intrusive. Saxon’s is my favorite restaurant in Santa Fe, and in my top 5 of everywhere I’ve been!

James Beard Award winning Chef Fernando Olea did not disappoint! We have been trying to get reservations for a long item and it was worth the wait. My steak and my wife’s halibut were perfect; loved the mole & Mexican wine pairings too! We will be back!

We thoroughly enjoyed our dinner at Sazón. The chefs soup was the most delicious experience! Nick provided excellent service and was a wonderful guide to the menu. Chef Fernando Olea thoughtfully checked on all of the guests more than once and really made us feel welcome & appreciated. We will be back!

The food was absolutely amazing!! The wait staff were incredibly friendly, attentive, and knowledgeable. The interior was beautiful, particularly the paintings. One of the best dining experience I’ve ever had.

The creativity and flavorful menue was exceptional. The servings were ample and quite tasty incorporating delectable sauces snd a keen mixture of items all in a delicate balance. The wait staff. Was quite marginal. I felt that I was on a tour bus stop and treated like a hungry naive tourist rather than a discerning patron expecting an enjoyable evening out. The waiter immediately began pushing items to increase the bill and was indeed pretentious. The meal was rushed to the point that I felt the next diners were already waiting to be seated at our table. A shame as the food was remarkable and was somewhat tarnished by the "fast food" atmosphere of the wait staff.
