Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Amazing food, beautiful atmosphere. I am going to need the yam recipe on my duck plate so that I can have an amazing Thanksgiving! My husband is asking me to call the chef for the yam recipe or I may be alone for the holidays!!

Extremely disappointing given the hype. There is some kind of weird cult being built around this chef, and from interacting with him he has the ego to match. But the reputation and ego level did not match the actual experience.

Service: We were off on the wrong track from the first interaction. Via open table we had been given the choice of indoor or outdoor table and booked indoor. It was chilly and we did not bring really warm clothes. At the reception the gentleman there was grumpy and claimed that they had no information on whether open table booked a table as indoor or outdoor and we should have left a message in the comments section. All they had was outdoor. Basically a total bait and switch, though to be fair Open Table may be partly at fault.

The outdoor patio is weird and clearly a cobbled together experience for COVID -- for example, they have no heaters which is astounding given even the smallest cafes in Santa Fe have heaters for outdoor dining. So I froze. On the plus side, our waitress was nice and did a pretty good job handling the fact I was grumpy about freezing outdoors.

Food: We must have eaten the wrong foods because nothing we had was particularly strong. The chef is known for his mole's but they all tasted meh to us, and we tried a variety of dishes and found them all to be disappointing. I would eat 50 times at Geronimo and maybe 20 at SantaCafe before I came back here.

Other: They insisted that they would not give us a paper menu, as if there are zillions of COVID cases from looking at a disposable paper menu. My phone battery was dead so I had to share my wife's phone to even see the menu

From Chef Olea's creativity and warmth through our server, Candace's patience and recommendations, we had a great time and felt safe with their level of rigour and precautions dining on their patio during COVID. (Try the soup!)

One of the overall Best dining experiences in Santa Fe in the 16 years we've lived here. Service is of a High standard that is rarely seen in U.S. anymore! Every course the food and presentations were Exceptional! Ambiance was also Fantastic, Great Art collection. Chef came out to check on us several times, and even offered us tour after dinner. Very warm and hospitable. Overall we were Very Impressed! Cant wait to return!

Outstanding meal. Tried to get in last year but restaurant was closed for some reason. This meal was a "dining experience" and showed the talents of the entire restaurant staff down to the smallest detail. The decor is simply but very elegant. The serving staff did a great job with a lot of attention to detail. The explanations of the menu items were very clear. This is a very innovative menu and I would encourage anyone to "take a chance" on some of the menu choices. Hopefully, your experience will be as good as mine! I particularly liked the presentation of small samples of the various Mole choices at the beginning of the meal. This helped a lot in making some menu choices. The chef's soup special is "different" but in a very good way. Highly recommended. For the entree, I choice the duck breast special. Although good, this was my one problem with the dinner. My preference for duck breast is seared with skin on. This did not have the skin and I felt that this affected the overall texture of the duck. Again, this is personal preference. The accompaniments to this entree were excellent. The chef's dessert special is in the same category. It is outstanding but I'm not going to spoil the surprise for anyone with a description. However, I will have it again next trip. Overall, an exceptional meal. I will visit again on the next trip to Santa Fe!

It was one of those meals and evenings I’ll remember for a long time! Outdoor patio was comfortable and spacious. Service was impeccable and the food unique and so very delicious! Wine suggestions were perfect! It is not inexpensive but if you are looking for a true fine dining experience, this is it and I would highly recommend Sazon! Can’t wait to go back!

Every morsel was scrumptious. The squash blossom appetizer was wonderful, the sops de amor was unbelievable. The duck with mole poblano was awesome and the lamb with sweet mole was delicious. Also split 2 desserts. The chocolate brownie and the chefs special both were great. Looking forward to our next visit to Santa Fe!

Perhaps the best meal to be had in Santa Fe, which is high praise because Santa Fe has a number of really great places to dine (too many even to give as examples because of my fear of leaving someone great out. I highly recommend Sazon!

Sazon is a great experience and, I think, without Covis-19, which creates some additional operational hick-ups, I think the experience would be exceptional. We had a bottle of wine, Duckhorn 2016 Merlot, which was very good. Add another two or three years of aging and I think it would have been great but also probably twice the price. We then shared a salad and appetizer both of which were very good. I am never a huge fan of salads so, in my opinion, it was better than average. My wife, who likes salads, thought it was very good. My wife then had the Leg of Lamb and I had a pork tenderloin. Both of these were excellent and used different mole sauces for which the restaurant is famous. For desert, we shared a peach cobbler, which was among the best we have ever tasted. Now that in door dining is permitted, we ate indoors, which we were told was the exception, and had the main dining room to ourselves. We truly enjoyed it and all the great artwork presented therein. Finally, the staff was attentive and very professional. Sazon is a treat to be experienced but do be ready for the final check. It is not the most expensive of the Santa Fe restaurants but it is expensive.

We took our son to the restaurant for his birthday. This was the most wonderful dining experience. Every course was a work of art, and the layers of flavors were absolutely amazing. It was a beautiful experience.

Bravo! Chief Olea has created a palette of sensual delight; aroma, taste, and color. Beginning with a slate of mole tastings that vary and one can become a participant in the flavor of one's meal. The course selection increases curiosity and a challenge to try. Sea Bass superb with Rojo Mole. Soup with a cloud floating through heat of spices and coolness of depth. Service and attention to each patron shows the excellence of this fine restaurant. Thank you Chief Fernando for the gift of awareness and the pleasure of a wonderful evening.

What an incredible experience! A wonderful wonderful meal and experience. Our server was so professional and informational. It was a rainy night in Santa Fe and they managed to seat us out of the rain but still outside -- during COVID time. They were very careful about social distancing. It was one of the best meals I've ever had in my life. Seriously! Thank you for such a lovely evening!
