Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

I took my family here on their first trip to Santa Fe. The ambiance was very nice and very Santa Fe-y. The food was delicious. I had the duck breast with the New Mexico mole and it was amazing. And I don't usually like mole! I enjoyed how the chef chose your sides for you based on which mole and meat you chose. We also tried the grasshopper appetizer in an attempt to be adventurous- it was awesome! Very nice wine and tequila selection. The vibe of the whole place is very Mexican/New Mexican. Casual smart dress okay. The chef came by our table to ask how the food was while wearing his signature cowboy hat, which is always a nice touch! I marked the service off a bit because we had to pour our own wine a couple times (which I don't usually have to do at restaurants of this caliber) but it wasn't a big deal! They were all very nice. Also, it's in a great location, as it is a very short walk to Santa Fe Plaza. Overall, this is a must try if visiting Santa Fe, and I look forward to coming back to try the chef's tasting menu.

A fantastic dining experience! The sopa de amor was the best soup I have ever had; the moles were excellent, and the service and ambience outstanding.

Very disappointing. This was the 1st meal I can ever remember that my husband couldn’t even eat. My meal was just ok. Very overpriced for the quality.

The food is excellent. We had a trainee server. She was sweet but fumbled the order. Took us time to realize that what we were eating is not what we ordered. We did not complain. Wine prices are outrageous.

Sazon is a really lovely restaurant. The atmosphere is outstanding, the service is attentive and the space is very comfortable for a fine dining experience. Definitely would return if I'm in Santa Fe again!

We capped off our 4 night stay in Santa Fe with dinner at Sazon. We had two servers, one in training and one guiding. We both started off with the Sopa D'amore. We both loved this! It was delicious and was a great way to start our meal. We shared the Tuna special and we loved that too! I would love to come back here the next time we are in Santa Fe. The chef checked in on us twice. We loved this too! You were quickly made to feel as if you were somewhere special having a special meal and it was.

This is the best restaurant in Santa Fe. It's where we take guests who really enjoy good food. Service is smooth, and the tequila/mezcal selection is wide and deep.

My brother and I were in Santa Fe for an exhibition opening at the International Museum of Folk Art. We wanted a unique dining experience that blended Santa Fe tradition, local ingredients and culinary creativity and we got it with Chef Fernando. His mole sauces are composed of dozens of unique ingredients - some showcased in a large scale painting on the dining room wall! Chef Fernando walked around the dining room to meet the diners, which was wonderful and our server, Carla, enhanced our dining experience by explaining all the offerings on the menu. We will definitely be back next time we are in Santa Fe!

Went for my partner’s birthday which was never acknowledged. Service was friendly but robotic. Food was good although for the mains, aside from the moles, the meal was plain and uninspired. Ran out of the most popular dessert despite our 7pm reservation. Cocktails that were good but nothing unique.

Our time at Sazon was entertaining. The hostess had a charming welcome for us, quick seating, and wee stool for my large travel purse. (That was very thoughtful, and unique.) The selections on the menu were often spicy, diverse, complex, and widely varied; fine dining choices throughout. I loved our waitress who was careful to answer our questions and very responsive to concerns-generally. The food plating on everything was gloriously beautiful with around 8 kinds of mole tasting choices on a slate palate. Shaved beets, fried rice sticks, less ‘wow’ on taste than what we anticipated. It was a very beautiful place to dine, however.

Sazon is a beautiful restaurant full of striking art work. The food is very well prepared and presented. My spouse had a duck dish prepared like an enchilada dressed with a delicious mole. He raved about the dish. My tuna was very well prepared, too. Nicely rare with an Asian style spicy sauce. Grilled calamari appetizer and dessert were also very good. The service lives up to the beauty of the restaurant and the food. But, it's not a bargain restaurant. The prices reflect the ambiance, food and service.

Depending on the translation, Sazon means flavor, seasoning, and maturity. Like a true artist, Chef Olea brings all of this and more!

We celebrated our 20th Anniversary in the cozy, traditional Santa Fe setting, surrounded by colorful works of Mexican / Spanish influenced art.

After making our way through some of the vast selection of tequilas, we enjoyed delicious farm to table salads, and likely the most flavorful tenderloin filet I have ever experienced. Not only are the spice and accompaniments exquisite, but the cut of meat itself is definitely chosen by a hand of experience and maturity.

Unlike traditional Mexican desserts, Sazon produces beautifully light and sweet treats to round out an amazing meal.

Many thanks to manager and Sommelier, Francisco, and his team for creating such a memorable experience. Make reservations in advance - this place is always booked, and for good reason.

Mole was excellent, other dishes fell a bit short. (Fried squash blossoms were overwhelmed with oil and cheese and sugary sauce. Tuna crudo was lost in the flavor of chile sauce.) Several times I overheard the waitstaff call a dish a "masterpiece" which is a flag for me. Very good list of agave spirits.

While Santa Fe is full of fabulous fine dining experiences, Sazón provides a Mexico City evening, graced by engaging waitstaff, scintillating cocktails, and creative, palate-energizing tastes from a perfectly grilled octopus bedded in crushed tomatoes and capers, to nuanced grilled meat or fish with molés specifically created to provide maximum flavor to the protein. We didn’t have room for dessert but witnessed a deleted frothy berry dessert and a smoked ice cream being enjoyed by a neighboring table. This is a unique experience to northern New Mexico, and not to be missed if you are a foodie!
