SALT - Boulder
SALT never disappoints! I would come here just for the Tuscan Bean soup, but everything else we ordered was SO delicious and presented beautifully. Highly recommended!
The food is completely meh. We've been twice. Four dishes... unremarkable at best.
Great Bourbon selection,but not so great on Vodka. No Grey Goose or Tito’s and their dirty martini was crystal clear. The food was trendy and there were some interesting choices, however the execution was uneven. Our service was friendly but poorly trained. Drink orders were mixed up and our waitress couldn’t answer questions about the menu. This place has potential but it is still a work in progress.
Food was good with a nice variety to satisfy the various dietary needs of our group. Atmosphere was pleasant and we definitely a place we will return.
Mother’s Day spent in Boulder was spent shopping, walking the mall, and people watching. We had reservations at Salt for an early dinner, 5 pm, so our dinner would not be rushed. Enjoyed a cocktail outside with no problems, asked to have an insid table as the weather was turning colder. Our young waitress met us and was pleasant, upon explaining our choices, she abruptly turned and walked away, needing to attend another table, so my wife and I made our selections on our own. Bottle of wine, mussels, and we had a start to our dinner. Main course was presented, and found my rib-eye, very cold, and what a horrible cut of meat, full of fat and gristle! I asked our waitres to return my plate, no problem, and after 10 minutes, another person( waiter) returned and apologized, giving me a $28.60 credit towards our bill. My wife and I thought this was a drop in the bucket after a cold steak, and terrible cut of beef, and spending $ 70.00 on a bottle of wine. Such a mark up on a $23.00 bottle of wine, needless to say, we won’t be back for dinner! Maybe a cocktail which was the best part of our experience.

Great Mother’s Day Dinner!
The restaurant is nice and the staff were all very nice. However, my overall experience just can’t be ranked that high. We arrived for our reservation on time, but they didn’t have a table for us until 15 minutes late. Then, as we were walked through the place and past the nicely sunny patio, we made the turn for the basement. Clean, but dark and dungeonous and for some reason smelled like Bengay. Both my wife and I had the prime rib and eggs dish. The prime rib was tough and dry however my son enjoyed his burger. It just wasn’t the airy Pearl street Mothers day experience I had hoped for. It certainly wasn’t worth the $35 per person tab.
The cocktails were some of the best I have ever had but the food was not comparable. Quite expensive for great cocktails and fair food. Very nice vibe and ambience. We ate at the sister restaurant,Wild Standard, the night before and had a fantastic meal.

Lucky enough to get a reservation for CU graduation night. It was a busy night but service here was impeccable. Great selection of hand-crafted cocktails, wines, beer and spirits. We had the charcuterie board, and seriously could not get enough of the pickled mustard seeds! My son had the pot roast and I had the gnocchi... both were delicious and the gnocchi were handmade. Our dinners were a bit late coming to the table because of how busy the restaurant was, so the server brought us cups of soup to tide us over--a really nice gesture.
Delicious food, excellent friendly service. My son's medium steak was very very rare, but they happily corrected it and served it to him quickly, so he didn't wait long. We wish they'd bring back the Teeny Tiny Treat as a dessert option. It's been a family favorite for years!

SALT is consistently a great restaurant in the town with many great restaurants. Great with veggies!
It was graduation weekend and we had a reservation. When we arrived, we were seated in the basement. We asked to be seated on the main floor and the manager said they were fully committed, although all the tables were empty as it was 11:30am. Did I mention we had a reservation?! He sat us at a table next to the door when it was 30 degrees outside. Luckily, the food and service was good.

Salt had something for everyone including vegetarians and carnivores. The staff were tolerant of a slight delay in our arrival because of a presentation at CU. The food was well presented, arrived in a timely fashion, and everyone enjoyed their selections. We were too stuffed to try dessert. The wine list is very interesting and had good selections for oenophiles.
Wonderful food (the peppercorn steak was incredible) and great ambience. Service was spot on, our water glasses never sat empty.
Food was very good and a good variety of dishes. Great ambiance and bar too. Had a mini issue and the manager Mel took take of it. He actually went way above and beyond to correct our problem. He had amazing customer service and knows his food stuff. Coming back.
The food and service was great. We celebrated my son's 21st Birthday and we had a large table and some of the guests were late. The staff was understanding and fun!
We visit Boulder about 3 times a year and try to go to SALT at least once or twice. This time was a bit underwhelming. Beans in the mussels were undercooked, kale salad was overdressed and the fries were way too salty. My son did enjoy the braised pot roast and my manhattan was excellent! We will try you again but please share with the chef. Thanks.
Four of four dinners were below average. Lamb chops over cooked and leathery, gnocchi mushy and large globs of potatoes, plant “cassoulet” nearly raw and tasteless and the burger appeared boiled and gray. Service was very good. We all left most of our dinner untouched. Much worse than airplane food. We won’t be returning.

Initially disappointed that the Hostess gave our table away because we were 5 minutes late, so they sat us as in front of the kitchen to have drinks before a table opened up. The server did a great job still making us enjoy the restaurant and moved us into a table before our main course showed up. Overall, the food was good.
It was my birthday and it was a wonderful way to celebrate. We had never been there before and were pleasantly surprised by how good the food was. I would especially recommend the Brussel sprout beet humus appetizer and the chocolate carmel SALT torte.
At our recent visit to Salt, with my spouse and teenaged daughter, we had a perplexing time. We had not been there in a while, but always enjoyed it in the past. We were seated promptly at a fabulous table up front by the window overlooking Pearl Street. While pleasant, the server was inattentive and possibly spread too thin so we were overlooked and ordering was slower than it should have been. While our reservation was early (6:45) they had run out of pasta for a dish and I substituted gnocchi - which was gnarly, too large and incorrectly cooked. My spouse's wagyu beef was ordered medium and came out mooing (rare or a little less than rare), but was unable to send it back, due to in-attentive server. My daughter had gnocchi as well, different sauce - it had the same problem as mine. The bread was fabulous - though minimal, and we had to ask for more. The dessert was something I would return to the restaurant to have. I would wholly recommend the Romero et Julietta cocktail and the Bookcliff SALT White Blend wine - they were exceptional. Overall, we had a lovely evening despite the shortcomings, but wonder if they have lost their edge?
The hostess was abominable. Ridiculously precious. The service, once we got it was slow. The food was uneven. The service attitude ruined the experience.
When we arrived our table was not ready- we were told to wait outside (even though a table was empty). Then when we were seated our waiter forgot to put in our main course order. (It took over 20 minutes after our appetizers for the food to arrive. The food came soon after I asked the waiter when we might expect our main course). The food was good, but service was poor and slow. Table next to ours found something in their mussels which had to be sent back and re-made.
We dined at SALT on Saturday night per a friend who has house in Boulder's recommendation. We did have a reservation. Food was very average. Service very poor. Not sure what was going on although it took a very long time to get our food, and our waiter was very inattentive. Very disappointed in our whole experience at SALT.
The next day on our drive home (different state) we were left with few choices to stop at and eat when on the road. We ended up at a Burger King, where my son had never had a burger. Stopped because we had heard they had a veggie burger and I am a vegetarian. Anyhow, he said that the burger at Burger King was much better than the burger he had at SALT.
We asked to be seated upstairs in the main restaurant but were seated downstairs due to some mechanical instructions that the hostess could not seem to override. Downstairs is dingy, like your grandmother's basement. If ever Salt tries to seat me there again, I will simply leave. This was my second time down there, and it sucked both times.
We enjoyed our starters, but we were both disappointed in our entrees. I have often enjoyed Salt in the past, but I will need some time to pass before venturing back into this place. There are too many consistently good restaurants in Boulder for me to consider going back anytime soon.
We had a fantastic meal and service. The ambiance and decor are fantastic, historical but industrial with a splash of whimsy. Loved the open Kitchen, service was attentive and helpful. Our waiter made great reco’s on menu and wine. Leave room for desert!

Great food and service! They were able to seat us earlier than our reservation so that was really nice. Great wine list. From the busman to the hostess to the bar staff everything was great! Our waitress was awesome. We will go back soon
Great food. The menu constantly changes and I like the new additions to the menu based on the different seasons. Great ambiance and a great Boulder experience. The service was top notch. I really recommend this restaurant.
Lunch today was to be a gathering of four friends who’ve not seen each other for a long time.
our waiter was just completely clueless and kept us waiting for over 20 minutes at two different times to order drinks and then to order lunch.
The food was below mediocre, something I would’ve expected to have been served in Georgetown or Idaho Springs at one of those roadside diner’s.
Very very discouraging experience, I will not ever eat there again.... and I would not at all recommend it.
Poor service, bad food, slow slow slow service kitchen wise as well.
Here’s a short list of things I usually hate about brunches which SALT did NOT have
*crowds and crowds of angry people waiting
*servers who seem to hate their life
*tables crammed in so close together you can hear other diners conversations
SALT had none of that of all that, the service was great and remarkable ketchup!
Restaurant was not open at the time our reservation was made for. While trying to open the door, before realizing this, the bartender condescendingly tapped his watch from the other side of the restaurant in an attempt to signal they weren’t open. I’ve always loved this place but this experience left something to be be desired.
A most enjoyable evening: The food was quite good, the service great, and for SALT, it really wasn't too noisy. It's a fun place to go for dinner.
Every time I come to Boulder for a concert, I always eat here! They have such great food, with so many inventive choices and flavors. I love the atmosphere, but was bummed that we were seated, although we had reservations, downstairs with no natural light, right under a speaker that we asked twice before it was turned down to an acceptable level. However, when the food came, all was forgiven! Great cocktails too, btw.
