We missed having Salt open for several months. It was a treat to be back. The menu changes frequently based on what fresh ingredients are available. The menu is not extensive, but there is something for anyone. Service was attentive. Food was delicious!
My wife and I had a delicious meal with a very nice and attentive server. It is a place I’d return to but I think they’d benefit from a few added choices on the menu.
Would have been nicer if there was some space between the edge of the restaurant outdoor area and our table - felt a little like we were sitting in the middle of Pearl Street foot traffic.
Inexperienced staff, we asked questions about types of cheese due to food intolerance and the answers were not only incorrect but they changed the order we placed according to what they had available without consulting us.
Food was incredibly bland. We had the power salad, leek flatbread, gnocchi bolognese and vegetable cassoulet. Everything was unseasoned. We had to ask for salt and pepper. No herbs present in anything. This trip was us giving Salt another chance after other underwhelming experiences in the past and this was by far our most disappointing visit yet.
Outdoor area was set up nice and server was polite and attentive. It was only the food that makes us not wanting to return here again.
Would not go back. All college wait staff very inexperienced food was average at best
I and our friend shared Cacciucco, a seafood stew that had a tomato base, a bit of spice and was excellent. It came with crispy toasts to mop up the tasty sauce. My wife had the special of the day, Shrimp with Polenta and slices of sausage. She removed the sausage to eat later and enjoyed her shrimp with a marvelous basil ailoi sauce. Also provided was a romesco sauce for those who like a little more spice. And the dish came with crisp tender snap peas as well. A truly delectable entree. Our friend and I drank a delicious local IPA draft beer and my wife had a nice dry prosecco. Dessert was salted caramel chocolate pie as well as chocolate mousse cake. Both scrumptious. Our waitress, Aubrey, was delightful and very accommodating and thoughtful. The rest of the staff were also top notch. We ate outside on Pearl St. in a lovely June evening, and though there was some noise, it was not too intrusive, just lively. SALT is a wonderful restaurant and we look forward to going back to try some of their other dishes.

Dinner was delicious but our service was quite slow. Extra drinks that were ordered right when we got the meal didn't come until after the majority of us had finished our meals. Our waiter didn't check in on us until some of us had already eaten our full meal, and when my friend requested some soft bread to go with her dinner that didn't come out for at least another 20 minutes after that. Outside of that, the food was delicious, just a little disappointed with the service times and attention.

Ambiance was lacking - it was strangely quiet during dinner, with barely audible elevator music in the background. Even the staff was virtually silent (bartenders didn't mutter a word to each other), which made for an overall cold vibe. Food was mediocre - totally edible but nothing to write home about. Service was friendly and attentive. Overall, nothing special, wouldn't return.

I love this place. They are always out of something though which is a bit annoying. We went early for dinner and they were already out of 3 of the things we wanted.
Charming place with a good wait staff. Pretty solid dishes not trying to be ultra creative but with the right focus on quality, which is what they require in Boulder.
The wait staff brought us the wrong food and when our original order came, it was cold. This place is considered more on the luxury dining end for Boulder so I was disappointed to have food that I could’ve made at home.
SALT is always a memorable dining experience. The addition of the plexiglas dividers makes each table feel private…but I did miss looking around the historic building with its hammered ceilings and brick walls. The presentation of the food is always delightful- certainly nothing I do at home. I will be sure to be back soon.

We love Salt. Have been there many times. This visit wasn’t good. The menu was very limited, no fish or chicken. All of their great sides were not on the menu. I had the special filet skewer and risotto that was excellent. Others had the special lamb but both dishes were full of fat. The service was horrible. We weren’t even half way through our salads and the entrees were “handed” to us. Kind of disappointing. Hopefully they can get their act together.
They were very professional and the food was amazing!
Food was fine. My wife had the lamb “stew” and loved it. I had Tom’s burger which was fine but nothing special. Caesar salad was way too salty. But real issue was service — kitchen was incredibly slow. Took one hour and fifteen minutes to get our food, with mains and salads coming at once. At the prices charged, they need to do better.

Very pleased SALT has reopened for Spring. Still an outstanding site to dine especially on special occasions. Best charcuterie in Boulder although they were out of the chicken pate and our reservation was at 5:45PM. My Old Fashioned was perfect and a complete steal at $10; maybe the best cocktail deal in town. For entrees we had the Gnocchi Bolognese and the special Wagyu Tenderloin. Both outstanding choices.
Looks like SALT had waitstaff turnover during the winter break but what appeared to be a new group was extremely friendly, well trained and attentive.
