About Sage - Aria
Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.
The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.
Ever raising the bar, Sage combines a brilliant culinary team, an ideal location near ARIA's main entrance.

Sage - Aria Ratings and Reviews
Celebrated my birthday st Sage. The Somalia was very helpful with choosing the right wine. Surprisingly she remembered us our first visit was last January. Had the foo gras brûlée it should be illegal ! Had the scallops my husband had the venison. Both dishes were wonderful. Great food great service this is what Vegas is all about
Ordered wagyu steak cooked medium. Steak came almost well done. My server noticed it and promptly apologized and offered to replace it. The replacement was cooked exactly the same way as the first. My alert server noticed it again and asked if I wanted to have a new one. At that point I've already eaten some and declined it. She then told me that it'll be taken out of my bill without me having to say a thing. Good customer service but I'm baffled with why the kitchen can't seem get it right.
The food was outstanding.
(My spouse had the vegan tasting menu and I had the regular tasting menu)
The drinks, beer and wine were amazing.
Our primary waiter, John, was very attentive, made great recommendations and was super patient while we made up our minds on what we were going to eat and drink for the evening. The support waiters and bussers were also very responsive to water and other needs.
My only critique of the service is this:
The person who brought out the bread didn't know if the any of the selections were Vegan. Which is fine, but she didn't bother to go back to the kitchen and ask. A simple, "I don't know, let me go find out", would have solved that issue. Instead, we got, "I think it's Vegan, but I don't know."
This same person when asked if they had any vegan options instead of the dairy butter responded with, "I don't think so."
1. I shouldn't have to ask a waiter to go back to the kitchen and find out what's in the food. They should know that's what they're supposed to do if they're not sure what's in the food.
2. I shouldn't need to tell a waiter that there are plenty of options for vegans to put on bread...olive oil is always an easy option.
For +200 per person, one would assume five star service. This is what drove the lower score in my review.
Sage had live music that evening, which was a nice touch. Maybe a little too loud for an across the table conversation, but live music is always fun. In general, I feel most restaurants in vegas are way too loud. But at least Sage didn't have house music turned up to 11 playing all evening.
Again, the drinks and food were outstanding. Our primary waiter was great. I will definitely go back.
I was very underwhelmed with the food and overwhelmed by the price. Their menu was very limited, and the portions were extremely small. My husband had the scallops and I had the short ribs. We split the meals together. The flavoring of the scallops just didn’t seem right, and they were on the verge of under cooked. The short ribs were good but not great. The sauce/gravy was very rich but not well seasoned. The restaurant was way too dark. I understand having lighting for effect, but it should tell you that it’s too dark when multiple guests at multiple tables are pulling out their cell phones to use the light just to read the menu. After eating at other “fine dining” restaurants in Las Vegas, I was very disappointed with my experience and didn’t order drinks, appetizers or dessert because I just wanted to eat and get out of there.
Nice looking place, but was bad to terrible. I had scallops and they tasted old as can be very fishy. My wife had the sea bass and it was terrible, she complained and they did nothing. I ordered a glass or red wine, it was about $40.00 and it was ice cold, so it took for ever for it to breath. I tried heating it with the candle at the table hoping they would get the hint but they didn't. Once it warmed it was just OK. My wife ordered a glass of Champagne and it was cheap stuff and again 40 dollars for the tiny glass.
Overall the tasting menu is great except for the main dish, the teriyaki wagu. The steak it self is very tender and juicy but way too sweet! It’s too bad because actually I love other courses. The salad has so complex and harmony flavor that it’s so well balanced. The scallops are cooked to perfection and incredibly delicious. My girlfriend ordered sea bass which was absolutely amazing. Delicately cooked and seasoned. The rice was beautifully done. The sea bass is complete with the rice and Other garnish to become an incredible combination. Definitely recommend the fish. However not recommend the tasting menu.
Was in Las Vegas for 2 nights with my 16 year old son. Wanted to treat him to a nice fine dining experience. Googled different restaurants inside Aria and decided on Sage. Was very pleased!! Excellent food, fantastic service, and low-key and calming amtmospere. Just what I wanted.
Will go back for sure!!
Sage is a lovely upscale setting with interesting decor. We visited December 26, the evening we arrived in town and we had no problem getting a reservation or moving to a later time due to travel delays. We chose the seasonal tasting menu and every course was outstanding. Colton, the sommelier was gracious, friendly and knowledgeable. The pairings with the tasting menu were to my liking. A highly recommended dining experience.
It is a special family dinner while we are vacation at Vegas. The restaurant is setting at the beautiful Aria casino. We picked the chief’s tasting menu with 4 courses. Each dish is super with unique combinations of ingredients, well presented to us. Really glad we did this as a family together.
Vegetarians not always welcome. Four of our five meals were delicious and beautifully plated. We were happy to see a veg tasting menu, but one of our party didn't like the main dish. The fifth was a disappointment - we had asked for vegetarian pasta, and it was brought out without sauce. Plain noodles with a few vegetables. We were looking forward to the dinner because we are huge fans of Shawn McClain's Green Zebra in Chicago, and we were told the Sage would be happy to accommodate our three vegetarians. After we sat down, it was as if it was too much trouble to accommodate our needs. Next time we will go somewhere else.
We dine at Sage 2-3 times per year whenever we are in Las Vegas. We has another great meal this past week. The sweetbreads are very well prepared and are a highlight for each visit. The Duroc pork entrée was the single best dish I've had all year! The foie gras crème brulee is a fun dish that we have learned to order as a dessert - it is too rich as an appetizer. This preparation was not as good as some we've had in the past, but the workmanship was still evident. Service is friendly and attentive, and we were recognized as long-time customers. The new sommelier did a great job with wine pairings. By Vegas standards, prices are reasonable for the quality and service provided.
We had a great experience at Sage. The food is expensive for smaller portions but it is what we expected. We came on a Saturday evening and the two women at the door were exceptionally friendly. Even thought we had to wait a few minutes we understood and they made sure our wait was pleasant. This started our experience well. Our waiter was kind and made great suggestions. We did the special tasting menu and loved it. We will definitely be returning.
We arrived for our 8:15 PM reservation on time, and were told by the hostesses that there would be a 10 minute wait. We entered the bar and ordered 2 excellent cocktails. 10 minutes became 20, and eventually 30. Although we were in their line of sight, they never updated us about the delay.
After a half hour wait, we decided that we did not want to reward the restaurant for their poor front-of-house service. We paid for our drinks in the bar and left. They didn’t make any effort to get us to stay.
Maybe it was just an off night, but the first impression we got of Sage was a very poor one.
Came to Sage in Aria for Thanksgiving dinner with my family. We had Syrah wine which was perfect with our dinner. We each ordered the Thanksgiving Dinner special which was a 3 course meal. Starting with soup, then the main course and finishing with dessert. The soup was absolutely delicious. It had chunks of foie gras in it. The main course was circular slices of turkey - both white and dark meat, vegetables and a cube shaped stuffing. The only thing lacking a was cranberry sauce to balance the meal. The dessert was a pomegranate sorbet and pumpkin pie slice with bits of caramel. We had cappuccinos with our dessert which was marvelous.
This was our group's second time at Sage. Our waiter was not very attentive, and items did not arrive simultaneously (i.e 5 of 8 cocktails arrived at the same time, and 10 minutes later, the other 3).
Food and presentation was excellent, but service very disappointing.
