About Sage - Aria
Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.
The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.
Ever raising the bar, Sage combines a brilliant culinary team, an ideal location near ARIA's main entrance.

Sage - Aria Ratings and Reviews
We arrived for our 8:15 PM reservation on time, and were told by the hostesses that there would be a 10 minute wait. We entered the bar and ordered 2 excellent cocktails. 10 minutes became 20, and eventually 30. Although we were in their line of sight, they never updated us about the delay.
After a half hour wait, we decided that we did not want to reward the restaurant for their poor front-of-house service. We paid for our drinks in the bar and left. They didn’t make any effort to get us to stay.
Maybe it was just an off night, but the first impression we got of Sage was a very poor one.
Came to Sage in Aria for Thanksgiving dinner with my family. We had Syrah wine which was perfect with our dinner. We each ordered the Thanksgiving Dinner special which was a 3 course meal. Starting with soup, then the main course and finishing with dessert. The soup was absolutely delicious. It had chunks of foie gras in it. The main course was circular slices of turkey - both white and dark meat, vegetables and a cube shaped stuffing. The only thing lacking a was cranberry sauce to balance the meal. The dessert was a pomegranate sorbet and pumpkin pie slice with bits of caramel. We had cappuccinos with our dessert which was marvelous.
This was our group's second time at Sage. Our waiter was not very attentive, and items did not arrive simultaneously (i.e 5 of 8 cocktails arrived at the same time, and 10 minutes later, the other 3).
Food and presentation was excellent, but service very disappointing.
It's true that as Las Vegas locals we are pretty spoiled when it comes to restaurants. Las Vegas has amazing selection. That's why Sage left just a "so-so" impression on us. The best thing was the ambiance and decor - both very nice. We liked the little band playing in the bar area. The food was mediocre at best - most entrees were over salted. Service was also lukewarm. Our waitress behaves as if completeing an unpleasant chore. We tired to cheer her up by ordering expensive wine, but even that failed to put even a resemblance of smile in her face. Oh well! Overall, we wouldn't likely to return to Safe.
Sage was definitely a splurge but it was well worth it. We both had the Wagyu filet which was perfection - oysters to start were fresh and lovely and the Veuve bubbly was the perfect beverage to accompany a lovely lovely meal. Service was top notch - attentive but absolutely not intrusive. An overall lovely experience - highly recommend!
Disappointing at Best. The atmosphere feels like a dark Casino. So many fine dining restaurants in Las Vegas create a unique and special ambiance, not this one. The staff was friendly, but not at all trained for fine dining. The food was expensive, but average; not bad, but not worth the price. There are too many "good options" to revisit this restaurant.
Sage is consistently one of the best dining experiences in Las Vegas. The food is always perfect and the wine list is excellent. The wait staff is one of the best in the country and it is always a relaxing meal. Don't miss the foie gras candy bar for dessert or the Absinthe.
Ordered the Tasting Menu. Thoughtful, creative, inspiring, well-executed food. Each course was beautifully plated and composed. Components of each dishes were eloquent and used the diners palette knowledgeably. Sweet, Sour, Bitter, Salty and Umami were used with care and attention and executed beautifully. Sage is this foodie's Happy Place.
Great place for dinner! They had an excellent singer/pianist performing . She was AMAZING!! She played an assortment of music from modern upbeat piano versions to classic songs. Definitely not boring pieces.
It was a Saturday night. Not a loud rowdy scene, but rather an enjoyable comfortable noise level. The food and service was EXCELLENT :) Will definitely come back next time I'm in Las Vegas!
Original reservation for 7pm was cancelled for no reason. Rescheduled for 9pm and when 9 arrived was told by both hostesses it would be another 15-20 minutes. Both hostesses were rude and non carrying in both instances (original cancellation and 2nd delay). This was an important business dinner and have never been treated so poorly by a hostess. Only saving grace was the manager on duty was very apologetic.
I had been to Sage twice, once with my girlfriends when we had girls night out and second time took my husband there for his 42 birthday just two of us. The service was excellent, the drink was great and the foods were amazing. we love everything about the restaurant and will come back again 👍🏻👍🏻👍🏻
