The USDA has set the standard for beef quality since 1927, and AJ's takes this commitment seriously, featuring only USDA Prime cuts -representing 2% of all graded beef. Every steak is expertly seasoned and smoked, then slowly cooked to a perfect rare before being seared on an 800-degree wood-fired grill. To finish, we lavish our steaks with house-made compound beef tallow.
