Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements. Situated at 17 Merchant Street, Merchants Restaurant is proud to use fresh, locally sourced produce in its dishes. Historic Edinburgh Castle is a nine-minute journey on foot and Greyfriars Kirkyard a mere two minutes walk.

The Wagyu beef meal was superb but the pizza (truffled Parma) had too much thick crust. It wasn’t like the Neapolitan style.

I took my first sip of the pho and was immediately impressed—the broth is truly exceptional! Rich, flavorful, and perfectly balanced, it delivers that authentic, comforting taste you expect from a great bowl of pho. Highly recommend!

We enjoyed a fantastic meal for two on Saturday evening! The service was attentive throughout. Although we don't have any allergies or dietary requirements, we spotted excellent service with tables who did. A member of the team was on hand to discuss with the individual(s) and was marking up on their menu what options they could still enjoy - a nice touch to make those diners feel at ease. The cocktails were fantastic - I can't wait to return for another frozen marg. And the food was simply fantastic. Each item was beautifully presented and our server talked us through each item as it arrived so we knew the ingredients and flavours to expect. The service was quick and it was fab that our table allowed us to get a sneak peak into the kitchen. Unfortunately, we didn't get to try everything that caught our eye on the menu as we knew we'd never finish it all but that means we will definitely be back to try the rest. A great addition to the Shore/Leith area and I would highly recommend to any taco fans.

Lovey location, beautifully presented food and nice portion size. Great value for money. Kitchen a little slow but that’s nothing to worry about, rather that than feeling rushed for table turning! Highly recommended for a relaxed meal in nice surroundings!
