Varanese hat sich in Louisville niedergelassen, weil hier eine erfolgreiche, unabhängige Restaurantszene zu finden ist. Er ist überzeugt, dass die Einwohner von Louisville frische Zutaten, kreativ zubereitete Gerichte und eine kulturell vielfältige Speisekarte zu schätzen wissen. Die vielseitige Speisekarte des Varanese bietet für jeden Geschmack etwas: gefüllte Weinblätter, grüner Salat mit gebratenen Tomaten und selbstkreierte Vorspeisen: darunter gebratenes Schweinekotelett ohne Knochen und karamellisierter Orangenlachs. Als Nachspeise empfiehlt sich die gebackene Banane mit hausgemachter Hafermehl-Keksteig-Eiscreme. In diesem New American Restaurant finden 150 Gäste an der Bar, in dem Speisesaal und auf der ganzjährig geöffneten Terrasse Platz. Die Terrasse des Varanese hat zu jeder Jahreszeit geöffnet und ist eine ideale Ergänzung zu dem Gebäude. Dort befindet sich aus ein spektakulärer, 6 Meter hoher Wasserfall. Der Raum wird von serpentinenartigen Glastüren umschlossen, die auch eingefahren werden können, um ein kulinarisches Erlebnis im Freien zu bieten. Das Varanese befindet sich auf der 2106 Frankfurt Ave., im historischen Stadtteil Clifton.
