In 2016, Roux and the Hilton received the top annual food and beverage award for overall food experience out of 218 Hilton Hotels & Resorts in the Americas region. Roux is open for breakfast, lunch, dinner and weekend brunch, which features live music and drink specials.

Dinner: Daily: 5:00pm - 10:00pm

Food and service was excellent. We also ate the breakfast buffet 2 mornings in a row
and will come back to Hilton and the Roux for the great dining!
We went for the Thanksgiving buffet. The food was good and included the Southern holiday favorites we were hoping for, but the ambiance was like a school cafeteria — harsh lighting, bare tables with no candle or flowers. Nothing special for the $45-plus per person we paid. Dimming the lights and putting a tablecloth and candle on the table would have made a huge difference in our experience.
On the plus side, our server was friendly and attentive.
Compliments to the Chef and staff. All the food was fantastic, the staff were friendly and professional. I would recommend anyone traveling to the area to eat at Roux - Hilton Asheville.
Lackadaisical service at late (1 pm lunch). As is they just did not care. Ambiance is like sitting in a hotel lobby. Sandwich had little contents other than lettuce and tomatoe. Not worth the price (although when I complained server did bring more)
Maybe dinner is better but I doubt it.
November 11,2018. We were in Asheville for a wedding the day before. We booked Roux’s Sunday Brunch for 5. We ended up with 6 and they easily accommodated us. The dining area is spacious. Tables are well separated from other patrons. Chairs are very comfortable. There was a guy playing soft music on an electric guitar which was very pleasing. Everything was delicious especially the hash brown casserole and the shrimp & grits. They don’t offer chorizo on the made to order omelettes which seemed odd being the buffet was 19.99. I wouldn’t consider this a BRUNCH buffet either. Everything available was breakfast food except the one guy making shrimp and grits. I read somewhere that they were voted #1 best brunch buffet in Asheville which drew us in but, a brunch usually offers breakfast and lunch options. Still worth the ambiance and the food was very good.
We were seated at a table and waited for 15 minutes while watching servers flirt and chat with bar patrons...unfortunately, we walked out without ever having been able to place an order. We talked with other patrons on the way out who had not ordered either and we’re getting frustrated waiting. The location is near a vibrant foodie scene with so many choices. I’m sure this place wouldn’t survive if it were not located inside the Hilton Hotel.
I had a higher expectation of the quality and ambiance for the brunch menu charge.
Not at all what we expected. Service was good, food was just okay. The restaurant is literally in the main lobby of the hotel. Not a good atmosphere for us.
We are very disappointed in the service and the feeling that serving us is a favor. We've been coming to Roux for the past 5 years; however, after last Sunday's experience, we will not be back.
The impression is that anyone ordering from the menu is secondary to the buffet. It's simply too much food and we have a special dish that we want.
Wait staff seemed surprised when we asked for coffee the second time nearly 15 minutes after the first order, which was never brought.
This pleasant dinner surprise was recommended to us by a friend who stays in the host hotel frequently.
We started with a delicious charcuterie plate, accented nicely with a good mustard and whipped goat cheese - that and a couple of perfect dirty gin martinis. After that, we enjoyed a couple of well-portioned and tasty salads (Rocket and Caesar) along withwith some interesting, fresh baked onion rolls. At this point, we were starting to wonder whether we had perhaps made a mistake by ordering entrees... would we be too full to enjoy the movie that night?
We needn't have worried... both of us finished every bite of our perfectly cooked and nicely savory pork tenderloins...
It's rare for me to be impressed by hotel-hosted restaurants, but this gem (Roux) will be a regular for me and my sweetie.
We were greeted by the hostess immediately. Our server was pleasant and took care of all of our needs immediately! Our food was cooked to our specifications and was very tasty. Loved the salmon! Great experience! We’ll be back!
Server was congenial and did her best. Food was good, not great. Salmon was a tad over cooked and trout needed a little extra seasoning. Bread basket was lovely
Delicious locally sourced food creatively prepared. Excellent value. All staff from waiter to bartender to food and beverage supervisor were very accommodating, knowledgeable, friendly and courteous. Usually eat in downtown Asheville. This restaurant is well worth the trip.
The restaurant is in a hotel lobby but the service was very good, the server very friendly and knowledgeable, and the food was exceptional. I was there on a weekday, and the weekend ambiance would be better.
Truly excellent salads. Food was some of the best we have had in Asheville.

The brunch was delicious. The shrimp and grits were so good. Anderson, our server was fantastic!!! He was friendly and saw to it that our needs were met. No request was met with attitude. He was the best part of the meal!! The brunch was also very reasonably priced, which was very much appreciated. My sisters and I had a great “last meal” to end our vacation.
Solid little restaurant with open air concept. Good breakfast... had the southern scrambler. Little noisy but overall a great experience.
Server was excellent! Great vegan option.
Jennifer was a terrific server. We sat outside and enjoyed the two entree's for $32 and a half priced bottle of wine. What a treat! The food was excellent and we enjoyed the overall experience. I wish more people knew about your restaurant.
Best breakfast in town! The service is always excellent and the selection perfect.
We were there for Mother's Day brunch. My granddaughter, who is 9, said this is awesome let's do this every year and make it a tradition. We really enjoyed ourselves. The only thing I might suggest was having a vegetable on the lunch bar. Our server was very attentive to our needs.
Food was wonderful as usual
Not bad. Restaurant was quiet on a Friday evening at 8pm. Delicious wine! Hubby got steak, I got the trout. Both were good, nothing fancy or foodie quality, but good. Weren't interested in any of the desserts. Waiter was good.
We came for Easter Brunch and we were not disappointed. The bananas foster French toast and shrimp and grits were incredible!
Six of us went to Roux. We all thought that the overall "hotel" feel was the only thing that spoiled the evening and are hoping that they will do something to maybe make eating in the evening a little more atmospheric. Otherwise, we enjoyed the food but what really made the evening was our delightful server Anderson, very attentive, as well as very amusing.
He reccomended that we try the Sunday brunch so we plan to go this Sunday.
We were staying at this property and saw that the restaurant had good reviews and pretty reasonable priced food for a hotel restaurant. In interest of convenience (not that around the hotel wasn't convenient) it was cold and my kids were almost ready to go to bed, we decided to stick around.
Service was pretty good, staff is friendly and warm. However, our food took a LONG time to cook and came in wrong. They took another LONG time to fix it and by the time it came, we were already full on the sides (they never took the sides back so we had to cope with cold sides). The waiter apologized, it wasn't really his fault, but instead of giving us compensation he just gave a dessert. We were not even in a mood to eat our dinner at the time, who thinks about dessert? They even suggested we could take our food and eat for breakfast in the morning (????). The steaks, after they arrived, were not even that great.
I would probably give it another try, but, before doing that I will make sure there are not other better options around.
During our "Girls Trip" in Asheville this weekend to celebrate several of our birthdays, we found this restaurant Saturday night through Open Table. It was a last minute pick after we all arrived in town from our various departure points: Philadelphia; Washington, DC. area; Savannah and Loris, SC.
Since it was in a hotel, we were a little skeptical about the quality of the food and service. But starting with the appetizers, we knew we were in for a treat. From the garlic mussels, to the calamari, the trout, roasted vegetables, sauteed mushrooms, and all of the other dishes we ordered, the food burst with flavor. We were so impressed with the freshness and perfectly seasoned meals, we asked to meet the chef -- who by the way was also very pleasant!
Our waitress was also a delight. Not only was she friendly and engaging, she lit up the room with a radiant smile and wonderful energy!
For five African American women who were dining for the first time together in Asheville, Roux was a hidden jewel worth discovering!
We loved our dinner at Roux. Food was cooked perfectly and the service was awesome.

The banana pancakes were AMAZING! I’ll definitely be visiting again next time I’m in town.
The food was excellent from the appetizer to the dessert. I had a pork tenderloin dish with a ginger sauce, crispy Brussel sprouts and mashed potatoes. My husband had the filet. Everything was cooked perfectly. He had homemade ice cream (Chocolate Peanut) for dessert. A fruit bread was included with dinner which was amazing.
Our waiter couldn't have been better.
The restaurant is in the lobby of a hotel. A turnoff for some, but we like it because it is convenient to the movie theater and great shops. The décor, is actually quite pleasant and surprisingly quiet. But the food makes this place. Outstanding! Have never had anything we didn't like. They have a cream of mushroom soup that is to die for, and their salmon and steaks are always cooked perfectly, and they have a wide variety of perfectly cooked veggies as well.
We had a lovely Valentine's Day dinner at Roux. It was a little noisy. Food was very good.

We went for Resaurant week. Good food, good service, half price wine on Wednesday. What's not to like?
