Vermillion recently reopened following a long closure due to COVID. We wanted to check it out. We had been several times in the past. The new menu concept is ok, but there are execution issues. The menu has two sections sharables and entrees, with most of the menu being sharables. "Sharable" isn't a term they should use since the dishes are tiny. The bread "sharable" is one roll. How is that a sharable item? The other sharable items we had were small and lacked seasoning. The entrees sounded much better on the menu. I had the short rib, which was tough, and the two sauces that it was sitting on did not mix well together. They formed a goop that was unappetizing and I honestly couldn't explain the flavor. My other half had the pork shoulder, which was ok, but it was sitting in a pool of oil. All of the dishes lacked salt. One server handled the first floor, which is too many tables for one server. Disappointing food that lacked flavor, poor execution and was overpriced for what you got.

Really fantastic food! Incredibly fresh with bold flavors and beautiful presentation. A lovely surprise. Easily the best restaurant in Alexandria.

Brunch menu was very limited and they didn’t have a few things even though we were one of the only guests. Otherwise, we enjoyed the food and staff. Delicious coffee.

Vermilion went above and beyond for my husband’s birthday celebration! We were treated to a complimentary sparkling toast and the menu was incredible. We brought a bottle with us, but the wine menu was extensive and featured several Virginia wines! We’re already excited to come back!

The beets, octopus, and tiny broccoli were all excellent, but be warned that the broccoli preparation is spicy. Good wine selection by the glass and reasonably priced. The initial server was friendly and attentive, but obviously inexperienced. Aidana was outstanding in all respects. If you are an adventuresome eater, I highly recommend a visit to Vermilion.

Nothing like the old Vermilion. Ceviche tasted okay, but was comprised mostly of squash and onions with barely any fish — with the pieces that were scattered throughout diced into pea size portions. Add to that a single bread roll costing $8, with a micro portion of butter, and we were done. Left early.

Food was oversalted but delicious. Less salt would be a big improvement. We were seated next to another couple who were the only other people there and they were very loud just talking to eat other. It was awful to be the only other 2 people and get seated next to the very loud couple.

We have been to Vermillion number of times and usually had a positive experience. This time was no different. The food was good and our server was good. My complaint-if there is one to be made- was the menu. There is a nice selection of appetizers. For the entrees, there were only five choices. FIVE! My wife is a vegetarian; for her, there was only ONE choice. Until they change the menu, we will not be back. There are too many other restaurants competing for our business and they offer more menu selections. Thanks for the good times Vermillion, but we will be moving on.

Entrees and small plates were wonderfully prepared. Really exquisite. We were disappointed by the menu, though. It was missing many items posted online that we were looking forward to trying. Love the quiet, low noise level.

We had a meal of shareables to include the pan con tomate, bay scallops, grilled Napa cabbage, cod fish fritter, pan cubano, and potato confit. The standouts of the meal were the scallops, potato confit, and pan con tomate. The dessert, EVOO apple cake was one to skip. The fermented apple ice cream was so off in taste, we left it on the plate.

We had a fabulous small engagement celebration here. The service was outstanding and everyone agreed the food was phenonmenal. Not one mediocre dish among ten of us -- everything was delicious.

The new Cuban influenced menu at Vermillion is a winner. My wife said her duck was among the best she has ever had and among the shareables I ordered, the scallops were particularly excellent.

We ordered only shareables because there were no vegetarian large plates. Of the five things we ordered, two were great, two were okay, and one was not good: 1. The BBQ cauliflower was very good. It was an interesting take on the typically sweet-sauced BBQ cauliflower that's available at a number of other restaurants. 2. The street corn was smokey and delicious. 3. The bread was warm and delicious, but we had to tear it in half to share it. It's weird to call something a shareable and only service a single items...for more than five dollars. The most expensive dinner roll I've had. 4. The beets with yogurt were acidic, which normally I'd expect to pair well with the mint yogurt, but the flavor just didn't hit for me. 5. The final dish was the pureed sweet potato. We should not have been interpretive in reading "pureed." We imagined something like a mashed sweet potato dish. This was strained, baby food. Although the flavor of sweet potato was good, the texture was more than I could do as it was served by itself, not a puree as part of a complete dish. We had glasses of wine that were nice selections. We've been wanting to try Vermilion for a while, and I'm disappointed that it was not a great dining experience. Staff and atmosphere were great though.

We requested to eat outside, which was very enjoyable, but stick your elbow out and you could get hit by a bus. It was our anniversary and we were given a complementary glass of sparkling wine. The food was fantastic. The steak was spicy and flavorful, but not overpowering. The street corn was very tasty. The recommended wine went perfectly with our meal. We highly recommend it.

Starters were very good, main dishes were okay nothing spectacular. Service from the waiter was very poor. Had to ask for spoons for the side dishes and he then gives us only one enormous serving spoon. Asks whether there are any restrictions or allergies, and then says there is no changes to the menu for one of our party who was a vegetarian. He brought the wine we had selected asked if it was ok, he held it from the other side of the table, it was dark so I said I could not see, he ignored and continued to pour. Continually had to ask for water. What a disappointing evening, not worth a second chance!

We had a lovely early dinner at Vermilion and ordered a few small plates + shared an entree. We tried a couple of their signature cocktails as well. The service was outstanding and the ambiance was lovely. Food was good- not amazing- but I'd like to try some other menu items next time.

Booked this restaurant in the early evening and decided to sit at the bar. This is a great looking restaurant for intimate dining as well as a small group get together with the high-tops by the bar. The bartender was extremely attentive and helpful with the menu. Good world wine selection which is always a great plus. We ordered a few of the appetizers, the milk bread was the standout. We ordered the roasted chicken and the duck breast. The roasted chicken was served with a really originally prepared potato salad which was really delicious. The chicken was well prepared and extremely tender. The duck breast was really good with at variety of grilled fruit and vegetables. It came with roasted apple and squash. Went very well with the spices on the duck. Overall, this is a great restaurant and deserves all of the great reviews that they receive (a reason we went). On the list for a return visit.

The best dining experience we have ever had at Vermilion. Chef Shaw has brought a new level of creativity to the menu. Try the charred cabbage and veal breast to sample his talent for unique ingredient combinations beautifully presented on the plate. The front of the house, from the host to the sommelier to our server to the manager, were attentive, welcoming and knowledgeable.

Sunday brunch in Old Town do I figured Vermillion would be great. A beautiful morning was followed by a fabulous brunch. Staff recommended the BLT which was great. The accompanying potatoes were off the chart. Add in drinks for a great time. It was surprisingly quiet . The only drawback is a limited brunch menu
