Steakhouse
Situated in the Red Rocks country 17 miles southwest of Denver on Hwy 285, The Fort is a true replica of Bent's Fort, (1833-1849), the first American fur trade post in Colorado. The Cheyenne, Arapahoe, Kiowa and Pawnee traded and intermarried at Bent's Old Fort, creating an economic and peaceful exchange of cultures in an otherwise violent West. The Fort building is on the National Registry of Historic Places, and celebrates the many cultures that traded at Bent's Old Fort. Our menu features "New Foods of the Old West" including the best cuts of buffalo, elk and quail, grilled to perfection. There are vegetarian options inspired by American Indian recipes including Corn Beans and Squash, known as the Three Sacred Sisters. The wine list is awarded the Wine Spectator each year, and the nine dining rooms, with intimate seating, has a 350 seat capacity, with real adobe "beehive "fireplaces that burn wood in the winter and fall months. Romantic. Amazing views of the Valley and Mountains!

I would first like to say that the service was stellar. Our server and her assistant were helpful and attentive. A+ all the way. Now, I enjoyed my meal, as did my mother. However my dad and husband did not enjoy their meals. My dad informed me that his lobster was poorly cooked, the green beans were chewy, and he did not get the Fort Potatoes. For $65 the lobster should have been cooked to perfection and the potatoes should have been on the plate. My husband ordered the Gonzales steak. He does not particularly care for NY Strip as it is normally fatty, however most of his steak was fatty. He said that when he got to meat it was tender and delicious, but there wasn’t much there. That plate cost $58. My mom felt out out, because she wanted the lobster but didn’t want buffalo. Her choice was was to not get the Mountains Meet the Sea plate ($65) and get the “Tenderlips” Colorado beef Filet Mignon ($62) and add the lobster side for an extra $33. How does that make sense? For $3 more my dad got a lobster, but with buffalo instead. That’s crazy! Our whole meal with 5 drinks cost $474, plus tip. It was high, and that would have been okay if the meal had been stellar as well. It’s hard to cough up that much money when the meal wasn’t worth it. Lastly, we were also charged a kitchen fee. I’m not sure what this trend is that allows people to help themselves to my hard earned money, but I don’t agree. Does the kitchen staff also not get paid well? Tips used to be given to wait staff because it was incentive and they got paid less than minimum wage. I know this because I was a waitress. We will not be back, sadly, as we had all been there before, years before, but had enjoyed it. This time, very much not so.

Living close to the "real" Bent's Old Fort, we are always so pleased to be able to dine at The Fort. Being active Santa Fe Trail Association members, we knew Sam Arnold. In fact, we were able to obtain a $200 gift certificate to The Fort by traveling 5 Santa Fe Trail states and obtaining 15 passport stamps. Such pleasant memories!!!!

It is rare that when making known a special occasion and specific requests that a restaurant honors and fulfills your hopes and expectations. The Fort not only read the details but made it an even more special night. The Fort is genuinely in a class all its own from the location, beautiful environment, 5 star menu and drinks and the service is quite frankly 'other worldly' so thank you to Ben, Adar and the orchestra conductor himself, Eric!

We remember back to watching Sam Arnold every week on New Mexico PBS in the mid 60s. He was creating an innovative TV culinary concept then that has preserves the Western food culture through 5 decades. His historic replica restaurant, his intention to perfection in food preparation and demand for Rockie Mountain courtesy all are part of experiencing a meal there today. The Fort is an experience not just a restaurant.

The beans were not cooked and they were not even cleaned properly. The ends were still on. These are supposed to be broken off before cooking/serving. That was NOT a good quality that the Fort normally had.

The biggest surprise I got was the three percent kitchen help surcharge. I was always under the impression charge was included with the price of an item on the menu. If you gotta you gotta but I will deduct the extra surcharge of three percent plus an additional two percent for taking the time to calculate the deduction from the tip. And in addition, your pumpkin pie needs a half a cup of sugar and a pinch of salt not the other way around.

The FortResponded todayThank you for your feedback. I’m sorry you felt your meal did not reflect the value and I hope you’ll give us another opportunity in the future. - Holly Arnold Kinney, Proprietress

We had guests in from out of town, one of whom were recovering from a bout of flu. Exceptional service & hospitality from walking in the door, to our choice fireplace-side table was the hallmark of this experience. The broad list of Wild Game menu choices amazed our guests, but we all settled on the unbeatable Bison Prime Rib, coupled with an excellent Zinfandel at a competitive price from their huge wine list. Fun desert & after-dinner drinks completed the festivities of an outstanding evening. Special kudos to our warm & expert Servers!

On a Sunday evening The Fort dining area looks festive with strings of white lights in place. Food was very tasty. Seats were comfortable. Empanadas had enough moisture to taste good throughout. Prime rib tasted just right - not too salty - and it was tender though not fall-apart tender. The Fort's Game Plate was very good, even if the portions were large enough that we had to take some home. Both the Crème Brûlée and Chef Nick's Panna Cotta hit the spot. Service was attentive without being patronizing. Yes, we would recommend The Fort to a friend.

The food was lacking. The green beans were tough to the point of being hard to cut. The elk steak was ridiculously tough. The friend I was with has been a hunter for decades. He told me elk is usually quite tender, and that this must have been a poor cut of elk. Cayenne pepper was used in too many dishes, even in the chocolate cake we shared. Everything else was very nice; staff, ambiance, even let be music! The food will keep us from ever going back. Disappointing for sure for the money.
