   This was our second visit. Our first was on the weekend and at the height of the dining hour, and everything was terrific. This visit was on a weekday at 5:30, the service was just OK, and our food was lukewarm to cool. Only two other tables had patrons, so we can only assume the kitchen wasn't up and running. They were beginning to add meats to the oven in the back, so we suspect ours was leftover from the lunch crowd. Disappointed since they made a reservation for that hour for us as though they were at full speed. Our daughters often frequent The Hill and were surprised that we were disappointed. Go later in the evening when they're busy.

   This place never disappoints. The food is good, old fashioned barbecue. The menu is simple and everything is good. And considering the midtown location, it can be a bargain compared to other restaurants of its ilk. Good for big groups or small groups but better to be enjoyed with friends than a romantic night out.

   The ribs, chicken, brisket were all good but they need to ensure that a complete selection of side dishes is available at lunch. It's disappointing that they didn't have mac & cheese orpotato salad and don't allow a substitution of fries with the Cue & Two lunch special.

   Our server, whose name I think was Cal? (Tall white guy with reddish hair) was literally the nicest, most efficient, enthusiastic, happy server I've ever had in my life. I want to clone him.

    The atmosphere was cool and really resonated some Texas vibes. I was a little sad about a few items they didn’t have but the overall experience and food was good. I’m a Texan so I’m tough when it comes to BBQ yet the did good, I would come back. Samatha my server was excellent and sweet. She took the time to manage expectations when things were slightly delayed. She made sure we were well taken care of.

    It was delicious! Our waiter was super attentive and made sure we had everything we needed. We wanted to go back a second time but weren’t in town long enough. We will definitely go back next time we are in NYC!

    It was my birthday and the restaurant never called me that they were closed due to an electrical problem. They emailed me rather than call. My birthday plans were ruined. I happen to love Hill Country Barbecue, have going there for at least 20+ years. Sincerely, Susan E. Fein

    Post COVID the format of walking up to the counter, placing your order and walking away with your meal has changed and that made receiving our entree and sides a lot longer than it used to be. They are now delivered by a waiter. Overall the meal was good. Pulled pork was a bit dry but everything else was really well cooked and tasty. I’ll definitely be back.

    Friendly service they actually offered us a taste of a beer we asked about. Moist brisket was amazing, ribs were great too. The sweet potato side was great. All in all an A+ dinner!

    Moist brisket - outstanding as always. Sausage links (both types) - not so much / very disappointing. I seem to remember them being much better. They definitely were not up to par. Did Hill Country change sourcing? I thought used to be from Elgin or Lockhart, but these (both the regular and jalapeno cheddar), did not seem to be from either, and not TX quality. If you go, stick with the brisket. And bring back the Blue Bell!

    I've dined here many times and would rate this a notch below. My initial server was fair at best and many little effort to explain the "menu board" (I would have ordered the Short Ribs and Spiced Wings vs. the Turkey and Brisket...) Both the Turkey and Brisket were flavorful, but the "cut" of Brisket was just ok. My 2nd Server "Franchisca"? was GREAT and I complemented her as such on my way out.

    A definite improvement with what comes out of the barbecue pits -- after 24 hours of slow, magnificent pit barbecuing -- after a disappointing couple of meals there about a year ago. Pit master(s), side cooks, and management deserve compliments for turning the situation around because everything from the brisket to the chicken wings were being served -- and since it was take-out, we were already home before we would notice -- not properly or evenly seasoned, cooked, etc. So guys, continue to be vigilant and keep up the good work. Too bad prices have escalated to the point where it's not something we can do but once every few months. We used to go once a week! I understand beef prices are going through the roof across the U.S. so there's nothing we can do but pray and go out less. But there is something you have easy control of: Please, please, please find a way to offer barbecue sauce at the tables that isn't ice cold since that ruins all the delicious meat your customers pay a fortune to eat. The meat is already just warm out of the pit because that's your process; cold sauce quickly chills the chicken, pork and beef and that's never good.

    I look forward to the burnt ends every December as that’s when we visit NYC. All of the food is excellent but those burnt ends are my absolute favorite!!
