Butcher’s Bistro is a restaurant and retail butcher specializing in Colorado cuisine. We buy cows, pigs, lambs, and poultry from small CO farms and focus on nose to tail preparation changing the menu frequently as we work through the butchering process. Our cuisine is upscale-casual, offering our guests a chance to pick their cut of steak or choose one of the many items from our seasonal menu and try one of our composed dishes. From sausage, to chicken liver pate, to smoked meats, everything is prepared in house with a “comfort food meets new American bistro” theme. Whether enjoying lunch or dinner in our restaurant, or purchasing a pound of dry-aged beef and a few smoked kielbasa to take home for the grill, Butcher’s Bistro is a great choice for family, friends, and neighborhood foodies.

The appetizers were great! So if you’re just doing drinks and apps then go. As for the main dishes, The steak was way overpriced, sent mine back because it was cold and the second time they brought it out to me, it looked like minced grounds beef on the inside and was supposed to be a sirloin. Great that they remade it for me but the meat was terrible and I feel they should’ve at least given a discount after this. We paid $130 for 2 people, only one of us got steak and the steak was the worst I’ve ever had. Ive never written a negative review before as I feel bad but I feel I have to for this one.

It was a fun date night with an out of the normal box menu. The staff was awesome and the food was great but the steak is alittle over priced, the meat was cooked perfectly though.

We dined here for dinner during restaurant week. The food was excellent. Between the two of us, we tried the Bison Balls, Pig Head, Butchers Salad, Duck Mole Soup, Pork Chop and Meatloaf. Everything was absolutely delicious. The space is cozy, the service was attentive...and you can get 10% off items from the counter if you show your receipt. Sweet!

Went here with my wife before a show at the DPAC. Tons of fun, excellent, fun menu and staff. They take the quality of food seriously but the rest of the vibe is super laid back and welcoming. We have already recommended it to our friends--what a great place to get some excellent food at a reasonable cost.

The restaurant was very loud and the tables along the wall are extremely close together. We could not hear each other over our table because of the people next to us. The food was ok. We expected better based on the reviews. Honestly, the best thing I had was a pear and walnut salad. It didn’t even have meat!

We always have a great time when we eat here. Sometimes it can be a little cramped and noisy to be able to comfortably talk though. However, the food and drinks have never disappointed. We will be regulars as long as possible for this Colorado gem.

It is too darn cold in the restaurant and no matter how many people ask them to turn the heat up, they say they cannot. Guests have their winter coats on while eating. We’d love to go back, tho this issue is probably going to keep us from doing so. Let us know if you fix it!

Hands down the best steak I have had! Coming from Chicago, which is known for its quality steak houses, I was not expecting to get such an amazing steak. 100% would go back and would highly recommend. My husband and I also got the charcuterie and bread with beef butter, both were amazing as well. Honestly, I would put that butter on everything if I could don't pass on it!

Each time we have dined at Butcher's Bistro we have had a memorable meal. Every menu selection is creative, well though out and well executed. Their wine list has enough depth and selection without being overwhelming. We are looking forward to our next visit. We always enjoy wonderful, friendly service.

The chicken dish was awesome! The steak cut had some chewy bits but it tasted great. The cocktails are very interesting however we are wine drinkers so we did not try any. The jalapeño sausage as a starter was very tasty, could have used a little more jalapeño, we like spicy.

The smoked hard boiled eggs and grilled olives were great starters. My chicken was amazing, hubby's pork chop was ok, not great. Our server was terrific...friendly and just attentive enough. We will definitely be back.
