1794 The Whiskey Rebellion is a down to earth local eatery & whiskey bar based on Carlisle's unique history. Our menus contain food and drinks rich in American tradition.

Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.

Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.

COVID-19 Precautions:
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

    A comfortable, cozy atmosphere. Ryan was an excellent server who went into detail with us on a few menu items. He was great! My husband and I each had the delicious Prime Rib offered only on Friday & Saturday. Not to be missed! Try the whiskey flight and the nice wine options. Everything was perfect!

    My girlfriend and I were driving home from Pittsburgh and decided to come here based on other great reviews. Grateful we did. It's such a lovely gem as is the entire staff. Our meals and drinks were very memorable too.

    This place was much better in the past. The whiskey sour drinks have gone downhill and did not taste much like a whiskey sour anymore. Not sure what it was that killed the drink. Maybe I should have ordered an old fashion instead. But I think they should figure that out for sure because in the last they were great. The food prices are good but I found the burgers and steak to be too salty. But overall not a bad meal and menu options are good. The fried onion appetizer was good.

    Made a reservation well in advanced for outside dining, only for our table to be given away to a walk in. After rudely being told by the manager “there was mistake with the OpenTable reservation and too bad”, we were offered an inside table. Then after I insisted we wanted outside dining, we got out at a table next to a large party, like 25 people the completely surrounded us, and made dinner intolerable, we asked if there was an inside table available and there wasn’t. So we told the waitress to cancel our food order and we were going to leave. We offered to pay for our onion rings (which we very greasy) and drinks but the manager said not to worry about it. I insisted on paying and was told not to bother. So we left. Our waitress was great, it was the manager that was rude. And it’s a shame. We go here quite often, especially since we stay at the attached hotel. I have two reservations coming up in July for the Chrysler show and I might cancel those as well.

    Pros: Angels Envy in the bourbon flight was amazing. The mashed potatoes and gravy along with the sautéed asparagus were really tasty. The server was pleasant. Cons: the Stroganoff was short on flavor. The prime rib was anything but prime. It was tasteless and tough. I was really excited to try this restaurant but was very disappointed.

    The food was amazing. Cocktails were unique and very enjoyable. All the Waitstaff and hostesses were extremely friendly. Loved the atmosphere. Very accommodating with our food allergies. We had a great time. Definitely recommend and look forward to returning.

    Entrees tasted great and good portions. Salads tasted good too but were too small for sharing. The dessert was too small to share as well. Great drink menu. Good service and ambience outside on the porch. Would have liked some decaf coffee with dessert but they simply didn’t have any fresh coffee made, and were not making anymore that evening.
