Welcome to the Bitterroot Valley, the heart and soul of Montana. The Sapphire Restaurant is located in the quaint town of Darby where history and tradition run deep. The Sapphire Restaurant found its inspiration with stories of Rodeo folklore, local ranchers and farmers and a culture steeped in tradition.
We want to highlight that culture and celebrate the people that have called this valley home.
Our grass fed steaks are sourced right here in our community. We make regular shopping trips to the local farm stands and farmers markets to feature produce grown in our backyard.
Our made from scratch menu brings a touch of contemporary American flavors to traditional western fare.

Our modern rustic dining room showcases the views of the Bitterroot mountains to the West and the Sapphire mountains to the East. Our outdoor patio and deck make the most of the perfect summer temperatures with room for horse shoes and bocce balls.

The Sapphire Restaurant makes everyone feel at home.

Welcomed nicely, seated immediately. Service was slow. First placed drink orders then appetizers. Drinks didn’t arrive until we were halfway through the appetizers. Appetizers were excellent but wish there were more options for gluten free/dairy free. All the food was excellent with beautiful presentations. Our waitress was very nice but service was slow. Which other people who dined at Sapphire warned us about.

3 steaks were ordered medium rare, 2 came out medium to well done. The service was inattentive and the bar service was extremely slow. Attra, ctivequiet place, but for the price we expected steaks to be cooked right and better service.

We had a group of 6 and we were all thoroughly impressed with the restaurant’s decor, excellent staff and food that is not only presented beautifully but tastes even better! Thanks for bringing this level of dining to our community.

So glad we stopped in at The Sapphire Restaurant. It was our first time for lunch and it was awesome. Izzy, our server was friendly and took very good care of us, Will definitely be back!

Food is very good; wait time is intolerable. Forty minutes between a salad and three entrees. We watched a couple enter the restaurant when we received our salads. They were served their entrees before us and one of their party had the same entree as one of our party - how does that happen? They came a while we sat at our table. Maybe understandable on a crowded night but the restaurant wasn’t even full. That’s not right.

We had such an amazing dining experience. The menu is chalked with all kinds of delectable dining options from the starters to the entrées. We had the baked brie in phyllo with a huckleberry compote, which was outstanding. The carrot jalapeño soup was a very interesting and delectable combination. The ribeye steak was among the best we had had along with a really unique pairing of pecan crusted trout with THE and we sausage gravy. Truly delicious. We will be back soon to try some of the other wonderful menu items. We were also pleased to meet one of the owners Nikki who was behind the bar making the best flirty lemon drop I have ever had!! Good luck to this much needed new fine dining establishment in the Valley

We went to The Sapphire Restaurant for the first time for our anniversary. We made a reservation and I am glad we did. The restaurant was busy so we didn't have to wait for a table. We never felt rushed or ignored by the wait staff. Every one was friendly. The food, oh my, was great! We started with mussels and we are very particular about mussels. They rated top notched! Then my husband ordered the tenderloin medium rare and it came, medium rare. He cleaned his plate with the sides also. I had the pork chop and it was delicious. I wanted something that we don't cook a lot of at home and it was just right. Unfortunately we didn't have room for dessert! Maybe next time.
