Unlocking Umami! Join us for an immersive two-hour workshop as we delve into the fascinating world of fermentation, with a focus on koji—an ancient fungus used in the production of miso, soy sauce, and sake. In the first half of the session, we’ll explore the origins and significance of koji, its role in food preservation, and how to cultivate it. Through guided tastings, you'll discover why this remarkable ingredient is a key component in some of the world’s finest kitchens. Participants will sample a variety of miso and other ferments to deepen their understanding of koji’s unique qualities. The second half is dedicated to hands-on learning. You’ll create your own batch of miso, made with koji grown on organic heirloom Kokuho Rose rice, Rancho Gordo beans, and seasonal vegetables sourced from SingleThread Farm. Each participant will leave with a quart-sized jar (approximately 1.5 lbs) of their own seasonal miso, which will continue to ferment at home, along with the skills to start fermenting on your own in the future. This workshop is led by Eleana Hsu of Shared Cultures, a small-batch fermentation producer based in San Francisco. Eleana and her partner, Kevin Gondo, specialize in handcrafted koji-based products, including misos, shoyus, and umami seasonings. Their focus on traditional methods, wild-foraged mushrooms, and the flavors of Northern California has earned them a loyal following, including Michelin-starred chefs and home cooks alike. Each batch is a unique culinary experience, offering flavors that can’t be found anywhere else.
