Raise your expectations and you won’t be disappointed. Way out at the southwestern edge of the metroplex, the fine dining bar has been raised, considerably. Open a heavy oak door, enter a space where enticing gourmet molecules faintly waft from a kitchen busily prepping excellent food. Attractive, friendly people greet you, seat you, and treat you to innovative and flavorful foods, drinks in an elegantly casual atmosphere you may have never experienced in a small Texas town. The moment you open that door, you think this is going to be a pretty special experience. And it is.

The Stephenville TX culinary scene recently received a big boost when Stephan Pyles opened his modern TX restaurant, The Seeker, alongside the 33 room 1950's retro motel The Interstate Inn. The menu, decor and staff at The Seeker left nothing to be desired during our Happy Hour visit and dinner. Andrea, the General Manager, assembled and trained an eager friendly staff to serve the restaurant patrons. Decorated in the same vibe as The Interstate Inn, the dining room reminded me of restaurants my family ate at when I was a young child in the 1950's. Who is to say what is the best dish or cocktail on the menu? Try a few of each for yourself! Each dish has something out of the ordinary. Everything we ate and drank was creative, made with quality ingredients, prepared, plated and served professionally. (Wait to you see the Caesar salad plating) If you don't have room for dessert, get one to go for a late night snack. Get a head start on the menu at their 3-5pm Happy Hour, you will be glad you did. Snack and drink prices are your best friend. Make your dining and motel reservations now because the dining room was packed on a Tuesday night.

My wife was familiar with Stephan Pyles and heard about his restaurant in Stephenville. She wanted to try it for her birthday. The service and the food were exceptional and truly provided a great experience for my wife’s birthday.

After making our reservation online, I called to insure we could be seated on the patio. Hardly anyone was on the patio, so the call hadn’t been necessary, but we were very happy we sat outside - it was a pleasant evening, the outside areas are outstanding, and we could hear each other without the poor acoustics we had previously experienced inside. We started with mixed cocktails and the trio of ceviches. For entrees we ordered the salmon and the ribeye. Our margarita and ranch water were perfect. I recommend the salmon - it was absolutely delicious. Seared and served over the most delicious grits with a flavorful golden tomato sauce.

I loved the retro vintage vibe. It was my husband’s birthday and he ordered the eggs Benedict and loved it. My son loved his hamburger. My quail dish was not to my liking and our server immediately took care of the issue. A free dessert was given for my husband’s birthday day such a nice touch. The manager took the time to come by and have a nice chat! Wonderful dining experience!

2nd time to The Seeker. As the last everything was excellent. Emma was our server and did an excellent job. Steaks and Chicken were all excellent. We were celebrating an Anniversary and they recognized that with keepsake menus and deserts. George stopped by to check on us and recommended the Bread and Butter pickles that were just like grand ma used to make. Then he recommend the pickled Watermelon rinds that were tasty. Topped it off with the bread desert with ice cream and it was a great evening. We will be back for sure. And have to mention the pickled fried green beans that were a big hit with the table from some who not green beans fans. Thanks again.
