This one-night-only dinner pairs the bold creativity of legendary chef Stephan Pyles with standout wines from McPherson Cellars, presented by pioneering winemaker Kim McPherson. Kim, a James Beard award double semi-finalist and son of Texas wine trailblazer Dr. Clinton "Doc" McPherson, has helped define the state’s wine identity with beautifully expressive, Old World–inspired wines from the Texas High Plains. He’ll guide us through each pour with insights and stories from decades in the industry. 🍽️ Five-course dinner by Chef Stephan Pyles with four expertly paired McPherson Cellars wines. For lil’ ole Stephenville, the Seeker delivers an absolutely marvelous dining experience. Our table was even visited by Chef Pyles himself, and his quail was as excellent as ever. Large, elaborately prepared dishes at bargain prices! What’s not to love?

Stellar experience as we’ve come to expect from any of Chef Pyles restaurants. My husband ordered the quail and waffles. 2 entire quail and 2 waffles w/ bourbon maple syrup. Delicious! My Dad loved his CFS w/ mashed, chorizo gravy and southern style pea salad. We were there for brunch so I tried his version of Eggs Benny. Served on the Shiner Boch bread , 2 silky poached eggs and crispy jamon , topped w/ slightly spicy bernaise sauce. Especially good were the smoky spears of asparagus as the side. Make sure you try the assortment of beads offered as an app. His to die for blue corn muffins along w/ the best muffins I’ve ever eaten and mini cinnamon bread.

Went for date night/partner’s birthday and it was truly amazing! Waverly did an outstanding job, such a sweet gentleman he will truly take care of you! Food was delicious and the drinks were as well. It was full but noise was just fine. I would truly recommend!

Raise your expectations and you won’t be disappointed. Way out at the southwestern edge of the metroplex, the fine dining bar has been raised, considerably. Open a heavy oak door, enter a space where enticing gourmet molecules faintly waft from a kitchen busily prepping excellent food. Attractive, friendly people greet you, seat you, and treat you to innovative and flavorful foods, drinks in an elegantly casual atmosphere you may have never experienced in a small Texas town. The moment you open that door, you think this is going to be a pretty special experience. And it is.
