Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

Expected better. The restaurant inside the Wave Hotel was nicely decorated and had good ambiance. Unfortunately, the service was slow. We sat for more than 10 minutes before our server greeted us. Although she was friendly and knowledgeable, she was mostly unavailable and the restaurant seemed understaffed and inattentive. There is two tasting menus and a la carte menu with Appetizers and Entrees. We went with the a la carte menu, which was very misleading as the Entrees are not Entrees but small tapas portions, which our server and manager later explained that it is the same portion size as on the tasting menu. The taste of the food was good but inconsistent and a long time between courses. The tequenos appetizer was very good. The octopus appetizer with 3 small pieces of octopus was good but nothing special. The pork entree was cooked perfectly medium and tender but the smokiness and spiciness of the accompanying plantain espuma was overpowering and made half of the small dish inedible. The Moqueca entree was disappointing with it's small piece of pressed cod, one mussel and a small one inch cube of plantain on a small bed of sauce which lacked any depth of flavors as would be expected in a moqueca. Overall the restaurant has good ambiance but in their pursuit to be another tasting menu restaurant in Orlando, they fell short on delivering on their a la carte menu. Unfortunately from this experience with slow, inattentive service and misleading small entree portions, Bacan is All show and no substance.

We went for our anniversary and had the 5-Course Taste of Bacan. The food was delicious, very flavorful, and the combination of different flavors complimented each other very well. The restaurant itself was very clean and beautiful. The lighting was very good, not too bright and not too dark. The service was excellent. We will definitely be back!

Absolutely fantastic. Our servers were the best. The food was absolutely amazing. They were not kidding when they told us we were just getting started after our first tasting. We did the chef experience and it was worth every single penny.
