Chef Trey Smith is co-owner and chef at Saint-Germain, an intimate tasting-menu restaurant in New Orleans' Bywater neighborhood. He collaborates with Chef Blake Aguillard and General Manager Drew DeLaughter to offer a dynamic culinary experience that blends French influences with Southern roots. Before establishing Saint-Germain, Trey strengthened his culinary skills at Restaurant August under Chef Michael Gulotta. He later joined Mopho as the opening chef de cuisine and contributed to the launch of Maypop. His dedication to innovative cuisine has earned him multiple nominations for "Best Chef: South" from the James Beard Foundation.

    Consistently delicious. The steak tartare, wedge salad, filet, and new favorite, grilled zucchini couldn’t have been better. The zucchini side is new with a sauce that is rich and flavorful.. one of the best vegetable dishes ever tasted. I wish I knew our server’s name. He was perfection.

    We would not recommend this restaurant. We come to Highlands 2-3 times a year. It was long waits, rude staff. cold dishes, they stack reservations on top of each other and don’t have the tables to fill them. We were there other 2.5 hours, not by choice. Sadly, we won’t return. The view was stunning. Not much else.

    We had a great anniversary dinner at the Oak Steakhouse. Michael our server was great and most helpful and attentive. Our steak tartare and Oysters Rockefeller were great as was the ribeye and steak frites. I highly recommend the chocolate suffle for dessert. You won't be disappointed at Oak Steakhouse Highlands.

    Entrance through the passage way in front of what appeared to be small overnight rooms around seated hotel/motel guests was not a great setting. Seated promptly young man waiter was merely dressed and seemed very competent. Ordered an 8oz filet and it was cooked perfectly and delicious . No baked potato on menu was disappointing but did share Brussel sprouts as a side with wife and they were good my spouse came wanting to enjoy their mountain trout to hear the kitchen had not placed the order correctly and no trout tonight . She then ordered lobster risotto which came with sparse lobster and mainly corn instead of risotto. A very disappointing meal. To the credit of management they removed the risotto from the bill although I did not ask them to do so Sum it up One good entree one not so good and not enough to make me recommend to others. A high price tag for an average dining experience

    TL:DR—Dining with Celiac Disease. Generally, the nicer the restaurant, the more accommodating. Not the case at Oak. Pros: The view is gorgeous and they’ve done a great job outfitting the space. Drinks, the ribeye and pork tomahawk were great. Our server was phenomenal. Cons: Zero appetizers that were gluten free—like could not even be modified to be GF. Most vegetables were off the table too as they were either fried or cooked with a seasoning containing soy sauce. Basically all that was safe were salad, steak and mashed potatoes. The weirdest part was that half the dessert menu was gluten free! It’s normally the opposite. The pastry chef and head chef should talk. Our sweet waitress even seemed to be embarrassed. My only other (insignificant) note is that the restaurant is frigidly cold inside. If you’re sitting in the booth along the window, it feels like an AC unit is blowing on you constantly. Not a big deal, just bring a jacket!

    The food and service were outstanding... a special shout-out to our server, Miranda, for making our dining experience great. The restaurant is beautiful with gorgeous views. I must stop if you are in the area.
