Belly of the Beast is the expression of Chef Thomas’ personal and professional experiences, coupled with Elizabeth’s expertise in service and hospitality to deliver a dining experience through the lense of a 1st generation Mexican American.

We aim to provide high quality ingredients handled with respect and cooked with love. The food speaks for itself, with bold flavors and unique dishes drawing from our cultural upbringing and travels. We want our cuisine and service to convey the thoughtfulness and passion we have implemented in our restaurant.

    Billy of the beast was as good as advertised. There's a nice variety of choices on every section of the menu and the food is incredibly well thought out, flavorful and executed. One of the most heralded spots in the greater Houston area is in Spring and is worth the drive and time in advance to make a reservation

    The menu had several options to choose from. Potato and cheese empanadas with cremefraiche and cavier were very good, birria tacos could have been a meal. Dinner we chose redfish and carne asada. We added side of street corn pasta, never had anything like it, pillowy bites of pasta filled with a corn purée. Couldn’t find room for desert. Comfortable atmosphere and friendly service.

    Octopus appetizer was a little under done. Duck breast was chewy. Duck leg was great. Lobster rolls were good. Fish entree was also good. Service was excellent. Would try this place again.

    We visited BOB on 7/16 and were warmly greeted by the owner before being seated, which set a great tone for the evening. As a party of two, we indulged in three starters: empanadas, lobster roll, and peach & burrata. While each had merit, the burrata dish stole the show — the mix of brown butter, ripe peaches, shishito peppers, and warm, crisp bread was perfectly balanced and absolutely mouthwatering. The empanadas had a unique, gritty cheese texture that wasn't my favorite, though the crème, chives, and caviar helped round it out. The lobster roll was rich, but the lobster-to-bread ratio leaned too heavily on the bread. For mains, we tried the half chicken, carne asada, crispy potatoes, and the street corn agnolotti — which was easily the standout. The pasta was pillowy, packed with creamy filling, and topped with sweet corn — I'd order it again in a heartbeat. The chicken was tender and flavorful, and the truffle on the potatoes was subtle and well-balanced. The carne asada, though flavorful, was on the chewy side, making it difficult to enjoy with the tortillas. Speaking of which, while house-made, the blue corn tortillas didn’t seem fully cooked and had a raw texture. We ended the night with tres leches to go — a sweet finish to a thoughtful and well-paced meal. Overall, the service was excellent and the meal told a delicious story with some unforgettable highlights. We'd definitely return and look forward to exploring more of the menu.

    Same taste as a normal mexican food truck, nothing special about it. It is not bad, the food is ok, but for a Michelin star winner need to really improve the taste of the food. The staff was not good at the beginning, we wait 10 minutes to get the menu and start order. The for the check took another 10 minutes to get it. I do not recommend this place.

    While the food is delicious, the portions are small. None of our dishes were hot, which was disappointing. Also, the server kept extolling the talents and preferences of the chef, and it made me feel like I was supposed to perhaps be grateful to be eating there. They could do with a little humility.

    This was my 4th time at Belly of the Beast and it just keeps getting better! Consistently excellent service, fabulous and inventive food and nice wine selections. The burrata was to die for, and so were the empanadas and scallops. The tuna tostadas are a must too!
