Nestled in a former 1930s haberdashery, Shuckers is known for its intricately carved oak paneling, tin ceilings, and unmatched seafood legacy. With over 400 dozen oysters shucked weekly by a team whose average tenure spans more than 20 years, this iconic space celebrates craftsmanship in every detail. This inaugural event spotlights the rich maritime terroir of the Pacific Northwest through a curated pairing of premium oysters and craft cocktails. Sip on elevated favorites like the Dirty Gin Martini, Classic Laddie, and Paper Sea Plane, designed to complement the fresh brine and bold flavors of the region’s finest oysters. Hosted by Chef de Cuisine A.J. Darkmun and special guest Devin Vilardi, Rémy Cointreau Brand Ambassador, the experience includes interactive tasting education, shucking techniques, and insights into spirit pairings.     We sat outside on a cool Friday at 6pm. It was a good choice because it was a little noisy and crowded inside the restaurant. I had the Caesar salad with crab, outstanding and my husband had the scallops which were served with asparagus and mashed potatoes which were yummy. We also had the crab gratin which was delicious. The lemon drop cocktails were fantastic. The bill was $230 including tip.

    Great experience. Loved the decor. Just like being in a pub in England. The service was wonderful. Our waitress was so professional. Loved the entire dinner.

    Everything was great and one of the best Cesar salads we have ever had ! Almost as good as the one we make at home.

    I had a wonderful time. I went for oysters, but was surprised with the spectacular mushroom risotto.

    nice waiter but he would not stand at table long enough to get our orders in. Kept leaving after 1 order, rest of party couldnt give input i left without ordering my dinner because I didn’t get to order it before we needed to leave. the place smells of seafood. we liked our hors doevres

    The restaurant is located on the ground floor of the Fairmont Olympic Hotel. It is a short walk from the convention center. You can eat outdoors or inside. We had a window table for 2 which was perfect. The service was quick. The fried oysters were well prepared, but the Lobster Mac and Cheese was the best dish we had.

    Great food! We had halibut and black cod. Both great but black cod was the best! Also had the crab cocktail. It was good to! Overall 5 star!!! Go up stairs for a drink after at the olympia hotel!!
