Food, cocktails & Service were excellent! The saki recommendation was fabulous as well.
So many wonderful dairy free options for someone like me with lactose intolerances. Love the cool vibe, and aesthetics down to the pearl shell bar inlay, and beautiful, sultry lighting. The hand made organic noodle dishes are warm, complex, and nurturing. The hand rolled dumplings are divine! And it doesn't hurt that they serve my favorite saké, Kikusui.
The food is fine but I miss the weekend ramen at SuShi Tora. However it is still a nice place to go especially there’s no real decent Japanese food in Boulder.
Chimera did a nice remodeling of the old Sushi Tora space. The food was good, particularly the bow.
However, the Euro-beat music at high volume made it necessary to essentially yell across the table to converse with my companion. We'll likely try Chimera again, but as with so many other restaurants, if we find the volume equally loud, we'll not be returning.
Awesome food with fantastic flavours and spice! Only suggestion would be chopstick rests for when they take away your plate (so they don’t lay on the table) and also small plates with the soup dumplings so you don’t drip everywhere! Can’t wait to come back!
Had a great meal at chimera! The Korean calamari and the papaya salad with shrimp were outstanding. Great decor and service attentive but relaxed. Can’t wait to go back to try the other stuff on the menu next time.
Fantastic, highly original tasty food. Excellent service. Fun yet relaxing atmosphere where one could talk to one another and enjoy the vibe around you.
We were pleasantly surprised at the menu and wine selection at this restaurant. We will definitely go back. Service was fantastic.
Amazing service, great food. Enjoyable. We went here for CU parents weekend and it was just what we were looking for.
It was delicious!!! Would go back for sure!
Oops, my meal was somehow “off” - not as good as all the other times I’ve been there. Spices were not right and the lobster was not cooked enough - like it was “rare!”
We had to wave our red chopsticks in the air to get Zach to take our order and again, to bring the bill. Nonetheless, my group had fun.
This place is awesome all around... Nothing else to say... Can't wait to get back
The food and service at Chimera were excellent, We ordered the pork belly bao, duck dumplings, and Chimera ramen. Although all were excellent, the pork belly bao was amazing! Next time we definitely want to try the Shanghai Xiao Long Bao. We will definitely be back!
Friends and I are trying out all the ramen places we can locate in the Denver Metro area plus Boulder. This has been the very best so far, hands down. The broth makes the ramen, and this was so rich and flavorful! Can't wait to return and try out some of their other dishes, although it will be hard not to order the lobster ramen again. We enjoyed the wine special too.
I love this place! The food is fantastic. The ramen is top notch. I highly recommend the lobster ramen. This place is also vegetarian friendly!
I would give chimera 10 stars! The love and artistry in the food is unbelievable! And what a value! $15 for the ramen is an amazing deal! We had the wings, cucumbers and 2 types of ramen. I can’t wait to go back and try some more things! Do not miss this gem !
Ok food, really loud in the restaurant. Not a place to go if you want to hear what your dinner companions are actually saying.
Lovely summer evening so we sat at one of 4 tables outside. Menu is pretty limited and not distinguished for veggie items: need to construct a veggie meal ordering 2-3 small dishes and/or veggie ramen which was ....subtle and not very interesting. Eggplant bao not recommended; long beans spicy and good; smashed cucumbers neither smashed nor with spices usually with this dish.
I'd recommend trying it out but unlikely to return.
Would like just a couple additional veggie options! But otherwise excellent - meal, drinks, service, everything!
Excellent "Pacific rim" god with limited, but enough menue items, grat variety, nice and comfortable atmosphere, and atractive prices.
We went based on food review in newspaper. The food was good but not the best "Asian food in Boulder". The review said the lobster was excellent but the overcooked fish broth took away from the lobster taste. There was no lobster taste.
We had many appetizers and all were tasty. The duck dumplings were too small to enjoy a great taste. The dough was very good.
While the food was very good, service and cocktails subpar. We had reservations, came early sat in bar and received no service. A couple came in after us and were given water and menus while we had none. Second cocktail was a third light and when asked, server said same alcohol but less mixer, so proportions way off. Made reservations online and put in wife’s birthday, but no recognition. Not going back!
What a wonderful surprise! The food was really excellent- great interpretations of Pacific Rim food by the chef! We especially enjoyed the ramen dishes and the bulgogi. The service could not have been better and the manager was walking around to make sure all of the patrons were satisfied. Strongly recommend the restaurant- It will be a staple for us every time we return to Boulder.
We really enjoyed Chimera. The pork belly bao appetizer is exceptional. All of the food was tasty and the wait staff very attentive. I will recommend this restaurant to friends!
Delicious ramen & must try yummy XLBs (soup dumplings)!!!
A wonderful restaurant. The atmosphere, the yummy food, the cheerful staff just made our evening so enjoyable. Can’t wait to go back!
Some things were good, for example the Chimera Ramen. However, most things were only okay or not that good. The parallel issue was that everything was on the expensive side for what you got, i.e. the portions were small for the price. The cost issue also applied to alcoholic beverages. I left hungry but with an above average bill compared to many other nearby choices.
Great new place. Food was on point and service was solid
One of my favorites when I am in Boulder. The service is great and the chef will even make his rounds to ensure everything is perfect.
The service was incredibly slow. We waited at one point with empty water glasses and drinks for 15 minutes. We were sitting on the patio and maybe the staff just isn’t capable of managing a single patio table, but it wasn’t terribly busy. I had the lobster ramen and the lobster meat was good (hard to mess that up) but the broth was flavorless. I found this place on the Denver Eater heat map. Not sure what all the fuss is about.
Not good food--mix of spices not correct. xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx
The food was delicious! We had a couple of appetizers - duck bao and the Mala wings. Also had a shrimp entree which tasted great. The service was excellent. Our waitress was very attentive and helpful in answering all our questions about the food and drinks. We plan to go back again.
The food was outstanding. Very fresh. The service was wonderful as well. I look very forward to my next meal there!
Another mediocre attempt at ethnic food in Boulder. Overpriced, uninspiring papaya salad, pork ramen without vegetables, a broth that hadn't steeped sufficiently and a poorly selected piece of pork belly. Good
duck bao, however.
Really great food - the ramen is amazing!
We had a very fun and tasty meal. The service was friendly and attentive, although our server seemed a bit less than knowledgeable about the menu. The owner popped over frequently to give us superb advice on food and drinks. The Lobster Ramen was AMAZING, though $25 for Ramen seems a stretch (it was a generous portion of lobster and was worth the price, it's just hard to reconcile $25 for Ramen when I look back on my old Top Ramen college days). Drinks were also very tasty, as were the dumpling appetizers. We will be back, once we can justify the prices once again.
Chimera has quickly become one of our favorite restaurants in Boulder. We've been a few times since it's opening, but Saturday, unfortunately, was our first disappointing visit. They were out of 2 entree items (out of 6) and 1 appetizer. I think by the end of the night two more items had been added as well. Our waiter just kept coming back saying, "Well, I just spoke to the kitchen and now we're out of....." My husband really wanted the "Everybody Chow Fun" entree - and that was one of the options they didn't have. We ordered Shanghai Xiao Long Bao (which we get every time we go) and they didn't come out until after our meals. We were told that "they take a long time to steam" but we've always gotten them as an appetizer when we go, and it was obvious they were just struggling all night. It look about 15 minutes to be greeted and have our drink orders taken. My Lobster Ramen was served without the egg, a component it's supposed to have. A rough night for a new restaurant isn't terribly uncommon, but when you pay $120 for a meal, you hope it doesn't happen on a night you're there. We'll definitely be back - as the food really is incredible when they have it in stock and all of the components make it on the plate - and are hoping to have an experience closer to those we had the first few times we've dined at Chimera.
The food was excellent, especially the Pork Belly Bao (although it could have used a little less hoisin sauce), and the Papaya salad. The Lobster ramen was very good but be prepared for a "heavy" dish with lots of butter. The restaurant looks great and the staff was friendly and attentive. The only negative was that we had to wait a long time to receive our food. However, the staff took notice, and we were comped a few items. Overall, we had an enjoyable dinner that would have been even better if we hadn't had to wait so long.
Absolutely fantastic food. Make sure to get the Xiao Long Nap, so good.
A fun Asian food experience in Boulder. Every dish a surprise. Duck dumplings were delicious, sauce on the side was necessary to add some flavor. Pork belly bao incredibly tender, under-flavored; need a side order of soy sauce? Lobster ramen also very mild, very small lobster tail. Be aware: portions are small, apps just a bite or two, so this is good news (we felt like we definitely didn't overeat) and possibly not such good news if you're really hungry or on a budget.
