American light lagers and Pilsners are easy to drink and refreshing. They are not, however, easy for a craft brewer to make but we are always up for a challenge. Pilsner malt and flaked rice provide sweet cereal grain notes while German and Czech hops add spiciness and a balanced bitterness to the finish. Cold fermented and aged with a German lager yeast, the palate is clean with a snappy finish.
Bottle-conditioned, naturally sparkling cider fermented in French oak puncheons. Made from a blend of traditional and heirloom apple varieties grown within 200 miles of our cidery.
Pale gold, bubbly, seriously dry. Richly aromatic, suggesting myriad fruits of the earth, and the earth itself, with a complex, palate-cleansing balance of fruitiness, astringency, and acid. Alcohol content 7.5% by volume. Full cork closure, 750 ml. bottle. Delicious with many foods, much as the driest champagne can be.
In contrast to all the others, the Orval Trappist brewery makes only one beer for the general public. It has an intensely aromatic and dry character. Between the first and second fermentations there is also an additional dry-hopping process. Through this the beer acquires its pronounced hoppy aroma and extra dry taste. Bottled at 5.2% abv can go up as high as 7.2%
Hop Session is in. Starting with a blend of west coast hops for a balanced, bitter effect. We close the session out by dry hopping the beer for a nice resiny mouth feel.
AleSmith X Extra Pale Ale is a clean, light-colored, light-bodied ale. The People's Choice award winner at the 2000 San Diego Real Ale Festival and the second runner-up in 2001, it has a good dose of dry hops balanced by a gentle sweetness, giving an almost sweet-and-sour effect. Appearance: Light golden color, and a nice white head, with good retention when properly served. Flavor: Starts off with almost tingling flavors of citrus and pine, balanced by a nice malty sweetness, then fades to a dry finish with a lingering hoppiness. Aroma: Strong lemony-citrusy character, with sweet malt and pine in the background. Mouthfeel (body/texture): Smooth, light-bodied.
Another ("typical"), extraordinarily tasty hop tsunami. Bright, sandy golden malt supports waves of grapefruit, melon, mango, and spruce tips. Pine needles to pineapples. And as always, dank and stank.
Milk stout brewed with single origin coffee from Ethiopia.
Ambershock® is an amber beer produced by way of infusion, with 7.0% alcohol by volume (17.7 Plato degrees). The wort boiling phase is prolonged in this case to obtain a certain caramelizing of the sugars in the wort. Strong, full-bodied and mellow, its marked yet well-balanced malt flavor mainly derives from a special bottle-conditioning process that lasts for approximately 4 weeks. Bear in mind that this is not a refermentation phase caused by adjunct sugar or wort, which happens with Trappist beers. It is an exclusive procedure adopted by Birrificio Italiano® of Lurago Marinone. That is why Ambershock® is only sold in bottles. If it were matured in vats and served on tap, it would have a completely different taste. Bottle conditioning also brings about perfect settling of the yeast, which makes it possible to have a perfectly limpid beer with a strong, bright amber color.
With an aroma of noble hops and fresh pilsner malts, our all-natural Golden Lager has no preservatives, brilliant clarity, a malty balanced flavor and a refreshingly crisp finish.

This triple IPA was brewed to celebrate Finback's 1st Anniversary. Dry hopped with CItra and El Dorado, a lot of it. Big piney aroma but with a subtle dankness and boozy finish. A strong beer brewed to recognize a strong local NYC beer community!
This kolsch is brewed with Maine oats, and Mandarina Bavaria and Mosaic hops. Pours murky, but bright yellow with flavor notes of grain and light citrus.
A pale IPA hopped with huge amounts of Citra, Amarillo, and Ahtanum.
Pours black-brown with a creamy beige head. The nose has hard roated malts, dry chocolate, prunes. Light to medium sweet flavor with ash, charred toast, some baking cocoa, earth. Light to medium bodied with fine carbonation. Further ashy roast on the finish, some burnt leaves, chalky cocoa.

Brewed with beachwood and cherrywood smoked malt, and aged in rye whiskey barrels, Smoking Wood is a delicious demonstration of what wood has to offer when it comes to beer. This imperial smoked porter is brewed with a hefty amount of rye malt, contributing to a full body and light spiciness. Toasty oak, caramel and vanilla flavors balance the smokiness, contributing to an intense yet refined flavor profile.
This American Wild Rye Ale was brewed with a substantial portion of rye malt, and the spicy character of the grain asserts itself with clove and pepper in the aroma and flavor. Add in sour cherry notes from our special blend of micro-organisms and vanilla from the red wine barrels and you've got a mouthful!
Tart of Darkness is a 7.2% abv stout (a far cry from our Black Tuesday) that we aged in used oak barrels that previously housed beers such as Sucré or Black Tuesday. We then added our special blend of souring bacterias and wild yeasts. The result is a perfectly tart yet awesomely dark and roasty sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak.
BARREL AGED PALE ALE. High fermentation beer, for one year aged in French oak barrels . During maturing time, the beer draws the warm woody flavour from the barrel. Ingredients: Malts: Pale, Crystal, Wheat and Coffee; Hops: Challenger, East Kent Goldings and Fuggles.
Wood Aged Farmhouse Ale brewed with Malted Barley, Wheat, Oats, Rye and Spelt. Surette was fermented and aged in our large oak foeder with Brettanomyces and Lactobacillus naturally present.
Vieille meaning "Old" is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille's character exemplifies artisan Saisons.
Of dark almost black chocolate color. Nose: musky, slightly sweet and spicy, Lots of chocolate , coffee and some hazelnut notes on the palate intermingling with notes of licorice. Very lively on the tongue! It finishes with a dry explosion of black espresso flavors. Wow. This is quickly becoming one of our favorite beers here at Shelton Bros. This is the perfect session beer - loaded with complex yeast flavors, hopped to perfection, and as drinkable as any beer you've ever tried. At 4.5% alcohol, it's built for drinkability we suggest buying it by the case. You're no doubt wondering where the name comes from and what the hell the foreign text says. It's all been explained to us by the brewers, but we're still not entirely clear about it. What we can understand is that a young Flemish man has gone and married a French-speaking Wallonian girl, and his father, Taras Boulba, is very angry. (Smeirlap means 'fool' in a bizarre local dialect, which combines Flemish and French, somehow.) This is all a bastardization of the original story by Gogol, whose protagonist was Russian, a Protestant. His son marries a Polish girl, a Catholic, during the religious war between the two countries in the 1600's, and the Russian father simply kills his son to eliminate the shame.
Take Dupont's legendary yeast, organic barley malt, a waft of certified organic wheat, a swirl of citrus and spice and you can almost imagine the rare, delicious interpretation of the signature Belgian beer style that awaits you. Foret Blanche is drier than most wits, more lemony than it is tutti frutti, and has a yeasty, tart profile. Foret Blanche is 5.5% ABV, with a foggy honeycomb color.
This "Oatmeal Pilsner" combines the smoothness of an oatmeal stout and the pale golden color or a German Pilsner. An enormous helping of Nobel hops impart aromas of a fresh cut field whilst English oats and our house yeast give this ale a surprisingly rich finish.
You may think that this Christmas beer is a Christmas beer. But actually it is something as classic as an Imperial IPA at 10%. Bitter as a defeat and generously fruity as the first son of porridge. Then you are really only used sugar sweet beers, this non-Christmas beer certainly not something for you. PS Should be drunk all year round.

Probably our masterwork so far. For this amber colored beer we used a Brettanomyces during the second fermentation giving the beer a unique taste and flavor. Tomahawk and Simcoa hops give the beer a refreshing fruity nose of citrus and grapefruit.
Hof ten Dormaal Dark is an original amber colored ale brewed strictly via traditional methods. It is bottle conditioned and uses a top fermenting house yeast strain. The grain and bittering hops are produced on the Hof ten Dormaal farm.

Hoppy and roasty American IPA, brewed as the dark-colored counterpart to Another One (both beers incorporate the exact same kettle and dry hopping schedule). Weez presents a blend of hoppy and roasty notes on the nose, followed by hoppy resins on the tongue, and finishes with a deep roast.
The days are long but the season is short. So what gives? Sleep! After doing more before midnight than most Outsiders do in a week, Alaskans deserve some down time. And these moments of relaxation demand more than that ordinary, non-distinct lawn mower beer. Celebrate a day well done with a beer done wella seriously delicious IPA with some scorchin' hops.

One french saison made with yeast, orange peel, lemon and lime, and topped off with a Dry-Hopping with Citra hops. What a delight. The end result, a very refreshing and light beer despite its 7 degrees of alcohol.
The Gueuze Tilquin à l'ancienne is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l'ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose.
Blue is the first bottle conditioned ale brewed deliberately to taste great chilled. Maris otter malt and whole leaf hops. Try sharing in two stemmed glasses to appreciate hop derived Muscadet aromas.
The top product from the Rochefort Trappist brewery. Dark color, full and very impressive taste. Strong plum, raisin, and black currant palate, with ascending notes of vinousness and other complexities.
Over the ages the term 'cellar door' has numerously been referred to as the most beautiful term in the English language. upon setting out to create the first summer addition to the Stateside line up of ales; the feeling that almost instantly came to me was that of beauty & cleansing. many summer offerings tend to lack the complexity of their bigger, colder season counterparts; so my goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the 'cleansing' aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let's not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.
Right out of primary fermentation this beer is decidedly an American Pale Ale, but as it enters secondary, a bridge to Belgium is built with a dose of Brettanomyces Bruxellensis. A 5 week maturation results in slightly dry, fruity beer with a hint of floral Brett character that will evolve over time.
Madrone is an amber saison with a hint of tartness and a big burst of fruity west coast hops. Citrus and tropical fruit in the nose this might be the closest to an IPA we'll get.
Urban Farmhouse Ale (previously known as B-side) is a light , crisp and refreshing farmhouse ale. Golden to light orange in color with a floral nose and a dry finish. Urban Farmhouse Ale is brewed with three base malts: Organic Pilsner, Organic 2-row and Rye.
The Monarchy's is the only authentic version of a "Grodziskie", made with 100% oak-smoked wheat, local Polish hops, and the beer's original yeast. When it was discovered that the original brewery occasionally used willow bark in the recipe, they decided to throw that in too. Based on a beer style once brewed in the Polish town of Grodzisk Wielkopolski.
It poured a golden color with a white head. The aroma was of grassy hops, dough, brett with a little biscuit. The taste was of malts, citrus, dough, grass, yeast, herbal notes and green apples.

The sequel to the Mikkeller/To Øl collab "Overall IIPA". The same beer but with tons of nice nutty aromatic espresso coffee. This is hybrid beer if ever seen one. The combination of fruits and citrus from the hops and the round coffee aromas plus the warmth of the alcohol makes this a clash of a IIPA, Black IPA, American strong and Barley Wine. Cheers!
A sour brown ale, brewed in the Flemish tradition, that rivals even the best Oud Bruins coming out of Belgium. Elegant and rustic, and full of complex flavors, berries, spice, and a hint of nuttiness, this is a great beer to share with friends on a special occasion.
Best in style, this beer is very balanced like an altbier should be. Nice and malty in the front end with great hoppy finish.

Named in honor of the rare Black Rhino Del would hunt during photo safaris in Kenya. Black Rhino is a dark earthy ale with a hint of Saaz hop spice. A smooth and easy drinking ale that goes well with salty appetizers, musky cheeses, and wild game dishes.
This Traditional IPA is a hophead's dream. The distinct sharpness of British hops and moderate alchohol are balanced by a dry, malty profile and crisp flavor. The result is a brew as smooth as a sunset paddle on the glassy waters of Lac Du Bay.

An American-style Pale ale brewed one barrel at a time. The malt bill is built on American two-row malt and accented by crystal 10, Vienna, and white wheat malts. Magnum hops give the beer a nice clean bittering and Amarillo, Cascade, and Centennial hop varieties provide a pleasant floral and citrusy hop flavor. A healthy dose of additional Amarillo and Centennial are dry hopped to give this beer an inviting hop aroma. The beer is fermented with a neutral yeast strain and allowed to dry out so it finishes crisp and clean.

Stout was first introduced by Guinness in Ireland as "Extra Stout" (a stronger version of their Porter). Later, the stronger Imperial and Double Stouts emerged. Sweet, Milk, and Oatmeal Stouts are English adaptations with less alcohol and less bitter then the dry Irish Stouts. Victorian England recognized Oatmeal Stouts nutritional value and it is traditionally the drink of choice for nursing mothers and athletes. Rogue's Shakespeare Stout is ebony in color, a rich creamy head and a mellow chocolate aftertaste. It is made from Northwest Harrington, Crystal, and Chocolate malts, roasted barley and rolled oats, along with Cascade hop.

'Zingari' is Italian for gypsies, and this name perfectly captures Wandering Star's take on the Belgian Wit style. Brewed with 50% six-row barley and 50% malted and unmalted wheat, the beer is subtly spiced with lemongrass, cardamom, fenugreek, and coriander. The result is a refreshing 5% ABV beer with a zingy citrus zest.

Our approach was to brew this beer with Lactobacilius for a refreshing and authentic interpretation of a classic summer refresher.
