Toronto-born and based Chef Craig Wong's culinary practice is deeply shaped by his multigenerational Caribbean and Chinese heritage. In a new chapter of the ongoing Tongue and Throat Memories programme, he invites to an Asian-Jamaikan barbecue, on occasion of Lakouzémi / this year's Bwa Kayima. In Haitian Creole, the word lakou is used to describe more than a physical piece of land or a small yard; it also refers to the locus where all important aspects of community take place. It is a home, a place of kinship. Departing from this holistic social institution, and continuing deliberations on the political, philosophical, and cultural legacies of the Haitian Revolution and the Caribbean region, Bwa Kayiman reaches its third edition in 2025. Chef Wong’s flavour-driven dishes serve as a living archive of familial memory, celebrating the importance of communal gatherings and family-style dining. For the Patois Gathering, Chef Craig Wong combines Caribbean cuisine with Asian cuisine. We invite foodies and visitors to Bwa Kayiman – Lakouzémi to the Lili Elbe Garden of the HKW, to listen to his family stories and the stories behind his signature dishes such as Jerk Chicken Chow Mein, Popcorn Shrimp Fried Rice, Oxtail Mac n' Cheese, JunePlum Patties, and the indispensable Rum Punch.
