What Insiders Are Saying
This Highlands spot is of the most popular places in Denver for meat-free eaters. But just about anyone will be happy with a meal here.
Perfect for those of us who like Raw and vegan foods - they fully accommodated my food allergies and my daughters
- we look forward to the final Raw Monday next month (unless we can convince the Chef to do one more month!!!!!!!)
We were a dinner party of 8 and 6 of us were sick from the food.
We've been going to Vital Root for several years now and enjoy the great and healthy nearly 90% Vegan menu. Add to that their first Monday Raw meals and you have an absolute treat! We loved this last Thai inspired menu, and can't wait until June's first Monday!
interesting, healthful and very tasty ; very friendly service
While we have gone to Vital Root many times, this was the first time that we've tried the first Monday Raw dinner.
The theme was French, and every course was better than the one before. We'll definitely try this again.
Vital Root, like all of Justin’s, is first rate. It is our favorite because it is vegetarian and right in the neighborhood. We are never disappointed and take all of our visitors there. The food, the staff, the ambience are second to none. We adore the raw dinners and love the themes each month. Sarah always has a smile. Aidan is charming. On Monday I was treated to a birthday cake and serenade!
Raw night was so very delicious and amazing. I think the best menu I've had for raw night and the portions were bigger than usual.
Sadly, Open Table allowed me to make a reservation, then confirmed the reservation the night prior and when I arrived with my guest at Vital Root for their Raw Night, Monday, 12/3, the restaurant was closed. Very disappointed.
My husband is vegan and I'm gluten free so you can imagine our options. Vital Root does it extremely well. The food is inventive and flavorful; it's now our date nite go-to.
Looooove the Raw dinner they have once a month! We’re not vegan’s, but we love to eat healthy and this place was great!
We did the raw food night. The food was creative and so tasty. Would definitely recommend.
Vital Root raw night dinners are simply exceptional. This dinner was full of surprises, new flavors, new combinations and adventurous dining. We’ll be back!
We didn’t have a server? We saw the staff pointing and gesturing toward us a few times, but no one could be bothered to serve us. We had to fill our own water and request food be brought to our table. I realize it was a special event and not they’re normal workflow, but every other table seemed to have great service.
Wonderful and fun to taste all the creative dishes they come up with for the Pop-up 1st Monday dinners. We love going to them and being surprised!! The service is normally excellent, but they were a bit off on this Monday night, but it did not ruin the experience.
Food was good but left us both sick the next day. Is it because the food was raw and not properly handled? Not sure. Menu was creative and tasty, just hard to say whether we just got unlucky with the illness or not. Also, the Orange Flan dessert was frozen, which was an odd choice in our opinion. Cocktails were very good and the first three courses were great. Something about a raw dinner that doesn't quite satisfy that desire for a "warm homecooked meal" since it was all room temperature or colder.
I absolutely love the creativity and flavor behind raw night, I can't wait for the next one!
Great food. Always satisfying meal. The staff are attentive and friendly. Love the atmosphere of this place.
Great restaurant! Love the vegan options. A tad bit pricey for what you get but all around a great place to dine.
Went to their first Monday Pop-up for March'18 ! Glad we did not miss this months pop up, it was excellent. the sushi rolls had amazing flavors very layered and very enjoyable. Every course was a visual treat and another treat to your tongue.
We went for their special 4 course meal for $27 and besides the dessert it was literally the worst meal I've ever had. I took one bit out of the entree and couldn't eat anymore. It was quite a waste of money and we won't be back.
Vital Root is always a lovely experience, but raw night is something entirely magical. Knowing the farmer who grew most of the produce for it makes the food that much better, service was phenomenal as well. Hope to never miss a raw night!
The raw pop up dinners are so fun!!! We love trying new foods that we wouldn't make ourselves. Definitely worth it.
The raw pop up dinner was spectacular! I will go to every one from this point forward! Their everyday menu is also great, with so many unique vegan options.
First time to Vital Root for its monthly raw pop-up dinner, and it was fantastic. I am not a vegetarian by any stretch, but I am a foodie, and the cuisine was awesome. Even if you've never done a vegetarian night out, and maybe even fancy yourself a strict carnivore, you will not be disappointed at Vital Root. Just great.
Did not have my reservation but was seated anyway. Excellent service.
Not my thang! We went on Raw Foods night with a Prix Fix menu and here's my description of it so you can judge if it would appeal to you. The Root Beer Something appetizer was a shot glass of some sort of root juice and spices (a little like bad liquid medicine....undrinkable!) , the next course was named something like Cauliflower BBQ Wings comprised of pieces of different colored carrots w/ranch dressing made of cashew butter and some BBQ flavored crumbs of cauliflower. Okay but the carrots tasted old and a little leathery. I thought at least I can look forward to the "Peanut Butter Cup" dessert but I couldn't eat it either. No peanut flavor at all and the carob coating (?) was no where near a chocolate flavor but the raspberry sauce the thing sat in was really salty (bleach!) (The waitress told me the chef believes sugar should be balanced with salt but I couldn't taste any sugar.) I heard another patron say she's dreamt about such food and the restaurant was full so maybe it's just me.
Anyhow, the setting is hip and cool, the service was a little slow but good, I like vegetarian food but this meal didn't ring any bells at all for me.
I went to the raw pop up dinner. I wasn't very impressed. The cauliflower "wings" were a major disappointment. For the money I spent I expected more than baby sized pieces of dehydrated cauliflower served with raw vegetables. The portion sizes were small. I left hungry. I have eaten off the regular menu and found the food to be very good. Maybe the raw dinner thing isn't for me but I did expect a little more substance at that price.
