In fact, some of the vegetables are even harvested from the roof garden of the nearby Palace Hotel. Vermeer's menu isn't revealed in advance. Instead, guests simply choose whether they want to indulge in a four, five or six course meal and then let the incredible Vermeer kitchen team do the rest.
