The elegantly raw evolution of the Buck metaphorically translates into the story of the rustically refined men that developed the Mountains and Aspen in the early 1800's/

We ate dinner at the Velvet Buck last night with 5 of our closest friends. The food and service were phenomenal. Our waiter, Jonathan, was on his game with amazing wine suggestions, and great service. It may be one of the best meals I’ve had in a town where food is king. At our table the salmon, bass, short rib, chicken and duck were ordered and each person felt they had the best version of that meal. I had the pea soup appetizer that was amazing and the carrot cake at the end of the meal was one of the top 2 carrot cakes I’ve ever had. We almost cancelled because some reviews had it being quite there but are very happy we did not.
The restaurant was empty. The prices were very high and there were no sides included with the order. In a Friday night in aspen it was strange no one was there. Perhaps it’s the mediocre food snd high prices.
Service was great and server was lovely and could not have been more accommodating however other than steak and fries, all other dishes for lunch were mediocre at best, in particular lobster mac & cheese. Fish tacos were overstuffed and bland. Kale salad dressing also bland.
We skipped dessert but that menu looked fantastic, and the gluten free corn muffins to start were excellent.
Though prices are steep, portions are huge.

We’ve eaten everywhere in Aspen and in my opinion this is one of the best restaurants in the city. We received excellent service from the entire staff, and especially from our server John. The kitchen was very accommodating of food sensitivities. The food was delicious (highly recommend the bison steak) & the menu is appropriate regional fare - the kind of food I want to eat when I’m in the mountains. Great drink program with some very rare spirits, unique cocktail list, and large wine selection. Check it out, you won’t be disappointed.
Converted old ballroom in the st Regis. You can even still see the buffet bar. Service was mediocre. Food was subpar. Overall - not worth the price.
The service was so bad !!! One person in our group never even got their meal. So many huge missteps from the staff. Would not return!
Horrible service. We didn’t have a server the entire meal. Breakfast buffet was good but had to keep putting our empty plates on the table next to us because service was so poor.
This sadly felt every bit like a hotel restaurant. Food was good but the overall experience doesn't hold a candle to other Aspen hot spots.
Would not recommend. The service is the slowest I’ve ever experienced in my life. Our group of 10 sat down at 7 and our food didn’t come until 8:30. Absolutely unacceptable. Way overpriced for the lack of attention to customers.

The food was excellent. The bone in ribeye for two fed four easily. The pumpkin entree was delicious. We also really enjoyed the red velvet and s’mores desserts.
The food was very, very good — the meat (Bison & NY Strip) was prepared to perfection. And, the side of Mac & Cheese exceeded expectations.
The space is lovely — high-end casual elegance. And, the service was prompt and attentive.

The ambience is nice and chic. The menu is varied and the food is really good. The service was extraordinary and if I'm in Aspen again I would definitely pay another visit!
Menu selection small with very common items. Nothing interesting and it gets old fast if staying at hotel for a few days. Decor is supposedly new but totally unimpressive. Service was excellent. Go to Poppycocks in town for breakfast! Skip the $38 buffet that barely had any pastries and the toaster needed 3 tries to get a decent toast.

Very large room with no ambiance and basic decor feels like a ballroom turned into a restaurant.
The head waitress was very polite but not very adept. She did not have very much interest in our table. We asked the bartender to help us and he did. He helped expedite our simple order that took very long to arrive to our table. We had a time constraint and he helped us finished the meal.
The location is very pretty and we like the convenience of valet parking but the service needs serious attention.
