Very weird ambiance here; TOO DAMN DARK. Too dark to read the menu or see the food, which ended up being creepy at the end of the night...service was awkward, food was not very well prepared; broccoli underdone, sweet potato gnocchi chewy, the charcuterie board was skimpy and awkward. Meh. Skip it.
The staff was very attentive without being pushy. Great food, drinks, and music. I think of this as a place adults come to meet for drinks and have great conversation. I can’t wait to see the place packed after Covid.

We asked for vegan food. The server changed my husband's mind to something that was vegetarian. It had milk in it and my husband is lactose intolerant. It's a bummer that the server didn't know the difference between vegan and vegetarian.
Fun evening. Tried most item on the menu. All very good. Many items had an element of heat to them.
We sat at the bar and had so much fun. Our bartender was amazing and attentive. Will definitely be going back.

The drinks here are super expensive and service is mediocre, if that! The charcuterie board wasn’t worth the wood it came served on. The entrees were good, but there’s not much of a menu to choose from. There’s nothing here that makes it stand out and there are way too many powerhouses downtown that will make Varley forgettable!!

The food was amazing. Much better quality than expected. Just the classic cheeseburger and fries blew me away.
Everything was great. However, I felt as if people were not properly spaced out they seated another couple at the end of our table and it was uncomfortable.
We had a high top reservation, which ended up being at the bar, which is fine. Our server seemed to be overly occupied with something or someone other than us. We had to ask to get a food order going and then our appetizer came out with our food. We didn't even get asked if we wanted another round of drinks. It was a little weird. The drinks were interesting, the gnocchi was the best part of our meal hands down.
Drinks were very very good, the food was tasty albeit everything was luke warm at best. I’m assuming they bring it all from the kitchen of the restaurant next door and it gets cold on the way. I would certainly return, but probably just for cocktails.
That said, I’m assuming their restaurant is amazing.

A group of friends and I went to Varley for my birthday. The food was outstanding, the service was amazing and friendly. The Vibe made me feel like I was in Manhattan. I highly recommend coming here. Look forward to coming back soon!
We really enjoyed the food. The ordered the charcuterie board. Simple meats, but we really enjoyed the blue cheese (very stinky). We purchased a few drinks along the way with Varley Old Fashion. Very smooth, great bitters. The mojito and Margareta, both were very sweet. We finished with a portobello mushroom burger and the pork appetizer. They were amazing. The guacamole mousse added the extra flavor for the burger. The appetizer was a full of flavor and the cabbage had a great crunch.
There was a live DJ creating a great ambiance of indie electric mashups. The seating along the wall is very creative and super comfy.
Overall we would have enjoyed a little bit more of a cocktail bar.

Awesome! It was our first time there and I really loved it! The staff was awesome and the food was wonderful! My husband was vegan and they were very accommodating!
First, we were pleasantly surprised at the quality and presentation of the food; it was really exceptional, and reflected the good work of an excellent chef. The mixed reviews are simply related to this not being a restaurant so much as being a lounge/bar. As a consequence, the ambiance is sitting in a bar/lounge eating, rather than in a dining room, and was consequently very (very!) dim, the seating was typical-style lounge plush couches (with chairs), and there was techno house music playing in the background. The staff were perfectly pleasant and professional.
We tried Varley the Monday after Christmas because the other places we checked didn’t have any reservations available. So glad we ended up there! Upon initial look at the menu, we weren’t too excited about the options, but everything we tried was insanely good. The best food we’ve had in recent memory! Even the hamburger with arugula side salad was incredible, and neither my husband nor I normally care for arugula (spoiler: we ate it all). The hamburger was melt-in-your-mouth tender. The chorizo fried rice was equally surprising, and don’t leave without trying the gnocchi. We also tried the little shredded pork cracker things which were tasty little bites and the drinks were perfect as well! We’ve excitedly told many friend about this new place and are looking forward to going back!
This place is a great addition to Salt Lake City! The drinks were delicious. Came here with friends on a Saturday night! They were great at following Covid safety measures as well. Would definitely recommend.
Last minute Christmas Eve dinner... at first we weren’t sure about it but didn’t have many other options so we decided to give it a shot ... first drinks ... brilliant... next our food exceeded expectations!!! Hit the ball out of the park! Wonderful service... quiet and relaxing! Best of luck ... hats off to opening during Covid!!
The food was amazing! The mussels were perfection BUT it was intensely dark. Varley is a nightlife spot but this was at 7pm on Christmas Eve. There was no need to make it to the point where you could barely see the food in front of you. Overall, it was great but the lighting needs some work.
The food was okay. I honestly had high hopes and it wasn’t bad by any means but there is still room for improvement. The Muscles were delicious! The Pear and Goat cheese salad was mostly arugala. It was under dressed and hardly had anything else to it except a few pears and very little goat cheese. The chicken I added was necessary to make the salad actually have some substance. Drinks, food, music, and location were all amazing. Whether you are visiting SLC or local you have to try Varleys.
The atmosphere is just simple and inviting. You can actually hear your friends talking, but you can’t hear the music that well unless you’re in the middle of the place. Service was excellent. Food was great.
