We are dedicated to serving only USDA Prime steaks and the freshest seafood available.
Bar 21, located inside Vargas Cut & Catch is the perfect place to unwind with friends for happy hour or a handcrafted cocktail or glass of wine before or after catching a show at The Grand Opera House nearby.
Dress code strictly enforced in our dining room: No shorts or hats allowed. Collared shirts required for men.
Amazing service, great food, absolutely superb. And the Paco Chocolate Dome dessert was the perfect end to a perfect night! I can’t wait to go back!
This is absolutely a top tier restaurant and among the best of the best. The ambiance is warm and comforting as well as tasteful in all respects. The service is on a par with a Michelin rated restaurant. The staff is attentive, friendly without being overbearing. The food is not only of the highest quality but prepared perfectly. The wine list is extensive with some great finds. I have now dined there numerous times and it has been perfect every time. Highly recommended.

An anniversary. We had gluten free eaters. The device was excellent fulfilling all our special dietary needs... including a special anniversary dessert. And the food.... the food was superb. It truly was an experience where we felt special! Thank you!

BEST place on the island. Everything was superb. I had the crab legs and they were perfect. My husband had the ribeye and it was perfect. We also had the oysters which were great, and the bone marrow which was also done fabulously. Definitely the best quality and ambience. A MUST to try.
We went to Vargas for our 33rd Wedding Anniversary this past Labor Day Weekend and it was a lovely evening, with great food, and excellent service from our waiter Juan. I would recommend for that very special event in your life, they won't disappoint!
After many years of enjoying Rudy and Paco’s, I had very high expectations of Paco’s new restaurant. The service was impeccable. The wine list was well matched to the cuisine and reasonably priced. The bread was disappointing and the Caesar average. The lamb rack consisted of two double-bone partially Frenched ribs with almost a 50:50 fat to meat ratio. The duck fat chocolate cookies were so dry that the table was covered in exploded crumbs. I tasted no malt in the malted shake. I plan to stick with the original restaurant for the next year to give Vargas some time to raise the bar.

It was our first time here and can say we will not be back. The food was awful however, the service was excellent. I ordered the Alaskan King Crab and it absolutely had no flavor. My husband had a steak and his didn’t have flavor either. For appetizer I had lobster deviled eggs. They were average at best. And lastly, the duck fat cookies and shake were consistent with the rest of the meal - lackluster.
Perfect location for a special dinner. Wait staff was attentive and very personable. Service was top level with never an unpleasant surprise. Will certainly be back for next birthday dinner!
Always fantastic. You will not find a better service anywhere other than Rudy and Paco. Love both these places.
Excellent seafood tower. Host was a little snooty when we walked in though. There is a dress code and I saw he gave me an up and down look even though we were not violating the dress code. We were one of the few non white patrons.
We shared an appetizer, drinks and then the
Chefs mixed grill with filet scallops lobster and shrimp complimented wit 2 side sauces potatoes and asparagus. It was delicious. Our server was fabulous, accommodating and did not rush us. We will return and bring friends
This is definitely the fine dining experience in Galveston. Impeccable service, gorgeous decor, and a fine menu all prepared impeccably.

Paco and family have knocked it out out of the park with this place! I like steakhouses with the dark wood, but that would not fit this Vargas. When you make your reservation, ask for Peter. He is an outstanding waiter!! The fried green tomatoes are a must in any visit. I had the bone in filet and it was the best I have ever eaten. The chopped salad was amazing. My date had lamb chops. If you order those, I would suggest asking for the sauce to be served on the side. Finally, if your driving, don’t have the espresso martini! It will finish you off for the night! LOL! Seriously, this place is worth a visit or two or three or .......

Not bad for an upscale meal in Galveston but clearly overpriced. I was not impressed by the 22oz bone in ribeye, which I thought would be better considering the price and the name of this restaurant. It wasn’t as tender, juicy, or flavorful as I anticipated and there was almost no marbling. For medium rare, the color was spot on but the meat itself was tough. The lamb was great though, probably one of the best I’ve tried. Service was mediocre, nothing to rave about, but I expected better. Honestly would not come back here for steak and I’ve already been here twice.
My wife and I were celebrating our 40th Wedding Anniversary. The waitstaff service and food quality was outstanding!
Very attentive staff. Will take care of your every need. They do not rush you, but serve in a timely manner.

If you want to get away from the beach scene, Vargas is the place to go. It is a unique and wonderful addition to the upscale dining options in Galveston. The food was very good and the wait staff so attentive and pleasant ensuring we had a wonderful evening. We had seafood entrees and the bass special was amazing. The asparagus appetizer was delicious. The chocolate dome dessert was creative and yummy. We look forward to trying the steaks on our next visit.

This restaurant is tops in everything. One issue this time was we were seated by very noisy table/group. So it was difficult for our table to talk.
First visit to Vargas’ Cut & Catch, having eaten at Rudy & Paco’s many times we expected the service and food to be excellent. We were not disappointed in the least. Hostess seated us and our waiter quickly welcomed us. Shaddy was very attentive as well as leaving us alone to enjoy the evening. Both the Manager and Owner visited our table to make sure we were pleased. Highly recommend for a fine dining experience on Galveston.

What a gem at the strand area in Galveston, great Food, Service, Drinks! Service was outstanding and we will visit it again when in Galveston.
The same quality experience as Rudy and Paco’s with a different twist. Ambience, service,drinks, food are 5 star.
The biggest problem is now do we go to Cut & Catch or Rudy & Paco. That a decision hard to make. I guess it is do I want steak or seafood? Steak it is definitely Cut and Catch. Simpatico is definitely Rudy and Paco. That's a decision I can live with.
Great place! The service they had down to a fine science. The food was very good. Would highly recommend.
Sea Bass special was excellent and the soufflé for desert was excellent as well.
Food and service were both excellent! It was probably more than I would want to spend regularly, but not too much for a special occasion.
