Vargas Cut & Catch is a contemporary steakhouse situated in the heart of Galveston's historic downtown.
We are dedicated to serving only USDA Prime steaks and the freshest seafood available.
Bar 21, located inside Vargas Cut & Catch is the perfect place to unwind with friends for happy hour or a handcrafted cocktail or glass of wine before or after catching a show at The Grand Opera House nearby.
Dress code strictly enforced in our dining room: No shorts or hats allowed. Collared shirts required for men.
I live in Houston and took my wife to Galveston for dinner and a show at the Grand Opera House for her birthday. A friend who lives in Galveston recommended this restaurant and so we went. It was exceptional in all areas - food, service and ambiance. And when making the reservation via OpenTable, I noted that it was a birthday, but never said a word about it after arriving at the restaurant. But perfectly on queue the waiter brought a dessert with a lit candle at the end of the meal, which was the cap to the wonderful experience.
Excellent food and service. Price was on the high side based on comparable establishments.

The ambiance was perfect for a nice top notch dining experience. Everyone from the hostess to the manager were wonderful. I have never had such wonderful table service in my life. My husband and I both had the wagyu steaks and they were cooked to absolute perfect. I highly recommend Vargas Cut and Catch if you are looking for a top of the line dining.
Possibly the most enjoyable and delicious dinner we have ever had. Service was outstanding and ambience was perfection.

The restaurant is really No big deal, it does not have an upscale appearance at all.
The servers are all very friendly, that’s a plus. We (3 of us) went at 8pm on a Monday night, there were a couple more tables and a small private party of maybe 6 in a side room.
We ordered a bottle of Prosecco and a red wine to start. A family with a stroller/small child and a toddler arrived and for some reason were sat directly behind us, we were in a booth seat. The baby starts screaming the toddler is climbing the back of booth trying to get between my husband and I. Meanwhile the manager/owner (not sure) came out to greet the father of the family, apparently they were a big deal to the manager. We have children and grandchildren, kids are not the issue, we’re supposedly out for a nice evening at an upscale restaurant, not McDonalds. Did I mention the 3rd person in our party was not only a friend but a client?
We request a table change to another booth and receive it. We continued to have the same waiter, which I was glad of but I think he was so preoccupied with the baby table that we needed to pour our own wine, not good for fine dining.
The food was fine, nothing great, just fine. The lobster Mac was dried on top like it had been sitting. The risotto was ok, the steaks were ok. My rib eye had a little twang to it. We had more wine and a cookie/milk shake thing for dessert, it was good.
We had a drunk woman from the private party come to our table and insult our guest and my husband. She acted as though she knew our guest from the Galveston Country Club then proceeded to insult his hair, his accent and him for being from Scotland, she also insulted my husband for being from Scotland. We humored her until she moved on from our table.
Prior to our departure I approached the family with children and made certain they knew we thought they had lovely children and why we moved tables, strictly for a more client friendly setting.
We tipped generously, left not to return.
Excellent! Outstanding on every level!! Although the entertainment district has several ‘delicious’ eateries, it has long lacked a fine dining venue dedicated to serving its patrons a flavorful steak cooked to perfection and cuts like butter or perfectly seasoned sea fish that literally melts in your mouth. Vargas Cut & Catch brilliantly fills that gap. Our table of four shared wine from the extensive wine list and libations from the cozy bar, creative appetizers, sea bass, red snapper, filet Oscar and lamb chops. All mmmm incredible! Denise Vargas is as talented a restaurateur as her father and just as welcoming. Bravo Vargas family and congrats...you’ve done it again!!

Excellent meal, likely the best meal I have had at a restaurant, and my wife and I frequent good restaurants an a pretty regular basis. the lamb chops were perfectly cooked and the plumb sauce was superb. My wife's filet was perfectly cooked, and so flavorful. Creamed spinach, what can say, tremendous. we started with a seafood tower, that was beautiful to look at and scrumptious. It is not an inexpensive meal, but worth every penny in my opinion.
Beautiful restaurant! Steaks were very good. Only part that was disappointing was the service. There was a table of 5 across from us and we were only 2. Felt like waiter was distracted and spent more time with other diners. Ordered a salad and it was never served. Waiter came to our table and kept looking elsewhere when we were ordering or asking questions. Only half of tables were occupied.
Very nice experience. Great wait staff and love the servers bringing the tables entrees at same time.

After being seated, we waited about
15 minutes before anyone approached our table. Once Nicole realized we had been sitting without service, she immediately offered an appetizer on the house! Service from there.on was superb!
We went to Vargas Cut & Catch for the first time for my husband's birthday and it was amazing! We had a reservation and were seated right away. The restaurant is beautifully decorated and small enough to have a nice intimate feel. Our waiter Peter was very knowledgeable even though he said it was his first week. He provided top rate service. The food was fabulous! My husband started with the blue point oysters and I had the fried asparagus, both arrived quickly. For the entree we both had the lamb chops with a chipotle plum sauce that was to die for. We said we were too full for dessert so to celebrate my husband's birthday, they brought out a dish of sweet potato ice cream with a candle for us to share. It was awesome. This is definitely the place to celebrate a special occasion in Galveston.
My wife and I both love seafood, and the both Sea Bass and the Snapper were excellent! The wine list was varied and priced appropriately.
We will return for more, and maybe next time try the steaks.

Our server Army was very attentive
The ambiance is relaxed but sophisticated. While the food is excellent the service was impeccable! Served very formally but with a genuine friendliness. This is an upscale restaurant do don't expect "cheap or inexpensive" prices but it is truly a value in every respect.
Wonderful restaurant, great wine list and excellent service. I would highly recommend John and his wait staff. They are exceptional.
This may now be our favorite Galveston restaurant, even surpassing Rudy & Pacos!
My husband and I went there for our 20th anniversary and I have to say it was amazing. We enjoyed every minute. Friendly staff and the manager was very attentive. So thank you for our special night.

Without a doubt THE BEST restaurant I have ever been to in my life. Impeccable service. Extremely friendly, attentive and professional staff. The most delicious food, including the bread and butter. The domed chocolate dessert is to die for. This is a must experience for anyone and everyone who wants to experience what dining really means.

My husband and I, BOI, and west end home owners took my dad for what we hoped to be a wonderful and memorable evening but ended up so terribly disappointing. We ordered s $200 bottle of wine which still had not arrived until after we were almost through with our steaks. They made excuses for delay so we asked if we could have a different kind before we were finished with our steak. They were rude and unapologetic. I felt so bad for my dad because I wanted the evening to be so perfect. Finally I asked if we could just get the Caymus Wine by the glass because they still told us they’ve we’re trying to retrieve the wine from the private reserve, but mind you by this time we had finished our steak. They finally offered to bring us a individual glass and charged us $25 a glass. The crowning blow was my dad asked for his steak to go and they forgot and then told him it had already been thrown away and they were sorry. It was s nightmare—-So disappointing!!!
It was a wonderful experience. The steaks were amazing and the sides were great too. The wine list was extensive and reasonably priced. Our dessert was amazing and recommended to us by Paco himself when we ran into him across the street.
The food and service were both Amazing!
When we walked into the restaurant, no one really noticed us. We stood by the host stand for 7 minutes or so. Waitstaff passed us by, but no one took the time to say hello. Once we were seated, everything changed. Nicole took such great care of us. She anticipates every need, and even brought a shawl for my cold daughter. She made us feel important and wanted. I would return only for her immaculate service and kindness. Thank you for hiring such incredible individuals that truly make the guest experience one to remember
If you're a guy make sure you wear long pants..... I didn't but they actually loaned me a nice pair of slacks. It made for a humorous night, although personally a little embarassing. Great place, great food and service including the pants if you need them...
Rudy and Pacos is much better. I will stick to dinner reservations there.

The lights were very bright for dining at 9:00 pm it took the staff more than 15 minutes to address us for our drink order, the food was not mind blowing for the price but it was good.
Overall a good experience and we will probably return. Lobster deviled eggs appetizer was excellent. Ribeye had a nice flavor but slightly overcooked. Ordered it medium and it arrived medium well (if not past). I had also ordered a topping on the steak but it arrived without the topping. I did not complain and it was not billed so that wasn't a big deal to me. Wife ordered the salmon with risotto side. She enjoyed both. Ambiance and atmosphere were good. Except for the steak topping oversight, service was good as well. Nice bar, good drinks and wine selection.
I am a long time homeowner in Pirate’s Cove (over 30 years). I brought guests from Houston and Austin with me to Vargas. We all agreed that the service was a bit snooty and almost bothersome as we were trying to have a relaxing night visiting with each other. When we mentioned we were not extremely hungry and would probably just order some appetizers, I felt we were treated differently. I would be surprised if your restaurant does well over time. My friends and I appreciate good service, good food and a somewhat quiet place to eat. I’m just afraid your new restaurant is too “fancy” and “snooty” acting for the casual diner in Galveston. We did eat at your sister restaurant, Paco and Rudy’s the night before and had a wonderful experience.

I am writing this review for the actual customer who enjoyed the meal - I made the reservation to this restaurant. He said that it was a "nice experience" and that dinner "was quite excellent". I have heard nothing but positive things about this restaurant and would recommend it to others.
Food was delicious. I had the lobster bisque and Chilean seabass. Amazing. Our server Braden was outstanding.
