Vargas Cut & Catch is a contemporary steakhouse situated in the heart of Galveston's historic downtown.
We are dedicated to serving only USDA Prime steaks and the freshest seafood available.
Bar 21, located inside Vargas Cut & Catch is the perfect place to unwind with friends for happy hour or a handcrafted cocktail or glass of wine before or after catching a show at The Grand Opera House nearby.
Dress code strictly enforced in our dining room: No shorts or hats allowed. Collared shirts required for men.
We were celebrating our sixth (6th) month wedding anniversary. Reservations were made for two (2), for 8:15pm on Saturday, 11/16/19. Upon arrival, we were seated at a booth prepared for four (4); a TABLE for two (2) should have been the norm.....conducive to private and intimate conversation between two (2) persons. We have dined at this establishment many times, but never, never, again. We always order beef, but due to the late hour, we ordered grilled salmon, grilled asparagus and potatoes. When the waiter was informed that neither cocktails nor wine would be ordered, he abruptly and with obvious disappointment began to dismantle the table. A $6.00 plastic bottle of water was brought to our table and remained throughout the meal. The salmon was very undercooked and eight (8) asparagus stems arrived on a separate plate. The waiter returned once to refill glasses, but not again until the check was ordered. Both he and the owner's daughter cleared the table, but neither asked why such a small/expensive filet of salmon was not eaten. We decided not to complain...no reason to ruin the remainder of the evening. The noise was bouncing off the ceiling......the price tag for a very petite meal; $125.00.
What an amazing dinner! The special veal tomahawk along with the whole flounder stuffed with crab cake were amazing! The snapper with pasta is also one of our favorites all cooked to perfection. This was not only a birthday celebration but Denise and the amazing staff helped our daughter and son-in-law with a surprise gender reveal snuck in there! They are such an amazing group of employees always going above and beyond to make dinner there a truly special occasion.

This restaurant extremely exceeded my expectations and those at my table. The service was prestige and the food was magical in presentation and taste. I can’t wait to come back!
We were looking for a romantic dinner for our honeymoon and based on the pictures we thought Vargas would be perfect. It turned out to be a bit loud at times for it to really be romantic but the food and service were both amazing. Could not have asked for better.
Fun place, good food, pretty presentations, we are lucky on Galveston island to have several great restaurants.
It was all wonderful, but two things really stand out. First, we were about 30 min early for our reserved time but they seated us straight away. Second, we were trying some dishes which were new to us and the waiter helped us with our wine selection. It was a spot on perfect pairing. I highly recommend Vargas Cut & Catch.
The steak and lobster were probably the best food I have had in my LIFE. It is a very, very beautiful restaurant. They spared no expense on the décor. I am already planning my next dinner date there!

I have been there several times and each time everything is perfect ..... from the outstanding attentive service to the quality of the dish and the presentation.
Paco has out done himself. We love Rudy & Paco's but this newer restaurant takes top honors!
Wonderful food and service
It met our expectations, set by a previous outstanding visit, and then some. Our dinner could not have been better, the food was delicious and the service was perfect. And of course the desert was the bomb, the chocolate bomb! Can't wait to go back.

Impressive! From appetizer to dessert, all the dishes were exquisite and marvelous. We had oysters, soft-shell crab, and red snapper as well as a very creative dessert. Service was impeccable too! They made us feel at home and very gracious. This elegant restaurant can complete with any major cities' top restaurant in the world. We may have to book another trip to Galveston just to dine here. Bravo Vargas Cut & Catch!

Staff made us at home from the moment we stepped through the front door. The decor is beautiful, the room temperature was perfect. The wait staff was prompt, attentive and polite, even addressing me by my surname before taking our drink order. Our waiter Peter was top notch and addressed our questions completely. Before desert, our hostess Denise Vargas visited the table to introduce herself and at our request addressed the history of the restaurant, answered questions about her father and his other restaurant and their collaboration on this one. If we lived in Galveston, this would be a regular on our dining schedule.
As you would expect from the Vargas family, excellent dishes and unmatched service. Different menu with superb offerings. Beautiful restaurant. We will definitely return on our next trip to Galveston. Rudy, you hit a home run.

Belated anniversary dinner ,glad we waited and celebrated at this fine restaurant!
We booked through Opentable and upon arrival at the restaurant found out that shorts were not allowed. A dress code would not have been an issue at all if we knew about it ahead of time but there was no mention of a dress code on Opentable.
The hostesses were pleasant enough about it, but nonetheless we didn’t have the opportunity to have dinner at Vargas.
Clear communications across reservation platforms would have eliminated this situation and we would not have been disappointed.
We have always been big fans of Rudy and Paco Restaurant in Galveston with the ever-present Rudy leading us through the night as if we were being served absolutely delicious fare at his home. We previously talked with Rudy about his newer culinary inspiration Vargas Cut & Catch and recommended it to our friends who were visiting Galveston from the East Coast. They are experience world travelers with a keen eye for fine food and wine. We expected they would have a good experience there, but their report was far better than that! They told us that they experienced the best steak ever at Vargas…I mean EVER! We were so happy to hear that and pledged to go next time we were in Galveston.
We finally had the pleasure of experiencing Vargas ourselves this week, and it was everything we had hoped for and more! Other reviews have described the exceptional starters, salads, sides and desserts and they were all right on the money. The drinks were well prepared and the wine selection was not only superb but also quite well priced. Our server Braden was extraordinarily pleasant, knowledgeable and professional with the ability to provide deep background information on all of the menu items as well as the wine selections. The ambience and the entire meal were wonderful, but the star of the show was the Texas Akaushi Filet which we both ordered. The steak was served with a very flavorful char which was the prelude to a juicy tender interior cooked to perfection. This was truly the best steak we’ve ever experienced. If you’re anywhere even remotely close to Galveston and want to experience a world class dining experience, Vargas Cut & Catch is not to be missed!!!
For a special occasion we appreciate great food, attentive service, but highest on the list is ambiance.
At Vargas, all three were outstanding. Our waiter Juan Trevino, who had worked previously at Landrys for 10 years, went out of his way to ensure that we had a memorable evening, including taking pictures of us with Paco Vargas.

! Paid for Wagyu & another person in our party had the regular filet. Theirs was much better. Brussels sprouts just ok but the asparagus w/crab meat was good. Drinks were great. Service was great too just a little misleading on the recommendations.

The restaurant is beautiful, up to date and classy. The wall of steak knives catch your eye for sure. The wine selection is above par and pricing is perfectly on point. The steak did not disappoint and the serving sizes were perfect. My husband had the Chilean sea bass and it was flakey to our liking.

Our waiter John was attentive just enough and incredibly knowledgeable about Paco’s restaurant that it made the experience more personal.
we enjoyed our dinner here very much, however they did mess up on one of our side orders and when they brought it you could tell they rushed it and the vegetables were not cooked all the way through. other than that all of our food was delicious! My husband got the bone in rib-eye and i got the crab cakes! both very good!

Great food, excellent service. Freeway was shut down so I called to say we would be late. They couldn’t have been nicer about it and had our table waiting when we arrived nearly 45 minutes late. Will definitely go again!
It was very good, but almost too big. Not the same atmosphere and Rudy and Paco's, which is more intimate. The menu selections were very nice. The quality of the food and the service was excellent. You have to leave room for "The PACO Dome" for dessert. It was out of this world!!!
We celebrated my mother's birthday in style! It was my first visit to Vargas, but I know that since it's one of Paco's restaurants, it was going to be amazing. I was not disappointed. What an amazing meal! And the wine...what a list! Our server Sabrina was very knowledgeable and friendly. The restaurant is beautiful and the meal was fantastic. Wish I could be there every weekend!
The crab cake and surf and turf skewer were out of this world. The proteins were all cooked to perfection paired with delicious house made sauces. We also indulged and ordered 4 desserts to test them. The head pastry chef makes everything in house and the deserts are unique and delicious. It was truly unbelievable experience and worth a visit. Service was also excellent.
