For such an upscale place I was expecting much better service. Perhaps our server was having an off day but it was really subpar. We ordered the 32 oz steak and it was obviously massive but not worth 130 dollars. Overall the food was average, there was nothing memorable about it.
Overall, I did not think the quality of the food matched the high prices being charged. The bouillabaisse entree was bland and would have benefited from more seasoning. The Niçoise salad was small, the tuna was over cooked and the fingerling potatoes almost non-existent. Although the service was outstanding, I would likely not return, due to the mediocre quality of the food.
An excellent meal for my wife’s birthday. My wife had two appetizers which served as her meal. I had the prime ribs (huge piece of beef). Excellent. Service outstanding. Beautiful ambiance.

Service was slow. Both the soup and main course were cold when brought to the table. Based on our experience there are two much better choices for dining at the Fairmont.

We decided to treat ourselves to Sunday Brunch during our stay in the Banff area, and what a treat it was. The hotel is amazing and the Vermillion Room is lovely. The staff were attentive and friendly. There was a huge choice of different food - take your time to savour the flavours. Soft drinks, tea and coffee also included. Superb value for money! One of the highlights of our trip to Western Canada.
As might be expected at such an iconic location, the views from the Vermillion are incredible, which makes it a special place. However, the food was fair at best. Lacking in flavor and also, in the case of the chicken, dry and over cooked, we were quite disappointed in our main course meals. The desert (bread pudding) made up for some of that disappointment as it was very nice. Finally, the service was very good. If we were to return, it would be for the bread pudding on the veranda.
The weekend buffet is not what it use to be, food selection is down as well as the quality.
The foods are great so give 4 stars because cold crabs were very salty. We’ve been at the vermilion more often when we had one kid. Now with two kids I thought it would be difficult to enjoy so we seldom visit here, but we had great foods..... except we got the bar height table although I’d mentioned in my special request “two children.” It’s a buffet brunch, you need an easier access to get foods with children. I had to take the table since all of us were hungry. Otherwise great food and good service.
35th Anniversary brunch. Great selection of interesting dishes. Many veggie/eastern options. Had Benedict had tastes of everything. Would have been nice to have a window seat as requested but tables were all pulled away from windows for large parties. Only thing we did not like was dessert. All gelatin filler desserts and nothing for a chocolate lover which to me is the only reason to have dessert! Loved the espresso included though and the sparkling rose.
We went here for brunch to celebrate my in-laws’ 50th anniversary and they seated us in front of the window with an extraordinary view of the mountains. The food selection is marvelous and the dessert selection is the highlight. I honestly didn’t eat for the rest of the day because I ate so much there and the food was so good. Service was excellent and very attentive.
We did not think meal was in in any way good enough when you consider the prestige of the Banff springs hotel.
I have got a delicious entree which was the bison bourguignon, it was really good and very tasty. The service were perfect, and thanks again for the table by the windows, beautiful restaurant and view
Very good lunch. We both had the perfectly delicious French Onion Soup. My husband had the ahi tuna Nicoise salad, which was beautifully presented and very delicious. I had a chicken salad sandwich on a croissant served with a side salad. The chicken salad was perfectly dressed without all the gooey mayonnaise. It would have been even better with some chopped pecans and a few more grapes. The side salad was lightly dressed. We requested a table by the window and enjoyed the view. Service was attentive and the coffee excellent. Overall would recommend Lunch.
Very nice surroundings and the tables were well spread out which made table conversation very easy. Food was good and there was a lot of variety. Perhaps 25% more expensive than it should be. I likely would not go back unless it's a very special occasion.
Brunch at the Banff Springs use to be on my ‘you must do list’ when asked by visitors to Calgary what they should do during their stay. And the view of the mountains from the Vermillion Room dining room is still spectacular but there is nothing worse than cold food and sadly that’s what we experienced this time. The choice of brunch selections is still good but something needs to be done to ensure the food is still hot when you get back to your table. We also made a reservation months in advance only to find we were pulling tables together when we arrived to ensure we were all seated together. Great service as always but I left disappointed this time.

My family and I ate brunch here on September 1st. Overall, I was pretty underwhelmed. The chicken pot pie, wild game dish and a seafood dish were very salty. Many foods that should have been hot were only lukewarm or at room temperature. I guess you pay for the location. That was the first and last time I'll be eating brunch in the Vermilion room.
We have been to this restaurant many times so wanted to share the experience with out of town guests. What a disappointment! Food was cold, service was poor (had to ask for coffee). Found chicken pot pie in place of bread pudding with the desserts. I advised a server but she seemed disinterested. Not what we expected for the price. Won’t go back!

We had a wonderful anniversary dinner at the Vermillion Room. The variety of dishes available was interesting and everything we tried was delicious. Our waitress was attentive without rushing us and gave helpful answers to menu questions.
On a group tour but had s evening off from tour . Definitely coming back!!

Server didn’t want to pour customers orange juice and advise us do it ourselves. This never happened before. 2 to 3 weeks ago I was there and the service was great, but not this weekend
If you want to enjoy a great meal, a spectacular view of the mountains right outside of their backyard this is the place to be.
Brunch at The Vermillion Room in Banff Springs Fairmont was delightful and memorable. Selection of food was exceptional as well as the friendly service. I would highly recommend it for families as well as adult parties . This is a special treat you will not regret.

Had a very nice supper on August 20 with a special friend. Food was great but found that noise level was a bit too high for a fairly expensive restaurant. Tables etc. felt kind of cafeteria style

Have been in previous years, and this was our least favourite experience yet. Food selection was poor, especially for catering for gluten-free. Prices have gone up and food has gone down unfortunately. Server was very nice and staff was quite helpful.
This is for the weekend brunch only. The selection was excellent. From breakfast food (egg benedicts, waffle, bacon, sausages, omelette bar), to meat (chicken, pork, beef and leg of lamb) to seafood (shrimp, crab legs, mussels and etc. Charcuterie and a dessert spread. We were lucky to get a window seat. The view was fantastic. Service was excellent too.
