Portions were made for giants, and the food taste wasn't very good given the expectations unfortunately. The service was good and professional.
We had a lovely meal . A little overpriced for me personally . As I can get a good cut of steak just like it at other places for half the price . I guess it’s in the fairmont chain so everything is usually overpriced . Service was amazing . Nice atmosphere. Didn’t have to get too dressed up and also could if you wanted . Give it a try for an overall good experience.

Service was subpar, went 10-15 without a coffee refill and empty plates. We’ve really enjoyed the buffet in the past but new system is not well thought out and completely over prized for the quality. Definitely not worth the $50/person.
The quality of the food is not there for the price, I never thought the buffet was amazing but at least there was an abundance of options, now with the Covid menu you choose from various items that are all you can eat but they were all lacking flavour and quality, the only thing I wanted was the cinnamon bun that you had to pay an extra $12 for on top of the $50 all you can eat fee.

Food was outstanding. Environment gorgeous. Service was underwhelming our first night. Our server was an older man who did not elevate our experience....no table talk or sense of humour. We went back the next evening, and had an another amazing night, different server GREAT EXPERIENCE. She made it a 10. Love the human connection as well as food and ambiance!

I would not recommend it. It was a our anniversary - and we were disappointed. We never complain about a restaurant, but the cost of the meal was $170. - we had the thanksgiving dinner. The salad consisted of greens - and a few bits of yams. (and $65.00?) Our entree was sufficient - but really, two carrots? Dessert - have had better in a cafeteria. I understand, in these times, restaurants cannot use table cloths - or nice settings, however ambience was also disappointing. I was grateful we had a gift certificate for a portion of the meal. We will not return, nor would we recommend to anyone.
While visiting Banff, we decided to celebrate Thanksgiving at the iconic Banff Springs Hotel and had high expectations for an amazing evening. Unfortunately the evening turned out to be a huge disappointment. The Vermilion Room is a beautiful French bistro, with an upscale cafeteria feel. Unfortunately the majestic views of the Rocky Mountains are blocked by the bar, a strange layout. From the beginning of the evening our server seemed disconnected, although he wasn’t overly busy. We ordered the set turkey dinner menu with a delicious green salad with nuts and pumpkin. The beautiful turkey dinner arrived lukewarm and not once did our server come by to see if we were enjoying our meal or if we needed anything. We sat for about 30 minutes with our plates still on the table when we finally flagged down the manager and asked for our dessert to go. The manager was very gracious but it didn’t make up for the disappointing evening. If you are looking for a casual dining experience with subpar service then this is the restaurant for you.
Great cocktails/wine list - steaks were cooked perfectly and everything tasted great. Highly recommend a drink at Rundle Lounge afterwards.
Very disappointed for celebrating birthdays. The watercress salad and in house ginger ale were fantastic. Then everything went sour. My French onion soup was blah. Onions too carmalized , croutons tough, and hardly any cheese . Our 2 burgers were over salty, too much , same with added braised short ribs, hardly ate any. My caesar salad had no dressing, a rabbit would have been happy. Advised the waitress of a one star meal and received no compensation . Bill was for 131.62 including tip... A&W burgers made this look sick. Glass of wine ok....Beware of their prices, highway robbery . Was going to order oysters but at $32. for 6 and $60. for 12 forget it .. 1/2bottle of wine outrageous.Won't' be going to the Springs again . Will be contacting the Manager of Vermillion and from now on will eat at the Rimrock...
Impeccable food done to perfection. The menu was less rich compared to the pre COVID buffet.
There is really not much more to say. This experience Was perfect from every sense of the word.

A total must while in Banff. If you only eat one meal, go have the brunch and wander around the castle. It’s stunning!

Come hungry to get your values worth. The coffee wasn’t very good but the eggs were amazing. The ambience alone make it worth coming. The Covid rules really slows down the service but the staff does a good job keeping Up with your table.

For my 50th birthday we were able to arrange a private room and our own server for the evening. It was a great evening. The only complaint was the bar...we were brought an incorrect bottle of wine, and one of the other beverages was wrong. And they never got corrected. Other than that it was a great evening!
The place was overbooked, minimal waitstaff. Waiting 30+ minutes for drinks, although we saw a manager go to the next table over and offer refills. We sat there with water and menus and no service. We did not end up eating because the food offered for the price was just not worth it. All you can eat eggs at the Banff Springs is still just eggs and at $49 per person I think I'll just go to Smitty's.

Great food selection. There is a kids menu which has a good variety also. Expensive, but you are more paying for atmosphere, which cannot be compared. We love this place!
Server showed no interest in being personable or engaging. We are friendly, social humans and I'm in the service industry and server had a less than optimal attitude. Food was good, especially the sauce in the linguine, but way over priced. Would not recommend or go back.

What we thought would be a highlight of our stay turned out to be very disappointing. The major disappointment was the food. We didn’t finish and didn’t stay for dessert.
Service was very slow and unattentive. Food was very poor and not seasoned at all.
When I asked for salt, I was given small packets as though I was at a fast food restaurant. Regardless of COVID-19, I think the restaurant could come up with a better method of presentation than that. Perhaps consider kosher salt in ramekin if you are looking to limit touch points/cut down on sanitization. Embarrassing for the price point and location. My expectations were a lot higher for the Fairmont.
Typical hotel-buffet ambience. Good option for breakfast or brunch, but a terrible pick for dinner or date-night. Expensive for the low-level quality of food and drinks. My $42 seafood pasta literally had 1 shrimp cut in half and a handful of tiny scallops. Huge disappointment for our anniversary.
The ambiance and location are amazing! You can't beat the mountain views! I wouldn't go back though. The service was very slow. The new Covid Sunday "Brunch" needs some adjustments. Brunch did not include any salad items or raw veggies nor was their much fresh fruit. Loved the Mannequin's at the empty tables! They were great!
Table we were shown to had the worlds worst chairs! They had no backs on them. Not good for anyone to sit on let alone my 70 year old Mom who just had a hip replacement! Thankfully, we were able to switch to a regular tale with regular comfortable chairs!
