Our server was a lovely French woman. We received absolutely stellar service. Our meals were delivered within 10 minutes of ordering (the tenderloin and bison- both cooked perfectly). Both meals were phenomenal. Best steak I’ve ever had and also the best bison. The live singer that was performing was so amazing and added to the lovely atmosphere. We ordered the creme brûlée and Napoleon for dessert and basically licked the plates. I cannot wait to dine there again!

The service was okay, but the kitchen was slammed and it took about an hour to get our food. They were very helpful with the bill, though and the dinner was scrumptious! Thank you, Open Table and The Vermillion Room.
Fantastic spot for happy hour. Great view of the mountains. It was a treat to watch people skating on the outdoor rink. The service was fantastic and enjoyable to talk with the staff who are from all over the world.
I love the service and foods at Vermillon! Foods were the best especially the snow crab. We love the castle feel and the beautiful mountains filled with ice surrounding it.
Last meal with good friends who are moving out of the country!
We were so well looked after by Danny. He went above and beyond for my family and the special occasional of my birthday! The food was amazing and we all had a lovely time.
We had Daniel as our server. He was very professional, courteous, and had a sense of humour. Service was top notch. The food was amazing. Cooked to perfection. We shared the prime rib with mushrooms and pasta. So good! I highly recommend and we will be back!!
Food selections were mediocre as we were expecting better brunch buffet variety than any other hotel in Calgary. It was very expensive and mostly it wasn’t refilled in a timely manner and maybe it’s because it’s past 1pm so they were taking time to refill the food. We were just disappointed overall. Service was good and the hostess did a great job in seating people. We might give it a try again as this was not my first visit in the restaurant.

Overall a nice experience. We felt a bit ignored by our server overall, but by no means was he bad. The escargot was fantastic and overall everything else was solid. A little pricey for me.
Truffle fries are amazing, duck was perfectly done and delicious! Happy hour red wine was great!
Aw man I really wanted to love this place but to be honest I wasn’t blown away. The restaurant itself was very nice. Great ambiance, great decor. But the food was average for the price.
The Vermillion Room breathes 1920's era class and looks stunning. The service was fantastic, and the selection of food items from the brunch buffet was far superior to most brunch buffets. In addition to a carvery station with striploin and porchetta, there were dishes such as beef bourginon, coq au vin, and braised lamb stew. Cooked to order eggs and omelettes and 3 varieties of eggs benny, and all the usual breakfast items, fresh fruit etc. The desserts don't just look nice - they are packed full of flavour and are clearly made by a very experienced pastry chef on-site.
Treat yourself to the best brunch in Banff - it's pricey (and throwing in a welcome mimosa might be a nice touch given the $52/pp price tag) - but it's a lovely experience.

The bistro style sitting is not enough comfortable to pass all the time required to enjoy the buffet.
We found that the price for our daughter (aged of 13 years old) is really to high.
A fabulous restaurant, at a fabulous hotel and setting. Please go there for brunch, you will not be disappointed. Extremely professional service personnel.
We were greeted warmly by the hostess & given a quick tour as we were directed to our seats. The waitress came along quickly to take our drink order. The food was well presented & tasted great! Not too keen on the French background music, but I guess the intention was to establish a sophisticated ambiance. Beautiful setting with the large windows & snow falling outside. It took far too long for my wife to get an Eggs Benedict without the bacon and it was under-cooked in the end. Waffles were not particularly flavorful and rather coarse in texture. Roast beef was very fatty so I passed on that. Beef medallions were a wonderful substitute. Very lean, flavorful & perfectly cooked. Everything else we tried was wonderfully flavorful & cooked to perfection. Our server was super attentive and very pleasant. Impossible to eat $54 worth of food, but a nice treat!
Best brunch we’ve ever had!!! The quality and selection of food was outstanding. Also, many options for those who are gluten free, dairy free, nut free, etc. A splurge, but worth every penny. Will be back and will recommend.
We had an excellent dining experience at the Vermilion Room. Our waiter, Antonio, was awesome and catered to our every need. We were celebrating our wedding anniversary and he went out of his way to make us feel special. The recent remodeling kept with the theme of the hotel. The only change I would make is the bar which takes up most of the tables which were by the window which has an awesome view of the mountains. Also, I think the menu is very overpriced for the quality of the food.
The view is lovely but hit quality of the food has deteriorated. I’ll still come but will go with the smaller restaurant. For the price point I wasn’t happy with the quality of the food.
Food is over priced and not good. I had duck which was sooo salty I could not finish the meal. Husband had fish which was not very firm sea bass and appeared not to be fresh. I have had the buffet breakfast before and was disappointed as the quality seems to have deteriorated. Dinner for 2 was approx $150.00 which did not include dessert and just one glass of wine. Service was excellent.
Yes for the food, it was amazing, but not for the service. Our server Trevor didn't inform us on the "3 courses meal", didn't ask if we had any allergy or food intolerances, didn't offer more water for the whole time we have been there, he came only once to look if everything was okay, didn't ask if we wanted another bottle of wine and when it was the moment to pay, he dropped the bill and reseted his ENTIRE section before coming back to see us.

The service was great however it took 30 minutes to get our bill and pay. I have have the pepper crusted tenderloin... I know it’s pepper crusted but it was a little over powering and took away from the excellent cut of steak. By the end I was taking a bit and then a sip of water to cool down my mouth.
We ordered the Thanksgiving special dinner and the food was good and artfully presented. Unfortunately my entree wasn’t hot - in fact it was barely warm. That said, the food tasted very good and the service was excellent.
For such an upscale place I was expecting much better service. Perhaps our server was having an off day but it was really subpar. We ordered the 32 oz steak and it was obviously massive but not worth 130 dollars. Overall the food was average, there was nothing memorable about it.
Overall, I did not think the quality of the food matched the high prices being charged. The bouillabaisse entree was bland and would have benefited from more seasoning. The Niçoise salad was small, the tuna was over cooked and the fingerling potatoes almost non-existent. Although the service was outstanding, I would likely not return, due to the mediocre quality of the food.
An excellent meal for my wife’s birthday. My wife had two appetizers which served as her meal. I had the prime ribs (huge piece of beef). Excellent. Service outstanding. Beautiful ambiance.

Service was slow. Both the soup and main course were cold when brought to the table. Based on our experience there are two much better choices for dining at the Fairmont.

We decided to treat ourselves to Sunday Brunch during our stay in the Banff area, and what a treat it was. The hotel is amazing and the Vermillion Room is lovely. The staff were attentive and friendly. There was a huge choice of different food - take your time to savour the flavours. Soft drinks, tea and coffee also included. Superb value for money! One of the highlights of our trip to Western Canada.
As might be expected at such an iconic location, the views from the Vermillion are incredible, which makes it a special place. However, the food was fair at best. Lacking in flavor and also, in the case of the chicken, dry and over cooked, we were quite disappointed in our main course meals. The desert (bread pudding) made up for some of that disappointment as it was very nice. Finally, the service was very good. If we were to return, it would be for the bread pudding on the veranda.
