This special smoked tea from the Fujian Province has a distinctive flavor sometimes referred to as tarry. To obtain this distinctive flavor, the leaves are first withered over fires pine or cypress wood. After pan-frying and rolling, they are pressed into wooden barrels and covered with cloth to ferment until they give off a pleasant fragrance. The leaves are fired again and rolled into taut strips. Then they are placed in bamboo baskets and hung on wooden racks over smoking pine fires to dry and absorb the smoke flavor. Purple tea is a medium bodied, fairly light tea with a well-rounded subtle sweet woodsy finish. It is the result 25 years research to develop a new tea variety that is drought, disease and frost resistant. Kenyan purple tea is grown along the equator at high altitudes (4500-7500 feet above sea level). This region also receives 1200-1400mm rainfall annually which is spread throughout the year. The equatorial climate and the intense sunlight exposure it receives, causes the plant to produce higher levels antioxidants and lower caffeine levels compared to black and green teas with the extra added benefit anthocyanins – a type antioxidant found in super foods and fruits like red berries and beets.These anthocyanins are responsible for the purple pigmentation on the tea leaves and also serve to protect the purple tea leaves from damage. Organic Gyokuru is made according to exacting specifications that date to Japan's Edo period (1603-1868). To start with, Gyokuro is produced only from hand-plucked tea grown between March and April when tea bushes flush, pushing up fresh new shoots. For the first three weeks production, the bushes are shaded with bamboo and straw, forcing the plants to produce more chlorophyll, deepening the flavor the leaf. About two weeks after the shading has been removed, the tea is plucked. Extreme care is taken to select only leaves that are smaller than one inch in size. Anything larger and the tea will lose its fragrance and pliable, tender qualities. Next, the leaves are gently bruised and lightly steamed resulting in a fine, dark leaf with pungent depth and luscious green character. Purple tea is a medium bodied, fairly light tea with a well-rounded subtle sweet woodsy finish. This very special tea is only made during the first 3 weeks of April in Pinglin township in northern Taiwan. These tea bushes grow only in a select few tracts of land around the town. The processing of Pouchong falls somewhere between oolong and unfermented green tea. After plucking, the fresh leaf is allowed to oxidize for a very limited time before drying. Then the leaves are wrapped in paper during the drying process providing an exceptional brew. This tea is fresh and lively with a slight astringent finish.
