The Seeker is part of Interstate Inn, a newly reimagined 1960s roadside Inn in Stephenville, Texas. Serving the Modern Texas Cuisine that Chef Pyles created, the menu has many of his classic dishes. Celebrating my parents 63rd anniversary. They went to chef Pyles‘ restaurant in Dallas many years ago. The heaven and hell cake does not compare to its namesake, but everything we had was delicious. The banana brûlée tostadas were amazing

Incredible meal, incredible vibe! We had such a fantastic experience at The Seeker. Everything we ordered was absolutely delicious and beautifully presented. We started with the Hell’s Eggs, a fun and flavorful twist on deviled eggs that really set the tone for the night. The shrimp ceviche was fresh, bright, and perfectly balanced. For mains, both the ribeye and the quail were cooked to perfection, juicy, tender, and packed with flavor. And I have to mention the Old Fashioned, one of the best I’ve had anywhere. The atmosphere was warm and inviting, and the service was attentive without being overbearing. This place is truly a gem in Stephenville. We’ll definitely be back!

Our server Emme was very knowledgeable and attentive. She was a delight and offered suggestions on her favorites. Lovely atmosphere and we will definitely be back for a wine dinner with Chef Stephen Pyles!

Wonderful experience. The cowboy ribeye, ceasar salad and heaven & hell cake were all just like the good old Star Canyon and SP days. It was awesome to see Stephan and spend some time with him also.

Really great restaurant experience, food great with interesting combinations. Noise level great for catching up with friends for a date. Small negatives were the limited by the glass wine selections and $8.00 Topo Chico.

We had a wonderful evening...we have been big Stephen Pyles fans over the years going all the way back to Star Canyon in Dallas so new it would be lovely. And it was.

Celebrated a birthday with friends and family at the Seeker. It was my second visit, but a first for a few in our group. Waverly was our server and he was outstanding. He was friendly, had suggestions when we asked and was so attentive to our party. The food was incredible. The service was outstanding. So thankful to have this gem of a place in Stephenville.

For lil’ ole Stephenville, the Seeker delivers an absolutely marvelous dining experience. Our table was even visited by Chef Pyles himself, and his quail was as excellent as ever. Large, elaborately prepared dishes at bargain prices! What’s not to love?
