About The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Cosmo Goss have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

Publican Quality Meats, located just across the street from the Publican, can accommodate up to 38 for a Seated Dinner, up to 75 for a Cocktail Reception, or up to 24 at the Chef's Prep Table. The Publican can accommodate up to 125 for seated luncheons, or evening Buyouts and 175 for Receptions.

I've been here many times, and every time is such a treat. The food is impeccable, as is the service. We felt cared for and not at all rushed. The ambiance strikes that hard-to-reach balance of elegant and comfortable. Everything we had was seasonal and delicious. I definitely recommend it for dates and special occasions, or just a pick-me-up for a drab day. Try a reservation to get one of the booth seats!
Been here many times for dinner and always loved it. This was my first time for brunch. Just perfect. Two of us had the mushroom scramble, which was light and fluffy and full of flavor, and one had a cajun sausage dish...omg. I try not to eat too much meat, so I would never have ordered this, but I wish I had! It was outstanding. We also shared hash browns, a cinnamon sticky bun and fabulous coffee. All wonderful.
I came in with my cousin and his girlfriend from Denver for brunch. Kevin the manager was just amazing, he came to our table chatted with us and made us all feel like we were the only ones there. Zach our server was friendly and knowledgeable about the menu, great service!! Thanks again Publican! Food was amazing!!!!
Service and food was great! disappointing however that the online menu was completely inaccurate, for the second time the past few months. So if there is something you've got your heart set on, or have a picky eater with you, call ahead and check! I do wish they would update it daily or add a disclaimer that the online menu is just an example.

Great place. They change their menu frequently and unfortunately this was not the best we've ever had. Nothing bad, but the arctic char and pork belly were just a little straightforward for the price. Always fun to try totally new items every time we come, though.
Really fun environment. We had an earlier reservation and they seemed to be using loud music to compensate for the restaurant not being filled. Really loud. By 7:15 the restaurant had filled more and they dialed down the music- the buzz from the tables was just right to feel energy but not have to yell across your table to be heard. We loved the family style service as we could not have picked just a couple of items to share. The home made pickles were sweet and tasty and a great way to start. The avocado salad was a real avocado salad (not lettuce with some avocado) and the mix of other ingredients really brought the dish together. Then there were the bbq carrots. WOW. Expecting carrots glazed in bbq sauce but no, these are bbq’d (think smoky, charcoal grilled steak) carrots. Just incredible. Everyone at the table looked around at first bite and did a - “did I just taste that?!” look. The house made ham was of course delicious and it’s good they have the “taste 3” options wouldn’t want to have to pick. Seems strange to have bread as something to order but do it- again there’s a taste 3 for the homemade butter, white cheddar pimento spread, and muhammara spread. The mussels were perfect and served with a baguette for dipping up the broth- it was either that or give us straws. The pancetta was meaty with great toppings. Deserts were great too. The egg nog salted carmel ice cream was a great finish. We will be back.
Could order only the $75 fixed menu, which we didn't know ahead of time. We were also seated at a massive table with a bunch of strangers despite booths being open and having a reservation, which we didn't know would happen ahead of time. Our server was quite unsympathetic to the fact we just wanted a dessert and some drinks, shrugging and walking away. Noise level was intolerable, though that isn't directly the restaurant's fault.
This was New Year's Eve, but man. At least ask the kitchen to make an exception for someone wanting just a dessert and drinks.
My husband and I met another couple for dinner on New Years Eve. We had a wonderful evening with amazing food. The menu was fixed for the holiday and I was not disappointed, in fact, I rather enjoyed not having to choose. Our waiter, Chad, was very friendly and helpful. All around lovely experience.
We ate here for Sunday brunch. It was super busy, we had a bit of a wait past our reservation time to be seated. While I have no major complaints (food was alright, not too expensive), the volume level and the cramped space make it unlikely I’d return here.
It is impossible to please everyone, I understand that. This is definitely a subjective review but unfortunately if you don’t eat pork, there aren’t a lot of choices for you(at least for brunch). My wife and I basically left there still hungry because all that was left to choose from was a salad or French toast. Although the food was good I’m not too certain it was worth the cost. Service was ok, nothing great about it but nothing bad either. Atmosphere was loud (not saying that is a problem) like most restaurants as it certainly was not fine dining. Which again, is not a bad thing. I would say I was underwhelmed given all the hype and recommendations we were given about The Publican. I wouldn’t go back for brunch but maybe dinner if their menu expands and caters to a larger palate.
Without a doubt one of our favorite brunch spots in Chicago. The menu tends to be meat focused, but is always creative and fresh. With that being said, my wife prefers mostly vegetarian meals (though she is not vegetarian) and this is one of her favorite restaurants. We will definitely keep coming back.
Thought the food was great, I would say the half farm chicken is enough for two. The cauliflower and carrot sides were amazing. Place was packed on a Saturday night. The experience of large communal tables was a plus as several other diners chatted with us and made recommendations. Would definitely go back!
Amazing food. The grilled octopus (imported from Greece) was better than the grilled octopus we had while we were in Greece last month. Beef cooked to perfection. Everything was delicious. Wait staff very knowledgeable, and attentive but not in your face every 5 seconds. Definitely recommend.
