About The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Cosmo Goss have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

Publican Quality Meats, located just across the street from the Publican, can accommodate up to 38 for a Seated Dinner, up to 75 for a Cocktail Reception, or up to 24 at the Chef's Prep Table. The Publican can accommodate up to 125 for seated luncheons, or evening Buyouts and 175 for Receptions.

Nick was our server, and he was amazing! I think he dared us to order the chef's choice, and I'm pretty sure he was standing with the chef as the plates kept coming, and they knew they beat us! Every dish was exactly what you didn't even know you wanted! It was so much, the only thing we could do was concede defeat and roll home! Worth every penny for amount of food, service and the overall experience!
The Publican has a well-done brunch menu that is not to miss. We had the crispiest hash browns and the house-made Nutella with grilled baguette was great. The egg dishes were phenomenal but our highlight was the cheesy spicy pork rinds. Whatever you do, do not forget to order those!
I️ have to say, I️ was thoroughly disappointed in the service at the Publican. My husband and I had been here years ago and remember it being a great experience, that was not the case last night. We brought our baby, and you would think we were asking for the world by needing a safe spot to put his car seat. They asked that we put him in the window sill? No thank you... we were then sat smack in the middle of a community table.. again, with a baby in a car seat.. not exactly convenient. I️ should also add that we made a reservation for 5:30 and when we arrived the place was dead. There was no reason we couldn’t have been sat at a table in the corner. Now for the menus, we sat down at 5:19, 11 minutes before the dinner menu came out. You would think that being so close they could offer the 5:30, dinner menu, but nope! We had to wait until exactly 5:30. Next, One of the guests we were dining with asked for a drink from the bar without alcohol, and our waiter told us that wasn’t possible! Are you kidding me??? I️ do not remember this place having so many rules, it makes for a really lousy dining experience. The food was good but honestly, this is chicago, the food HAS to be good. I️ will definitely not be back, due to the absolutely poor customer service.
The drawback is the seating. Your seated at tables with other people with very little room in between. Several people get seated and asked to be moved it happened quite a bit. It’s very difficult to communicate with your guest as you have to lean forward and talk quite loudly and you hear everyone else’s conversation. At the end you get used to I guess. The food certainly made up for it. If your going for food great if your going to talk not great at all. I wouldn’t go back because of the seating. And yes there were tables that you could sit at in the middle but there were few.
My husband and I enjoyed a fantastic anniversary dinner at The Publican – we ordered the chef’s tasting menu and it was phenomenal. The range of flavors, the balance of spice, fresh ingredients, and the inventive seafood, veggie, pork, duck, and fruit dishes was truly memorable. (Incredible service from a uniformly high level of non-intrusive staff made the experience all the more enjoyable.)
We really enjoyed our dinner. There is a great selection of cocktails and an extensive beer list. The food selection is filled with a variety of vegetables and a wide selection of ham. I jokingly referred to the restaurant as 'part of the farm-to-table revolution'. This person thought I was being serious but one could make this claim based upon the diverse menu ala Portlandia and the vibe if the restaurant. Really enjoyed it!
We ordered way too much food but everything was incredible. The mussels were outstanding. For appetizers, we had the pate and beet salad. For entrees, we had the ribs and half chicken with sausage. Everything was cooked perfectly and absolutely delicious. We have been to the Publican several times for brunch and dinners and they continue to blow me away with their food. We are very fortunately to live so close to such a great restaurant!
This place has shared seating which I don’t mind, however when it’s shared seating and loud I would expect the place to be casual dining. The way our food came out made it seem like it was Alinea type of fine dining where you have to wait for each course. Unlike Alinea this place is so slow! The time in between each item that was served was a good 30 mins. We ordered 2 appetizers, 2 fish items, and 1 sirloin. We came in at 6:30 we got our 2 app items and were waiting for our third at 7:30. The table next to us came after us and ordered 15 mins after us already had 4 dishes. I complained to the waiter about that and he said they were on the chef’s tasting menu so their food came out faster. Which did not make sense bc they had to cook it too unless the chef tasting menu is just heating up and they don’t have to wait. Our food only then came out at a normal pace after I complained. We initially thought when the waiter explained that it was family style that we would get a bulk of our food out at the same time. If you’re hungry don’t go to this place. It’s slow and they serve one item at a time. I always heard that this place is good but the bad service made me not enjoy the food. We went on a Monday and it was not busy. I wonder how bad service would be on a weekend.
Disappointing food. Some very good and favorable, some obviously trying too hard to be cool. Emphasis on Belgium and sour beers. The famous chicken is good but no better than your own organic chicken brined and then baked with some french fries. Not a single green vegetable on the menu. That was disappointing. Inedible chicken pate-- it was sour and clearly past its prime. Mixologist seems to have some good ideas and capabilities. This is a place to go if folks like the new beers and want to sit around a table with friends and strangers. I like that part-- eating banquet table style allows some interaction. Very busy, very popular, so I'm sure I'm in the minority.
Wonderfully fresh oysters followed by an extremely generous tasting menu! The tasting menu was very reasonably priced at $65 and I️ felt like I️ was served at least a $100 sampling of the kitchens best dishes The rilettes, boudin, tempura sweet potato were stand outs. Dessert was an amazing pear and apple crumble with a large serving of cinnamon raisin ice cream.
As always the food was amazing it was a loud busy night but that’s what u expect at Publican, but our server wasn’t good this time.... I work at another starred restaurant in Fulton Market so I’m pretty aware of good service and I watched our server chat with 2 other servers in the service station for our entire visit. I had to ask the back waiter twice for him to come over and as soon as he was done he’d go back and chat more.... honestly if I hadn’t asked for him the only times he would’ve come back after taking our order would’ve been to drop off the bill. I expect more from this restaurant company. I wish I remembered his name but I don’t...
I’m probably the wrong demographic for the Publican, but I’d heard great things about the food.
Overall the food was just good, not great or special. We had a charcuterie platter to share, ribs and the rotisserie chicken.
The whole collection could’ve been brought together at Wholefoods and I wouldn’t have noticed the difference. Not bad and not good.
The atmosphere was definitely there - loud music, busy vibe but in no way relaxing.
I think unless you’re under 30 this has limited appeal.
The food was excellent, but the music was SO LOUD you could barely hear the person sitting next to you. It's sad that restaurants feel the need to assault our ears - it's a place to eat not a concert hall. It was a one time experience for me - I prefer not for my ears to bleed during my meal.
Not a huge fan of communal tables. The room is intrinsically noisy. Food as expected was excellent and our waiter was quite helpful. However, pacing was not great. We had an entree and salad arrive simultaneously. Should not happen at restaurant of this stature.
