About The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Cosmo Goss have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

Publican Quality Meats, located just across the street from the Publican, can accommodate up to 38 for a Seated Dinner, up to 75 for a Cocktail Reception, or up to 24 at the Chef's Prep Table. The Publican can accommodate up to 125 for seated luncheons, or evening Buyouts and 175 for Receptions.

It is always a pleasure ring at this great place. Food never disappoints nor does the ever approachable service team. Just this week did I experienced a slight discomfort in dining here. This was only because I chose to take my wife there on Valentine's day. We came to town with reservations for two. The chairs were so uncomfortable close it was difficult to eat dinner. This is the only time i did not have the very best experience there. This should not stop you from visiting this fine establishment. I would just avoid Valentine's day.
Wow! What an incredible meal. My partner and I were looking for a special occasion meal and, boy, did The Publican deliver! We chose to have the chef's curated meal. A total of ten plates to share and all were fantastic. One of the best meals I've ever had. On top of that our server, Gio, and the food runner were absolutely wonderful. We had to hurry to make our showtime and they were so helpful in making sure we still got everything and weren't overly rushed. Would recommend to anyone looking for a special night. Thank you!
The ambiance is similar to something you would see in Eastern Europe, lots of carved wood, open kitchen. If you have less than 3 people in your group, high likelihood of sitting at a communal long table. I had requested ahead of time to sit at a private booth or two top, but it wasn't available upon arrival. Luckily we were sat at the corner of one of the long communal tables so we had some privacy. Service was fast, intelligent, and friendly. Prefixed 6 course + dessert meal was fantastic, large portions, and well worth the money. My wife and I both got it and we received 9 courses and two desserts...we were very pleased and very full.
Great times, recommend anyone to go for a nice dinner and it is located off Fulton Market so lots of places to walk to from there for an after dinner drink.
Unbelievable menu consisting of diverse foods and an extensive beer and cocktail menu. It is a given that this restaurant will put you outside of your comfort zone with options such as beef tongue and chicken liver paté. Just go for it. Each dish we ordered was better than the last. The food is simple in presentation yet has a complexity of flavors that I had no idea was possible. For example, the beef tongue looked and tasted like spam (not an insult) and melted in your mouth the second you took a bite of the beef to guess and crostini combo. Cannot wait to go back and explore the rest of the menu
I went to publican when they first opened. This was my second trip there. I recall being pleased with the food at my first visit, and though I didn’t like the ‘communal table’ seating then, the food made up for it.
This visit, the food was nothing special; mind you, it was not bad by any means, but I wouldn’t put up with the crazy loud music, the tables with chairs stuck arm rest to rest together and the so-so food.
The Publican always provides a great meal -- excellent food, wonderful service, great options for both apps, sides and mains. Took a coworker there tonight who was in visiting from out of town and he agreed it was an awesome experience! I'm already looking forward to a TBD future visit -- highly recommended...
The service was great, our server helped us choose the best dishes and more importantly, the appropriate amount of food to order, she was really outstanding. Everything we ate was really good, especially the squash thing, still thinking about that!
The only thing I'm not a fan of and it would make me hesitate to come back is the communal seating arrangement otherwise it's a worth every penny.
We were visiting Chicago for my boyfriends birthday from DC and we loved our experience at Publican. The restaurant has a great beer hall vibe with long communal tables. We sat at a two top which was nice. It did take a while for someone to great us but once our server, Monique, did she was absolutely fantastic. She gave great suggestions and even gave us some sight seeing suggestions at the end of the meal. We had the duck and the tile fish, both were amazing. The duck was so crispy and saucy at the same time, i'm not sure how that is possible but it was so good. The dishes are on the pricier side, but so so tasty. We would totally dine here again next time we're in Chicago.
Ambience: the restaurant is loud
Food: aggressively seasoned and gilds the litly. there was a brothy clam dish unnecessarily topped with some sort of white cream. Food was good but not anything I haven't had before in similar types of resaurants
Service: cannot understand why on a Sunday evening when there were other tables available, the hostess sat a party of 2 at the communal table next to a large party
The food and overall service were outstanding! My friend received Happy Birthday wishes from our main server, as well another employee who dropped off some our food. And the whole table was treated to a free appetizer — with a lit birthday candle, no less. It was a really special meal, and we’ll most certainly return. Thank you!
The food is very well prepared and is good. The portions are huge. One entre is good enough for two. We were seated at a high table and joined by another couple. All were polite even though crowded. The table was uncomfortable, I could not get my knees under it and my wife’s legs cramped and fell asleep. We couldn’t hear each other as the decibel level was just sub rock concert. Servers were outstanding and service was awesome.
It’s a great place for groups. You can share plates and try things. Make sure and check the menu, the food choices are great but a bit eclectic. The beverage scene is impressive.
I don’t think we would go back just because there are so many awesome places to eat in Chicago and the experience just wasn’t quite us.
I frequent One-off’s restaurants in every neighborhood and this is truly the first time that I’ve walked away disappointed. The server was good at first, but he never checked in and the coursing was far too quick, which is normally forgiven, but the food was really lack luster, the meats were barely edible and poorly cooked and the vegetables were inconsistently cooked. Overall the experience was disappointing.
