Del equipo detrás de el Blackbird and Avec traemos este homenaje a la cerveza, la carne de cerdo y pescado. El chef ejecutivo Paul Kahan y el Chef de Cuisine, Cosmo Goss, han desarrollado una red de proveedores para abastecer el restaurante con pescados y mariscos capturados de forma sostenible seleccionados a mano, así como carne de cerdo de la más alta calidad criado también de forma sostenible. Todo esto para aterrizar un menú de tipo ecléctico y simple. La extensa lista de cervezas internacionales, desarrollado por los socios Eduard Seitan y Terry Alexander, cuenta con más de cien ales, lagers, stouts y cidras en botella, doce de ellas disponibles en barril. Al igual que Blackbird and Avec, The Publican es una asociación de diseño del equipo ganador del premio James Beard, formado por Thomas Schlesser y su socio Donnie Madia.

Staffs were friendly and table layout was unique but that was about it! Very disappointed by the limited brunch menu. There was nothing healthy.... Only one cucumber salad was ok. A sausage was coated by maple syrup, over sweet lemon cake came with too much jam and cream on top, hashed brown was so greasy. No fresh fruit for the waffles. No latte or cappuccino.

We ordered a bunch of stuff for the table. The timing and order of everything was absolutely perfect. The quality and most importantly the quantity of everything was spot on as well. A lot of times with family style, there is not enough of every fish for everyone to get a decent taste. This was perfect. Publican has been and still is my top restaurant in Chicago.

Our meal at The Publican was simply outstanding. Each dish was exquisitely prepared and delicious. The standout dish was the Pork Shank. Three days later and we’re still talking about it! The service was attentive and our server made good suggestions throughout the meal. I don’t think that you could go wrong ordering any dish on the menu.

The food was excellent, the beer and wine list very good. It was a little difficult to get our servers attention, but the staff did a good job of brining the food out. I even liked the "communal" seating. The one downside (and it would keep me from returning) was the noise level. Very difficult to hear our server or carry on a conversation.

Our family has dined at The Publican many times, a favorite restaurant in Chicago. The food at The Publican is consistently all of three things: fresh, flavorful and innovative. The service is helpful, and polite with just the right amount of suggestion. The resataurant is a little on the loud side, but the food is so good, the noice rarely bothers us!
