Del equipo detrás de el Blackbird and Avec traemos este homenaje a la cerveza, la carne de cerdo y pescado. El chef ejecutivo Paul Kahan y el Chef de Cuisine, Cosmo Goss, han desarrollado una red de proveedores para abastecer el restaurante con pescados y mariscos capturados de forma sostenible seleccionados a mano, así como carne de cerdo de la más alta calidad criado también de forma sostenible. Todo esto para aterrizar un menú de tipo ecléctico y simple. La extensa lista de cervezas internacionales, desarrollado por los socios Eduard Seitan y Terry Alexander, cuenta con más de cien ales, lagers, stouts y cidras en botella, doce de ellas disponibles en barril. Al igual que Blackbird and Avec, The Publican es una asociación de diseño del equipo ganador del premio James Beard, formado por Thomas Schlesser y su socio Donnie Madia.

Love this place & the concept. The only disappointment I had was that when booking through open table, we put that it was a special occasion, we were celebrating a birthday & anniversary, and nothing was mentioned. Not a huge deal, but when someone puts something in the notes, it’s for a reason. Next time we’re in Chicago, we would definitely go back.

Service was excellent and very accommodating when we were 10 Mom late for our reservation. Food was outstanding- Loved it!

I have never been disappointed when dining at the Publican. I moved to California 2 years ago and when I came back to Chicago to visit The Publican was one of my must go to restaurants. The food never disappoints and the service is second to none. I would recommend this place to everyone.

Great Vibe, Awesome Service! We enjoyed a delicious meal: liver pate, bread board with tasty pimento cheese spread, outstanding presentation of beef tongue, finished off with the basque cake(yum)-all the flavours were over the moon. The only thing better than the food was the service-top notch!

This place would be perfect but for one massive and unnecessary flaw: noise level. The food is fabulous. The room is easy on the eyes. The service is skillful and restrained. The noise is night club turned up to ten. Why does this huge, high-ceilinged box of a room need piped RAWK music that nobody can hear clearly enough to savor and that just throws gas on the fire of bad acoustics in a crowded room?

All the menu I tried so far were so good! This is my favorite brunch place given its: well composed flavor, not too heavy serving, seasonal menus. However, it's very loud and the seats are not too comfortable. I think it's best to come with just one person and seat at the bar, if you want to be able to have a conversation.

Enjoyed brunch at the Publican. As usual, the place was packed on Sunday morning and the noise level was high. Food was delicious, service was good. Not a place for quiet conversation but you can talk with your friends at the table.

You have to be comfortable sitting at communal tables but the brunch food is outstanding. I dream of their bacon.
